A friend served this delicious slow-cooker chicken pasta before a church social, and I fell in love with it. My husband says it's restaurant quality. -Linda Baumann, Richfield, Wisconsin

4 bone-in chicken breast halves (12 to 14 ounces each), skin removed
2 cups marinara sauce
1 medium tomato, chopped
1/2 cup Italian salad dressing
1-1/2 teaspoons Italian seasoning
1 garlic clove, minced
1/2 pound uncooked angel hair pasta
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • Place chicken in a 4-qt. slow cooker. In a small bowl, combine the marinara sauce, tomato, salad dressing, Italian seasoning and garlic; pour over chicken. Cover and cook on low for 4-5 hours or until chicken is tender., Cook pasta according to package directions; drain. Serve chicken and sauce with pasta; sprinkle with cheese. Freeze option: Do not cook pasta. Freeze cooled chicken mixture in freezer containers. To use, partially thaw in refrigerator overnight. Cook pasta according to package directions. Place chicken mixture in a large skillet. Heat until a thermometer inserted in chicken reads 165°, stirring occasionally; add a little water if necessary. Serve as directed.

4 boneless skinless chicken breast halves (4 ounces each)
2 cups sliced fresh mushrooms
3 garlic cloves, minced
1 teaspoon dried basil
1/2 teaspoon Italian seasoning
1 jar (26 ounces) meatless spaghetti sauce
1/2 cup dry red wine or chicken broth
Hot cooked angel hair pasta or spaghetti

Steps:

  • In a large nonstick skillet coated with cooking spray, cook chicken over medium heat for 4-6 minutes on each side or until a thermometer reads 170°; remove and keep warm., In the same skillet, saute the mushrooms, garlic, basil and Italian seasoning until mushrooms are tender. Stir in spaghetti sauce and wine. Add chicken; cover and simmer for 10 minutes or until heated through. Serve with pasta.

1 ½ teaspoons salt
1 teaspoon ground black pepper
½ teaspoon cayenne pepper
1 egg
1 cup panko bread crumbs
2 tablespoons olive oil, or as needed
1 pound chicken tenders
2 tablespoons olive oil
15 cherry tomatoes, halved
4 cloves garlic, chopped
10 fresh basil leaves
1 small onion, chopped
salt and ground black pepper to taste
4 slices of fresh mozzarella cheese, or as needed - cut in half

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk together the flour, 1 1/2 teaspoons of salt, 1 teaspoon of black pepper, and cayenne pepper in a bowl. In a separate shallow bowl, beat the egg. Place the panko crumbs into a third bowl.
  • Heat 2 tablespoons of olive oil in a skillet over medium heat. Dip each chicken tender into the seasoned flour, then into the egg; roll in panko crumbs. Pan fry the chicken tenders until golden brown on both sides, about 4 minutes per side. Transfer the chicken pieces to a baking sheet.
  • Heat 2 more tablespoons of olive oil in a skillet over medium heat, and stir in the tomatoes, garlic, basil, onion, and a pinch of salt and black pepper. Reduce heat and simmer the tomato sauce until it starts to thicken, stirring often, about 10 minutes. Spoon about 1 tablespoon of sauce over each chicken piece; top with a half piece of mozzarella cheese.
  • Bake in the preheated oven until the cheese is melted and bubbly, 8 to 10 minutes.

1 lb shredded mozzarella cheese
3 cups all-purpose flour
1/2 cup dried parsley flakes
1/2 cup grated parmesan cheese
1 (7 ounce) package Italian salad dressing mix
1 cup milk
2 extra large eggs
8 boneless skinless chicken breast halves
1/4 cup olive oil
1 1/2 cups chopped onions
1 clove garlic, minced (or more to taste)
3 (14 ounce) cans diced tomatoes
3 (8 ounce) cans tomato sauce
1 1/4 cups chopped green bell peppers
1 1/2 teaspoons dried rosemary
1 1/2 teaspoons dried oregano leaves
1/2 teaspoon salt
pepper

Steps:

  • CHICKEN BREASTS:.
  • In a medium bowl, combine mozzarella cheese, 2 cups of the flour, parsley flakes, Parmesan cheese, and dressing mix.
  • Whisk together milk and eggs in a shallow bowl until well blended.
  • Place remaining cup of flour in another shallow bowl.
  • Coat the chicken with flour and shake off the excess.
  • Dip the chicken into the egg mixture and then into the cheese mixture.
  • Coat the chicken evenly with the cheese mixture and press it into the chicken.
  • Heat about 1/8 inch vegetable oil in a large skillet over medium heat.
  • Add the chicken and cook for 5-6 minutes on each side or until cooked through.
  • MARINARA SAUCE:.
  • Heat oil in a large saucepan or a dutch oven over medium heat.
  • Add chopped onion, garlic& bell pepper and saute' for 3 minutes stirring constantly to prevent it from burning.
  • Add tomatoes, tomato sauce, rosemary, oregano, salt and pepper.
  • Bring to a boil.
  • Reduce the heat and simmer for 1 hour.
  • To serve, put cooked pasta in a large pasta bowl or platter.
  • Pour some of the marinara sauce over the top.
  • Lay the chicken breasts on top and pour the remainder of the marinara sauce over all.

2 tablespoons flour
2 tablespoons dried parsley flakes (can use more or less)

1 (2/3 ounce) package dried Italian salad dressing mix
1 cup milk
3 small eggs
1 cup flour
7 -8 boneless skinless chicken breasts
oil (for frying)
1 cup marinara sauce (can use more)
grated parmesan cheese

Steps:

  • Pound the chicken breasts slightly with a meat mallet.
  • In a medium bowl combine the mozzarella cheese with 2 cups plus 2 tablespoons flour, parsley flakes, 1/3 cup Parmesan cheese and dry salad dressing mix; blend well.
  • In a shallow bowl whisk milk with eggs until well combined.
  • Place the remaining 1 cup flour in another shallow bowl.
  • Coat each breast first in flour, shaking off excess, then dip into milk/egg mixture, then roll into cheese mixture coating evenly and pressing into chicken.
  • Heat about 1/4-inch of oil in a large skillet over medium heat.
  • Add in the chicken breasts and cook for 5 to 6 minutes on each side (or until cooked through.
  • Place on a large serving platter; cover loosley with foil.
  • Heat marinara sauce in a saucepan, then drizzle the sauce over the breasts, then sprinkle with Parmesan cheese.
