2 (18 ounce) bottles barbeque sauce
1 (15 ounce) can pineapple chunks
1 green bell pepper, chopped
1 onion, chopped
2 cloves garlic, minced
8 boneless, skinless chicken breast halves

Steps:

  • In a large bowl, mix together barbecue sauce, pineapple with juice, green bell pepper, onion, and garlic.
  • Arrange 4 of the chicken breasts in the bottom of a slow cooker. Pour half of the barbecue sauce over the chicken. Place remaining chicken in slow cooker, and pour remaining sauce over the top.
  • Cover, and cook on Low for 8 to 9 hours.

1 medium onion, cut into wedges
6 boneless skinless chicken breast halves
1 (20 ounce) can pineapple chunks
1/3 cup packed brown sugar
1 tablespoon soy sauce
2 teaspoons chicken bouillon granules
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon ground ginger
1/4 teaspoon garlic powder
3 tablespoons cornstarch
1/4 cup hot water
hot cooked rice

Steps:

  • In slow cooker, layer carrots, green pepper, and onion. Top with chicken.
  • Drain pineapple, reserving juice. Place pineapple over chicken.
  • Add brown sugar, soy sauce, bouillon, salt, pepper, ginger, and garlic powder to pineapple juice; pour over pineapple.
  • Cover and cook on LOW for 8 hours.
  • Combine cornstarch and water until smooth. Gradually stir into cooking juices. Cook 30 minutes longer or until sauce is thickened.
  • Serve over rice.

2 Pounds Boneless Skinless Chicken Breasts
18 Ounces Catalina Dressing
1 Cup Orange Marmalade
1 Packet Dry Onion Soup Mix

Steps:

  • Add the chicken to a 3.5 quart casserole slow cooker OR a 5 to 6 quart slow cooker and cover and cook on LOW for 5 to 6 hours or on HIGH for 3 to 4 hours until the chicken is just cooked through but not overcooked.
  • In a small mixing bowl, stir together with a fork the Catalina salad dressing, orange marmalade and the packet of dry onion soup mix until mixed together well.
  • Pour the Catalina sauce mixture evenly over the chicken.
  • Loo sly break the cooked chicken into bite sized pieces and toss in the sauce.
  • Recover slow cooker and cook on HIGH for an additional 30 minutes.
  • While the chicken is cooking that last 30 minutes is a good time to prepare some rice or noodles on the stove-top for serving.
  • Serve chicken and sauce over the cooked noodles or rice and enjoy!

1/2 teaspoon pepper
6 boneless skinless chicken thighs (about 1-1/2 pounds)
2 tablespoons butter, melted

1 package (8 ounces) cream cheese, softened and cubed

1 (3 pound) whole chicken, skin removed
½ cup chicken broth
⅓ cup soy sauce
⅓ cup olive oil
¼ cup honey
1 teaspoon Worcestershire sauce
2 teaspoons balsamic vinegar
2 teaspoons lemon juice
1 teaspoon sesame oil
2 tablespoons minced garlic

Steps:

  • Remove skin from chicken, and empty inner cavity of contents within. Pat chicken dry with a paper towel, and place inside the slow cooker.
  • In a bowl, stir together the chicken broth, soy sauce, olive oil, honey, Worcestershire sauce, balsamic vinegar, lemon juice, sesame oil, and minced garlic. Pour mixture over chicken, and cover.

3 large potatoes, roughly diced
18 baby carrots, sliced (or whole, if you prefer)
1 onion, coarsely chopped

1 cup marinated artichoke hearts, drained, coarsely chopped
1 lemon, juice of
2 (15 ounce) cans chicken broth
1 cup white wine
1/4 cup white wine vinegar
2 tablespoons fresh oregano or 1 tablespoon dried oregano
1/8-1/4 teaspoon black pepper
1/8-1/4 teaspoon lemon pepper
1/8-1/4 teaspoon garlic powder
1/8-1/4 teaspoon onion powder

Steps:

  • Place all ingredients in a crock pot. Cook 1 hour on high, then 5 hours on low (or 7 hours on low, if you are not available to switch crock pot from high to low).
  • If you don't have a crock pot, soup can just as easily be simmered for a long time on the stove, until the chicken is falling apart, about 3 hours.
  • Before serving, break up chicken into large bite size pieces, and taste for salt.
