12 ounces coarsely ground beef chuck
12 ounces coarsely ground beef sirloin
2 teaspoons dried parsley
1 1/2 teaspoons lightly crushed fennel seed
1 teaspoon granulated garlic
1/4 teaspoon crushed red pepper flakes
1 tablespoon grated Parmesan
Kosher salt and freshly ground black pepper
4 hamburger buns, for serving
Arugula, sliced tomato, pesto and giardiniera, for serving
Heat a large cast-iron skillet over medium-high heat for 5 minutes.

Steps:

  • Gently toss together the chuck and sirloin in a large bowl, making sure not to overwork the mixture.
  • Combine the dried parsley, fennel seed, granulated garlic and red pepper flakes in a small bowl. Sprinkle the spice mixture over the beef along, with the Parmesan, and fold gently to combine. Form the beef into four 3/4-inch-thick patties, each about 4 inches in diameter. Sprinkle each generously with salt and a few grinds of black pepper.
  • Place the patties in the hot skillet; do not press down with a spatula. When the patties are seared and browned on one side, about 3 1/2 minutes, flip and cook on the other side until browned and the burgers are medium-rare, about 3 1/2 minutes.
  • Split the hamburger buns. Arrange some arugula on the bottom buns and top each with a slice of tomato, a burger patty and a dollop of pesto. Top with the top halves of the rolls Serve with giardiniera.

1/2 cup mayonnaise
2 tablespoons chopped drained sun-dried tomatoes packed in oil
2 cloves garlic, roughly chopped
1 tablespoon roughly chopped fresh parsley and/or basil
Kosher salt and freshly ground pepper
4 plum tomatoes, halved
2 tablespoons extra-virgin olive oil
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
Kosher salt and freshly ground pepper
For the caramelized onions:
4 tablespoons unsalted butter
3 large onions, thinly sliced
Pinch of sugar
Vegetable oil, for the grill
1 pound ground beef chuck
1 mild Italian sausage link, casing removed
Kosher salt and freshly ground pepper
4 slices provolone cheese
4 brioche or hamburger buns, split
Baby arugula, for topping

Steps:

  • Make the aioli: Blend the mayonnaise, sun-dried tomatoes, garlic, fresh herbs and 1/4 teaspoon each salt and pepper in a mini food processor or blender until smooth. Transfer to a bowl and refrigerate until ready to use.
  • Make the roasted tomatoes: Preheat the oven to 425 degrees F and line a baking sheet with parchment paper. Pat the tomatoes dry with paper towels and arrange on the prepared baking sheet; drizzle with the olive oil and sprinkle with the dried basil, oregano and 1/2 teaspoon each salt and pepper. Roast until the tomatoes start caramelizing, about 30 minutes.
  • Meanwhile, make the caramelized onions: Melt the butter in a large skillet over medium heat. Add the onions and sugar and toss to coat. Cover and cook, stirring occasionally, until golden, about 20 minutes. Increase the heat to medium high and cook, stirring, until browned and caramelized, 15 to 20 more minutes; season with salt and pepper. Remove from the heat and set aside.
  • Make the burgers: Preheat a grill to medium high and brush the grates with vegetable oil. Put the beef and sausage in a large bowl and combine with your hands. Form four 3/4-inch-thick patties; season with salt and pepper. Grill the burgers until the edges begin browning, 3 to 5 minutes, then flip and top each patty with a slice of cheese. Cover and cook until the cheese is melted and the burgers are done, 3 to 4 more minutes for medium.
  • Lightly toast the buns on the grill. Spread the aioli on the top and bottom buns. Sandwich with the burgers, roasted tomatoes, caramelized onions and arugula.

Steps:

  • Heat gas or charcoal grill. Place sun-dried tomatoes in small bowl. Pour enough boiling water over tomatoes to cover. Let stand 10 minutes.
  • Drain tomatoes; chop. In large bowl, mix beef, sausage and chopped tomatoes. Shape mixture into 6 oblong patties, about 1/2 inch thick.
  • Place patties on grill over medium-high heat. Cover grill; cook 10 to 12 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F. Top each burger with cheese for last 2 minutes of grilling.
  • Top burgers with basil and tomatoes. Serve burgers between slices of ciabatta bread.

1/4 cup panko breadcrumbs
1/4 cup red onion, finely chopped
2 garlic cloves, pressed

1 roma tomato, washed, seeded and finely chopped

Steps:

  • In a large mixing bowl, combine ground beef, hot Italian ground sausage, panko, onions, garlic, Italian seasoning, sea salt and freshly ground black pepper; mix well. Divide meat into 4 equal portions and form patties. Place them in a plate, cover with plastic wrap and chill for 2 hours.
  • Later on, take meat out and let it rest on the counter while making the slaw. In a small bowl, combine tomato, pepperoncini, basil, oil, vinegar, sea salt and freshly ground black pepper; stir well and set aside.
  • Fire up the BBQ and place patties when the grill reaches high temperature. Close the lid and cook about 5 to 6 minutes per side, flipping once. About 2 to 3 minutes before cooking is done, place hamburger buns on the top grill as well as a couple slices of cheese per patty.

500g pork mince
1 tsp fennel seed
1 tsp chilli flakes
1 tsp dried oregano
drizzle of olive oil
2 large tomatoes , chopped
6 black olives , chopped
drizzle of balsamic vinegar
4 ciabatta bread rolls, split and toasted
4 tbsp mascarpone
handful baby spinach

Steps:

  • Mix the pork mince with the fennel seeds, chilli flakes, oregano and some seasoning. Mix well with your hands until well combined, then shape into 4 burgers. Heat a drizzle of oil in a large frying pan - or fire up the BBQ and brush the burgers with a little oil - and cook the burgers for 5-7 mins on each side until cooked through.
  • Meanwhile, mix the tomatoes, olives, balsamic vinegar and a drizzle more oil with some seasoning to make a salsa. Top the base of each roll with 1 tbsp mascarpone, a few spinach leaves, a burger and a spoonful of the salsa, then sandwich everything with the lid.

1 lb lean ground turkey
1/4 cup egg substitute
1/4 cup dry Italian breadcrumbs
1 teaspoon oregano (Fresh greek or italian -minced)
2 teaspoons italian basil (fresh minced)
1 -2 minced garlic clove (depending on your taste)
1/4 teaspoon red pepper flakes (may want to use less if you are sensitive to heat spices)
2 tablespoons romano cheese (Freshly grated, pecorino romano or any paremesan type cheese will do)
1/4 teaspoon salt
1/4 teaspoon ground black pepper
8 slices hard salami
1 cup shredded light mozzarella cheese
Italian bread (good crusty type or Ciabatta)
olive oil (preferrably E.V.O.O., Extra Virgin)
prepared marinara sauce

Steps:

  • Combine the ground turkey and the first 9 ingredients well - then, divide evenly and shape into burger patties, cover with plastic wrap and set aside.
  • Cover a cookie sheet with tin foil, or - place a silpat on a cookie sheet & preheat oven to 325 degrees. Place the salami slices evenly (but not touching) on the covered cookie sheet. Bake salami in the 325 degree oven for 15 minutes - then, transfer salami slices to a plate covered with paper towels to absorb the excess oils.
  • Grill burgers either on a hot outdoor grill, or cast iron stove top grill - approximately 5 minutes per side for medium rare - longer for well done (whatever your preference may be). Slice the Italian bread or Ciabatta into even slices - enough for 2 slices per patty & brush or use your 'misto' sprayer on one side with E.V.O.O. (Extra Virgin Olive Oil)& grill (oil side down) to get the grill prints on the bread. Once Burgers are cooked, remove to a platter where they can rest for approximately 5 minutes. Steps:

  • In a large mixing bowl, combine ground beef, hot Italian ground sausage, panko, onions, garlic, Italian seasoning, sea salt and freshly ground black pepper; mix well. Divide meat into 4 equal portions and form patties. Place them in a plate, cover with plastic wrap and chill for 2 hours.
  • Later on, take meat out and let it rest on the counter while making the slaw. In a small bowl, combine tomato, pepperoncini, basil, oil, vinegar, sea salt and freshly ground black pepper; stir well and set aside.
  • Fire up the BBQ and place patties when the grill reaches high temperature. Close the lid and cook about 5 to 6 minutes per side, flipping once. About 2 to 3 minutes before cooking is done, place hamburger buns on the top grill as well as a couple slices of cheese per patty.
  • Just before serving, scoop a good amount of tomato slaw on top of the meat. Makes 4 burgers.
