Low carb Italian Chicken is low Carb, gluten free and delicious on its own or serve over low carb pasta, zoodles or cauliflower rice.

2 pounds chicken breasts
1 large bell pepper
1 onion
1 Tbsp minced garlic cloves
2 Tbsp. extra virgin olive oil
Salt and pepper to taste
2 (4 oz) cans mushrooms, drained
2 ½ cups pasta sauce
1 cup shredded mozzarella cheese; or more-to taste

Steps:

  • If using low carb pasta, zoodles, or cauliflower rice, cook according to directions.
  • Cut chicken into bite sized pieces and cook chicken, peppers, onions and garlic in oil until done. Add salt and pepper to taste.
  • Add the mushroom and sauce and heat through.
  • Pour over low carb pasta, etc if desired or serve.
  • Sprinkle with cheese.

2-3 chicken breasts, cut into strips
1 green pepper, cut into strips
1 sweet pepper (your choice of color), cut into strips
1 med onion, sliced into strips
4 garlic cloves , minced
2 Tbsp olive oil
1 Tbsp Italian seasoning
1-2 cups mozzarella cheese, shredded
1 tsp salt (to taste)
2 tsp pepper (to taste)
1 Tbsp dried parsley
4 buns (if using)

Steps:

  • Preheat oven to 375
  • Cut your chicken into strips and put in baking dish. Salt and pepper your chicken.
  • Cut your peppers into strips and place on top of the chicken.
  • Cut your onion into strips and place on top of chicken/peppers.
  • Toss all with olive oil.
  • Add Italian seasoning and garlic. Mix all ingredients well.
  • Bake for 30-40 minutes - stirring 1/2 way through.
  • Take out of oven and sprinkle the top with mozzarella cheese. Broil for 2 minutes to melt and bubble the cheese.
  • Take out of oven and sprinkle with dried parsley.
  • For low carb - eat as is. If you are not eating low carb you can eat it on garlic toasted buns as a sandwich.

6 chicken breasts
1/4 cup olive oil
3 cloves garlic, crushed
fresh ground black pepper
1/4 cup fresh basil leaf, chopped
1/4 cup melted butter
3 sprigs fresh rosemary
1 tablespoon parmesan cheese

Steps:

  • To grill, skin chicken breasts and rub in pepper to taste.
  • Blend basil, olive oil, butter, garlic and parmesan cheese at low speed using an electric blender, chopper or processor till smooth.
  • Baste chicken lightly with mixture.
  • Grill over medium coals basting during cooking time with basil sauce.
  • During this time add the rosemary branches to coals for added smoke flavor.
  • Do this 2 or 3 times.
  • Grill 10 minutes each side depending on barbecue temperature.
  • Garnish with fresh basil and serve this grilled chicken recipe with rice or Italian pasta.

2 cups diced cooked chicken (or shredded)
1/2 teaspoon garlic powder
8 ounces cream cheese, softened
8 ounces tomato sauce
1/2 teaspoon garlic powder
1 teaspoon italian seasoning
1/2 cup parmesan cheese, 2 ounces

Steps:

  • Put the chicken in a greased 8x6" baking pan; toss with 1/2 teaspoon garlic powder to coat.
  • In a medium bowl, whisk the cream cheese, tomato sauce, 1/2 teaspoon garlic powder and Italian seasoning until smooth. This is where I added my extra veggies as well.
  • Pour the sauce over the chicken and top with the parmesan cheese. Bake at 350º 25-30 minutes.
  • Do not freeze.
