This easy cheesy slow cooker dish is my family's favorite. Make it once and I bet you'll make it once a month from now on.

Ingredients

½ pound ground beef
½ pound Italian sausage, casings removed
1 (16 ounce) jar marinara sauce
1 (4.5 ounce) can sliced mushrooms
1 (14.5 ounce) can Italian-style diced tomatoes, undrained
1 (9 ounce) package refrigerated or fresh cheese tortellini
1 cup shredded mozzarella cheese
½ cup shredded Cheddar cheese

Steps:

Crumble the ground beef and Italian sausage into a large skillet. Cook over medium-high heat until browned. Drain.
Combine the ground meats, marinara sauce, mushrooms, and tomatoes in a slow cooker. Cover, and cook on LOW heat for 7 to 8 hours.
Stir in the tortellini, and sprinkle the mozzarella and cheddar cheese over the top. Cover and cook for 15 more minutes on LOW, or until the tortellini is tender.

Ingredients

1 (19 ounce) bag cheese tortellini, frozen
3 plum tomatoes, seeded and diced
8 ounces frozen chopped spinach (half of a 16-oz bag)
1 1/2 cups ricotta cheese
1 tablespoon olive oil
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon garlic salt
black pepper
grated parmesan cheese

Steps:

Heat water to boiling. Add tortellini and spinach. Reduce heat to medium and simmer for about 3 minutes, or longer if directed on tortellini package.
Drain.
Mix in rest of ingredients over very low heat until warm.
Serve with ground black pepper and grated parmesan to taste.
