1 ½ cups uncooked short-grain white rice
2 cups water
1 ½ cups coconut milk
1 cup white sugar
½ teaspoon salt
½ cup coconut milk
1 tablespoon white sugar
¼ teaspoon salt
1 tablespoon tapioca starch
3 mangos, peeled and sliced
1 tablespoon toasted sesame seeds

Steps:

  • Combine the rice and water in a saucepan; bring to a boil; cover and reduce heat to low. Simmer until water is absorbed, 15 to 20 minutes.
  • While the rice cooks, mix together 1 1/2 cups coconut milk, 1 cup sugar, and 1/2 teaspoon salt in a saucepan over medium heat; bring to a boil; remove from heat and set aside. Stir the cooked rice into the coconut milk mixture; cover. Allow to cool for 1 hour.
  • Make a sauce by mixing together 1/2 cup coconut milk, 1 tablespoon sugar, 1/4 teaspoon salt, and the tapioca starch in a saucepan; bring to a boil.
  • Place the sticky rice on a serving dish. Arrange the mangos on top of the rice. Pour the sauce over the mangos and rice. Sprinkle with sesame seeds.

Longing to make the Thai mango sticky rice you love at home, but don't know how to make Thai sticky rice? Here are the answers to all your sticky rice questions my friend!

1 cup sweet rice (aka glutinous rice)
Water for soaking the rice and steaming the rice
Traditional Bamboo Steamer Pot or other steaming method of choice

Steps:

  • Rinse the rice a few times by running water over it, swishing it around, and draining out the water as much as you can, and repeating it, until the water looks more clear.
  • Soak the sweet rice in water with a few inches above it (make sure you have room above it cuz the rice will expand as it soaks) for at least 4 hours to overnight.
  • Fill a saute pan, or pot with a few inches of water. Bring it to a boil.
  • Place the splatter guard on top of the pot, and spread out the rice in a thin layer.
  • Place another pot or bowl on top of the splatter guard, so it covers the rice, but doesn't touch it (see in pic above).
  • Let the rice cook for about 12-18 minutes or so, depending on your stove top, until it's sticking together and cooked through.
  • Using a spatula, flip the rice over in sections, so the other side of the rice cooks for about 3 minutes or so. I like to taste it to see if it's reached the sticky, chewy texture.
  • If you have a steamer pot, you can follow the same steps as above, but make sure you put a cheesecloth, or something in the steaming area, so your rice doesn't fall through the large steamer holes.
  • Fill the aluminum pot with a few inches of water, and bring it to a boil.
  • Wet the bamboo part of the steamer until it is damp to the touch.
  • Add the sticky rice to the basket, and press it down.
  • Find a lid that covers the sticky rice, but doesn't touch it. It doesn't have to fit perfectly. As long as the rice is covered and the lid isn't touching the rice.
  • Let the rice cook for about 18-20 minutes, depending on your stove top. Then gently flip the rice over by taking off the basket and gently jiggling the basket until the rice shifts, and it flips over, so the other side of the rice can cook.
  • Cook the rice for another 5 minutes or so, until all the rice is sticky, and cooked through.

This is a recipe for how to make Thai sticky rice (วิธีทำ ข้าวเหนียว). The best way to make it, is to soak raw sticky rice in water overnight, allow it to sit, then steam it for about 15 minutes. 1 kg. sticky rice (or however much you want to make)

Steps:

  • The night before you want to cook sticky rice, take your raw sticky rice, place it into a bowl or plastic tub, submerge in water, and allow to soak room temperature overnight. Alternatively, you can soak for at least 4 - 5 hours, but overnight is best.
  • Take the sticky rice out of the water (and the grains should be softer and a little swollen), and place into a bamboo steamer, or any type of steamer. Cover the steamer with either a lid, or you can do what I did and cover the basket with a cloth, then a metal lid - just to keep all the steam within the rice.
  • Add water to a pot with the steamer over the pot (just make sure the water doesn't touch the sticky rice), and once the water comes to a boil, steam for 15 - 20 minutes (usually 15 minutes for me is perfect) on a medium heat.
  • After 15 minutes take off the lid carefully, because it will be very hot, and just grab a taste test of the sticky rice to make sure it's soft and fluffy. If it's still a little crunchy, steam for a few more minutes, but if it's good to go, turn off the heat and either eat immediately, or transfer to some sort of airtight container or basket to hold until you're ready to eat.
  • Enjoy Thai sticky rice while it's hot and fresh.

1 cup unsweetened coconut milk

Steps:

  • Combine water, black rice, and salt in a saucepan. Bring to a boil. Reduce heat and cover; simmer for 40 minutes.
  • Add coconut milk and sugar. Bring back to a boil. Reduce heat and simmer, uncovered, until rice reaches a sticky consistency, about 30 minutes.

In Northern Thailand, sticky rice is essential. Chef Ricker shows you how to steam it to perfection in the traditional way, using a rattan basket. (Plan ahead: the rice needs to be soaked overnight to absorb enough water to stay deliciously chewy.)

2 pounds Thai sticky rice, also called glutinous or sweet rice
2 pandan leaves (optional), also called screwpine leaf

Steps:

  • Place rice in a large bowl and add enough room-temperature water to cover by 1 inch. Soak at least 4 hours and up to 10. Once rice has soaked, rinse rattan basket to dampen, then set upright in a colander. Rinse cheesecloth to dampen, then line the inside of the rattan basket in an even layer (there will be overhang). Set aside.
  • Drain rice by slowly pouring off the water; when most of the water is gone, run the tap gently over the rice to rinse it, letting the water overflow from the bowl. As the tap runs, use your hand to gently stir the rice. The water will be cloudy at first, but it will become almost clear after 2-3 minutes. At that point, drain the rice in the sink using the cloth-lined basket fitted over the colander (discard the rinsing water). Add water to the steamer pot to a depth of 2 inches. Add pandan leaf, then bring water to a boil over high heat, 5 minutes.
  • Tie the cheesecloth into a bundle so the rice is completely enveloped. Place the rattan basket on top of the steamer pot. Reduce heat to medium, and place a pot lid that fits snugly inside the steamer directly on top of the rice bundle. Allow the rice to steam for 15 minutes.
  • After 15 minutes, remove pot lid. Use tongs to flip the cheesecloth bundle, so the top of the bundle now rests against the bottom of the basket. (Use the lid for assistance if necessary.) Replace the lid and steam for 15 more minutes.
  • After a total of 30-35 minutes of steaming, remove rice cooker from heat. Serve immediately, or place rice bundle in an insulated container (such as an ice bucket) to maintain the heat, keeping the container covered until ready to serve, up to 1 hour.

I made this in a cooking class at Leith's in London. It's a very simple rice that always turns out like the rice served in Thai restaurants in London.

425 ml water
1 stalk lemongrass, bruised
1 whole red chile
2 1/2 cm fresh gingerroot, peeled and bruised
1 clove garlic, peeled

Steps:

  • Put all the ingredients into a large saucepan and let stand for five minutes.
  • Cover the pan and bring to a boil, then reduce the heat and cook over a low heat for 10 minutes until the water is absorbed.
  • Remove the pan from the heat and allow to stand covered for five further minutes.
  • Remove the flavourings, if wished, and pile into a serving dish.
  • Serve immediately, while very hot.

Thai Grilled Sweet Sticky Rice With Banana Filling image

These delicious grilled banana leaf packets conceal Thai sticky rice perfumed with the smokiness of the charred wrapper and a piece of banana at the center.

1¾ cups Thai white glutinous rice, rinsed until the water runs clear and soaked for 2 hours
¼ cup coconut cream
1 cup coconut milk
1 cup coconut milk
¼ cup extra-virgin coconut oil
⅓ cup granulated sugar
½ teaspoon salt
1 pound (about 12) banana leaves
6 fully ripe nam wa or Burro bananas (about 2½ ounces each), peeled and halved lengthwise

Steps:

  • Fill the steamer pot with water as full as you can without the bottom of the basket touching the water and set the pot over high heat. Drain the rice, being careful not to break the grains. When the water boils, place the rice in the bamboo basket and rest the basket in the top of the pot. Steam the rice over rapidly boiling water, stopping when it has barely turned glossy and is still dry (it will be cooked again), about 20 minutes. Remove from the heat.
  • While the rice is still hot, combine the coconut cream, coconut milk, coconut oil, sugar, and salt in a 2-quart saucepan and bring to a boil, stirring to dissolve the sugar. Remove the pan from the heat and stir in the hot sticky rice, making sure every grain is separate and coated with the coconut syrup. The mixture will appear soupy at this point, but don't panic. Cover the pan tightly and leave the rice undisturbed at room temperature for 1 hour.
  • Meanwhile, wipe the banana leaves clean with a damp cloth, then cut into 12 pieces, each 12 by 10 inches, with the 10-inch side parallel to the leaf grain. Have ready 24 toothpicks.
  • After an hour, the rice will have absorbed the hot coconut syrup, cooled, and become firmer. At this point, it should be fully cooked but not soft, and tender enough to eat. Use a butter knife to divide it, directly in the saucepan, into quarters. Then divide each quarter into three equal wedges. Lay a piece of banana leaf, dull side up and with a long side facing you, on a work surface. Place a portion of the sticky rice in the center of the leaf. Use your fingers to form the rice into a flat, oblong bed parallel with the grain of the leaf. The bed should be about the length of a banana half and twice its width. Press a banana half firmly into the center of the rice bed. Using your fingers, gently fold the overhangs of the sticky rice over the banana half and manipulate it so it covers the banana entirely. With the banana leaf positioned in such a way that its grain is perpendicular to your body, lift up the left edge of the leaf and fold it along the grain over the filled sticky rice, tucking it in tightly. Continue to roll from left to right, forming a compact packet. Secure each end with a toothpick, positioned as close to the rice as possible. Trim off the overhangs, leaving only about 1 inch on each end. Repeat with the remaining banana leaves, sticky rice, and banana halves.
  • To grill the packets, light natural wood charcoal and allow it to burn until you have low coals under a heavy layer of ash. Grill the packets directly over the coals, flipping them every 5 minutes, until the leaves are thoroughly charred and the packets are heated through. This should take 35 to 45 minutes. Alternatively, place an oven rack in the lowest position in the oven and preheat the broiler (if your broiler is adjustable, set it at low). Arrange the banana packets on a large sheet pan, place the pan on the oven rack, and broil the packets, flipping them every 5 minutes, until the leaves are charred and the packets are heated through, about 40 minutes (fewer, if your broiler automatically sets at high). Leave the packets to cool for about 15 minutes before serving.
  • Leftover packets can be frozen, then thawed overnight in the refrigerator and baked in a preheated 350°F oven until softened and heated through, 30 minutes.

  • Place rice into a mesh colander.
  • Rinse the rice grains in two or three changes of cold water in a bowl until the water runs clear from the colander.
  • Place the rice into a bowl and fill with cool water to 2 to 3 inches above the rice.
  • Cover the bowl and allow the rice to soak for 6 to 8 hours.
  • Drain the rice and transfer to cheesecloth-lined steamer or pasta pot basket.
