ITALIAN NACHOS

Steps:
- For the nachos: Preheat the oven to 400 degrees F.
- Place the baguette slices on a baking sheet fitted with a rack. Brush the slices with the olive oil. Toast until crisp on the outside but still slightly tender on the inside, 6 to 8 minutes.
- On an ovensafe platter or a baking sheet lined with aluminum foil or parchment paper, alternate layers of baguette slices, shredded Italian cheese blend, chopped cured meats, beans and pearl mozzarella, ending with a layer of shredded cheese. Bake until the shredded cheese is melted,10 to 12 minutes.
- For the salsa: While the nachos are baking, in a medium bowl, combine the tomatoes, basil, olive oil, balsamic vinegar and salt and pepper to taste. Toss to coat.
- For the crema: In a small bowl, whisk together the fig jam (or honey) and balsamic vinegar. Add the sour cream and salt and pepper to taste and whisk until completely blended. Transfer to a ziptop bag and store in the fridge until ready to use.
- For the toppings: Top the nachos with the giardiniera, pepperoncini, black olives and salsa. Slice the corner of the ziptop bag with the crema and drizzle it over the nachos. Finish with more chopped basil. Serve immediately.
RESTAURANT STYLE CHICKEN NACHOS
This delicious and easy to prepare recipe is sure to be a big hit! Hearty enough for a meal. The key is the meat filling -- it also makes a great filling for tacos and quesadillas. This recipe can be modified to meet your own taste. I recommend serving with sour cream and guacamole. Be creative!

- Preheat oven to 350 degrees F (175 degrees C).
- In a 12 inch skillet over medium heat, cook and stir the garlic and white parts of the green onions in canola oil until tender. Mix in shredded chicken, salt and pepper. Toss until well coated with oil. Stir in the salsa.
- Arrange tortilla chips on a large baking sheet. Spoon the chicken mixture over tortilla chips. Top with Cheddar/Monterey Jack cheese blend and tomato. Bake in the preheated oven 10 minutes, or until cheese has melted. Remove from heat and sprinkle with green onion tops before serving.

IRISH CHICKEN NACHOS
We substituted waffle fries for tortilla chips and topped them with chicken, cheddar cheese and sliced jalapeños for our Irish twist on a Mexican favorite. Serve with salsa and sour cream.

- Heat oven to 450°F. Place waffle fries on ungreased cookie sheet.
- Bake 20 minutes. Remove from oven.
- Set oven control to broil. Top waffle fries with 1 cup cheese, the chicken, remaining cup of cheese, the bacon and chiles.
- Broil 2 minutes or until cheese is melted. Serve warm topped with salsa and sour cream.

Steps:
- Cut wontons into 4 triangles each and toss lightly in olive oil.
- Cover a cookie sheet with a single layer of wontons. Brush with egg white and sprinkle with oregano or Italian seasoning.
- Bake at 400ºF for 6 minutes or until lightly browned.
- Meanwhile, heat the sauce, brown the Italian sausage and drain fat.
- On a platter layer the pasta chips, sausage, and sauce. Top with the tomato, onions, olives and peppers. Finish with shredded cheese and red pepper flakes.
- Place in warm oven for 5 minutes to melt cheese and serve.
CHOPPED CHICKEN NACHOS RECIPE BY TASTY
Here's what you need: chicken breasts, olive oil, poultry rub, tortilla chips, roasted red pepper, black beans, green onion, garlic, black olive, colby jack cheese

- Preheat the oven to 375°F.
- Place chicken breasts in a pan and lightly coat with olive oil. Sprinkle rub over both sides of the chicken. I like to use Tony's Creole Seasoning, but it is a little spicy so be aware of how much you use or use your favorite rub if you don't want spicy.
- Place in the oven for 10 minutes or until a digital thermometer inserted in the thickest part of the chicken reaches 165°F.
- While the chicken is cooking, prepare the other ingredients. Chop the red peppers, rinse the black beans, slice the green onions including most of the green stem, finely dice the garlic, drain the black olives.
- Layer the chips on a baking sheet. Layer the veggies on top of the chips.
- When the chicken is done, allow to cool for 10 minutes. Place on a cutting board and chop into 1-inch pieces.
- Layer the chicken on top of the veggies. Evenly spread the cheese over the top.
- Heat the oven to broil and leave the top rack in the middle spot. You don't want to get too close to the top and accidentally burn the cheese before the rest of the dish heats up. Place the baking sheet in the oven and allow the cheese to melt and the veggies to get warm, about 5 minutes.
- Remove the pan from the oven. I like to use a wide spatula to cut through the chips and cheese to serve.

EASY CHICKEN NACHOS
We used to go to a restaurant that had the best Chicken Nachos so I came up with my own version. Whenever I make them I cover the coffee table and we gather around and eat there, out of the pan, with bowls of various dipping items. This is a meal for our family. One of my kid's favorites.

Steps:
- Cut chicken up into 1/2" cubes.
- Heat oil in skillet over med.
- heat and add chicken.
- Pan fry until almost done and sprinkle taco seasoning mix, stirring to coat.
- When done (no longer pink), set aside to cool slightly.
- In a 13 x 9" casserole arrange half the tortilla chips.
- Spread with one can bean dip (fingers must be used for good spreading!) Sprinkle with half the cheese, half the cooked chicken and half the other desired toppings.
- Repeat layers.
- Bake on 325 until the cheese is melted on both layers.
- Ovens vary so just keep watching them and check the under-layer.
- Serve with salsa, sour cream, diced jalapeno's, guacamole, whatever your heart desires.
- *This is also good made with steak (1/4" cubes) instead of chicken.
