Italian Biscotti image

A traditional biscotti recipe. Great for dunking in coffee or tea.

Number Of Ingredients 9

12 ounces butter
1 ¾ cups white sugar
6 eggs
1 teaspoon anise extract
2 teaspoons vanilla extract
6 cups all-purpose flour
½ teaspoon salt
2 teaspoons baking powder
8 ounces chopped almonds

Steps:

  • Preheat oven to 350 degrees F ( 165 degrees C ).
  • In a large bowl, cream the butter and sugar together. Add eggs one at a time; beat until fluffy. Stir in the anise and vanilla extracts. Sift together the flour, baking powder, and salt; Add them to the egg mixture along with the chopped almonds. Stir with a spoon and as the dough comes together, Knead by hand.
  • Divide the dough into 4 parts. Roll each piece into a log about 15 inches long. Place logs onto cookie sheets, 2 to a sheet, the long way. Flatten the logs out until they are about 3 inches wide with a slight hump going down the middle. Bake for 25 to 30 minutes in the preheated oven, loaves should be firm. Cut the loaves into diagonal slices 1/2 inch wide, place the slices onto the cookie sheets and return to the oven. Toast on one side, then turn them over to do the other side. This will take about 7 to 10 minutes.

1/2 cup sour cream
6 tablespoons lemon-lime carbonated beverage
2 tablespoons chopped fresh Italian (flat-leaf) parsley
1 tablespoon chopped fresh basil leaves
1/4 teaspoon coarse ground black pepper
3 tablespoons butter, melted

Steps:

  • Heat oven to 425°F. Spray 8-inch round cake pan with cooking spray.
  • In medium bowl, stir Bisquick mix, sour cream, carbonated beverage, parsley, basil and pepper with fork until soft dough forms.
  • With floured hands, divide dough into 20 equal portions. Shape each into a ball. Place in pan with sides touching. Brush evenly with half of the melted butter.
  • Bake 15 minutes or until golden brown. Brush evenly with remaining melted butter. Serve immediately.

1/4 pound pancetta, diced
1 (8-ounce) box store bought biscuit mix
Buttermilk (in place of the liquid in the boxed biscuit mix recipe)
1/4 cup shredded Fontina
1/2 vanilla bean
1/2 cup sugar
1 tablespoon ground cinnamon
1 stick butter, at room temperature

Steps:

  • To make the biscuits: In a saute pan, heat the pancetta over medium-high heat and cook until crisp, about 5 minutes.
  • In a large bowl, make the biscuits according to the box instructions, using buttermilk instead of the suggested liquid. Gently stir in the pancetta and the cheese.
  • Line a baking sheet with parchment paper. Spoon the biscuit mixture onto the baking sheet and bake according to box instructions. Transfer to a wire rack to cool.
  • To make the Cinnamon-sugar Butter: Cut open the vanilla bean lengthwise. Using the back of a knife, scrape along the inside of the vanilla bean to collect the seeds. Scrape vanilla bean seeds into a small bowl. Add sugar and cinnamon and stir to combine. Stir in the butter until well blended. Transfer to a serving bowl.
  • Serve the biscuits on a platter with the Cinnamon-sugar Butter alongside.

  • Stir together first 3 ingredients; lightly flour hands, and divide dough into 20 equal portions. Shape each portion into a ball, and place in a lightly greased 8-inch square baking pan. (Dough portions will touch.) Brush evenly with half of butter.
  • Bake at 425° for 15 minutes or until golden brown. Brush evenly with remaining half of butter. Serve immediately.
  • Note: For testing purposes only, we used Bisquick All-Purpose Baking Mix and Sprite (do not use diet).

3 tablespoons Parmesan cheese
1 tablespoon dried onion
3 teaspoons baking powder
1 teaspoon basil leaves
1 tablespoon sugar
1 cup milk
1/2 teaspoon salt
1 1/2 teaspoons vinegar
1/4 teaspoon garlic powder
1 teaspoon fennel
1/2 cup butter (melted)

Steps:

  • Mix dry ingredients until blended. Add milk, vinegar and 1/2 of the butter, stirring until moistened. Knead on floured surface until smooth. Shape into 12 inch round-flat, sheet. Cut dough with pizza cutter into strips then cut once through the middle to half strips. Dip each piece into remaining butter then place in the Dutch oven the way they were cut. Drizzle the left over butter on top. Place 15 to 20 hot charcoal coals on lid of Dutch oven. Turn the burner to low and cook for 8 to 12 minutes. Remove from burner and cook with just the coals on the top for another 10 to 15 minutes until done. Rotate lid while cooking and check often cooking time varies.

Steps:

  • In a small bowl, combine the biscuit mix, cheese and chiles. Stir in water until a soft dough forms. , Drop dough into six mounds in a small ungreased cast-iron or other ovenproof skillet. Steps:
