Quick dinner that I threw together with what I had on hand, zaar recipe Recipe #226861 and a little creativity.

2 chicken breasts, boneless skinless
4 ounces angel hair pasta
2 tablespoons olive oil
1/2 onion, chopped
2 cups zucchini, sliced 1/4-inch thick
3 garlic cloves, minced
1/2 cup red wine
1 (14 1/2 ounce) can diced tomatoes, Italian style
3 teaspoons Italian spices (basil, oregano, parsley)
2 tablespoons cajun seasoning
1/4 cup parmesan cheese

Steps:

  • Slice chicken in 1/2" x 2" inch slices and season with Cajun seasoning.
  • Heat water in a large pot for spaghetti.
  • Heat olive oil in large skillet and cook chicken for approximately 5 minutes stirring twice.
  • Add onion and cook for 2 more minutes.
  • Add zucchini, garlic and red wine; cook for 2 more minutes.
  • Add the spices (1 tsp of each) and the tomatoes with the juice; let cook for 10 minutes or until zucchini is soft.
  • In the meantime add pasta to pot and cook til desired doneness.
  • Serve chicken & veggies over the pasta & sprinkle with parmesan.

I am just loving my spiralizer attachment from KitchenAid®, and it's been super busy in my kitchen! If you don't have the attachment, there are other ways to spiralize, including using a vegetable peeler. This recipe was inspired by leftovers. Before serving, top this dish with your favorite chopped fresh herbs! I love roasting 2 chickens at once and serving them for dinner one night, then cutting the rest up and using for several different meals. I freeze what I won't use in the next 2 days. 2 tablespoons extra virgin olive oil, divided
12 cherry tomatoes, halved
2 cloves garlic, minced
1 teaspoon kosher salt
1 teaspoon Italian seasoning
½ teaspoon freshly ground black pepper
½ cooked chicken breast, chopped
4 cups baby spinach
½ cup frozen peas
2 lemons, juiced
1 lemon, zested

Steps:

  • Cut zucchini into noodles using a spiralizer.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Stir in tomatoes; cook until starting to brown, 6 to 7 minutes. Add garlic; cook and stir for 30 seconds. Toss in zucchini; season with salt, Italian seasoning, and pepper and stir to combine. Add chicken, spinach, peas, lemon juice, and zest. Drizzle with 1 tablespoon olive oil. Cover and simmer until heated through, about 5 minutes.

Quick and easy and yummy to boot!!! Threw this together one day when I was in a rush. You can substitute hamburger for the chicken.

4 chicken breasts, cut into bite size pieces
1 can Italian-style stewed tomatoes
1 chopped tomato
1/2 cup chopped green pepper
1 chopped onion
1/2 cup sliced mushrooms
1/2 cup chopped green onion
1 teaspoon oregano
1 teaspoon thyme
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Cook chicken until done in a skillet using olive oil and a touch of butter for flavour over medium heat.
  • Add in tomatoes to deglaze the pan and then add in the rest of the ingredients.
  • Cook for 20 minutes on medium low temperature until vegetables are tender.
  • Serve over white rice or pasta.
