With little more than spaghetti sauce, cream cheese and KRAFT Finely Shredded Italian Five Cheese Blend, these chicken roll-ups are super easy to prepare.

2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/4 cup finely chopped green peppers
1/2 tsp. dried oregano leaves
1/8 tsp. garlic powder
1 cup KRAFT Finely Shredded Italian* Five Cheese Blend, divided
4 small boneless skinless chicken breasts (1 lb.), pounded to 1/4-inch thickness
1 cup CLASSICO Tomato and Basil Pasta Sauce

Steps:

  • Heat oven to 400°F.
  • Mix first 4 ingredients until blended. Add 1/2 cup shredded cheese; mix well. Shape into 4 logs. Place 1 log on one short end of each chicken breast; press lightly into chicken. Roll up tightly, tucking in both ends of each breast around filling to completely enclose filling.
  • Place, seam sides down, in 13x9-inch baking dish sprayed with cooking spray; top with pasta sauce. Cover.
  • Bake 30 min. or until chicken is done (165°F). Top chicken with remaining shredded cheese; bake 3 to 5 min. or until melted.

4 skinless, boneless chicken breasts
1 cup dried bread crumbs, seasoned
½ cup grated Parmesan cheese
¼ cup butter, melted
1 (7 ounce) package garlic cheese spread

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pound chicken breasts until thinned out. In a shallow dish or bowl mix together bread crumbs and cheese. Dip one side of each breast into melted butter or margarine, then into crumb/cheese mixture. Place a dollop of cheese spread at one end of each chicken breast, on the side of the breast not dipped in the mixture. Roll up each breast and secure with toothpicks.
  • Place rollups in a lightly greased 9x13 inch baking dish and drizzle any remaining butter or margarine over all. Bake in the preheated oven for 35 to 40 minutes, or until cooked through and juices run clear.

2 cloves garlic
2 cups spinach
½ cup ricotta cheese
¼ cup parmesan cheese
4 chicken breasts, thinly sliced
2 eggs, beaten
1 cup seasoned breadcrumbs
1 cup marinara sauce
4 slices mozzarella cheese
fresh basil, chopped
salt, to taste
pepper, to taste

Steps:

  • Sauté the garlic and spinach in oil until the spinach wilts. Add the ricotta, parmesan, salt, and pepper, and stir until heated.
  • Preheat oven to 450°F (230°C).
  • Salt and pepper the chicken breasts, add the cheese mixture, and roll 'em up.
  • Dip each chicken breast roll-up in the egg, then the breadcrumbs, and place in a 8×8 (20 x 20 cm) or 9×9 (22 x 22 cm) baking dish seam side down.
  • Bake for 25 minutes.
  • Remove from oven and top with marinara sauce and mozzarella. Bake an additional 5 minutes. Remove from oven and top with basil.

8 boneless skinless chicken breast halves (4 ounces each)
8 thin slices (4 ounces) deli ham
4 slices provolone cheese, halved
2/3 cup seasoned bread crumbs
1/2 cup grated Romano or Parmesan cheese
1/4 cup minced fresh parsley
1/2 cup milk
Cooking spray

Steps:

  • Preheat oven to 425°. Flatten chicken to 1/4-in. thickness. Place a slice of ham and half slice of provolone cheese on each piece of chicken. Roll up from a short side and tuck in ends; secure with a toothpick. , In a shallow bowl, combine crumbs, Romano cheese and parsley. Pour milk into another bowl. Dip chicken rolls in milk, then roll in crumb mixture. , Place roll-ups, seam side down, on a greased baking sheet. Spritz chicken with cooking spray. Bake, uncovered, 25 minutes or until meat is no longer pink. Remove toothpicks. Freeze option: Wrap unbaked chicken roll-ups individually in plastic wrap; place in a large resealable freezer bag. Freeze up to 2 months. To use, completely thaw in the refrigerator. Preheat oven to 425°. Unwrap roll-ups and place on a greased baking sheet. Spritz with nonstick cooking spray. Steps:

  • PREHEAT oven to 400°F.
  • Mix 1/2 cup of the shredded cheese, the cream cheese, peppers, oregano and garlic salt until well blended.
  • Shape into 4 logs.
  • Place 1 log on one of the short ends of each chicken breast; press into chicken lightly.
  • Roll up each chicken breast tightly, tucking in ends of chicken around filling to completely enclose filling.
  • PLACE, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray. Spoon spaghetti or tomato sauce evenly over chicken; cover with foil.
  • BAKE 35 minute or until chicken is cooked through (170°F).

3 cups Italian-style tomato sauce
6 boneless skinless chicken breast halves
1/2 cup mozzarella cheese, set aside
spaghetti
1/2 cup low-fat ricotta cheese
3 tablespoons grated parmesan cheese
1 tablespoon snipped fresh parsley

Steps:

  • Preheat oven to 375 degrees.
  • Pound chicken breast halves until they are about 1/4 inch thick.
  • In a medium mixing bowl, combine the low-fat ricotta cheese, 3 Tbsp grated Parmesan cheese and 1 Tbsp snipped fresh parsley.
  • Spoon about 1 1/2 Tbsp of cheese mixture onto each chicken breast.
  • Fold in long sides and then roll from short end.
  • Place seam side down in sprayed 8 x 8 inch baking dish.
  • Measure out 1 cup of sauce; set aside.
  • Next pour remaining 2 cups of tomato sauce over stuffed chicken breast.
  • Cover baking dish with aluminum foil.
  • Bake for 35- 40 minutes or until chicken is no longer pink.
  • Remove cover.
  • Sprinkle 1/2 cup shredded mozzarella cheese over top.
  • Bake an additional 4 to 5 minutes.
  • Cook spaghetti according to package directions.
  • Heat remaining 1 cup of spaghetti sauce.
  • Place single serving of spaghetti on plate with chicken placed on top and some of the remaining heat sauce spooned over top of stuffed chicken breast.
  • Serve with extra grated Parmesan cheese.

Chicken Pillows, Chicken Roll-Ups or Chicken Pockets - whatever you call these, they're a kid-friendly dinner favorite. Shredded chicken mixed with cream cheese, mushrooms, and diced onion all rolled up in a delicious, buttery crescent roll.

4 boneless skinless chicken breasts (cooked and shredded)
1 (8 ounce) package cream cheese (softened)
2 Tablespoons onion (diced) - optional
1 (4 ounce) can mushrooms (drained)
2 (8 ounce) packages crescent roll dough

Steps:

  • Preheat oven to 350 degrees F.
  • Mix together cooked chicken, softened cream cheese, onion, and mushrooms.
  • Roll out your crescents, place a heaping spoonful of chicken mixture on wide-end of crescent and roll it up. Place on large cookie sheet (I use my largest jelly-roll pan). Bake for 12-14 minutes (watch for the rolls to turn golden).
