3 small turkey drumsticks
¼ cup salt
water to cover
2 tablespoons butter, melted
¼ teaspoon ground black pepper, or to taste
1 cup chicken broth

Steps:

  • Put turkey drumsticks in a large bowl with enough water to cover. Stir salt into water to dissolve.
  • Brine drumsticks in refrigerator for 2 hours; drain. Rinse drumsticks with clean water and pat dry.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Brush butter over drumsticks to coat; season with black pepper.
  • Pour chicken broth into a roasting pan. Lay turkey legs into the broth. Place a lid on the roasting pan.
  • Bake in the preheated oven until no longer pink at the bone and the juices run clear, 1 hour 45 minutes to 2 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).

  • Place turkey, salt and garlic in 12-inch skillet; add enough water to cover. Heat to boiling; reduce heat to low. Cover and simmer 1 hour to 1 hour 15 minutes or until turkey is tender; drain.
  • Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat.
  • Mix spaghetti sauce, wine and oil; brush over turkey.

2 tablespoons five-spice powder
Kosher salt and freshly ground pepper
1/2 teaspoon granulated garlic
1/2 teaspoon onion powder
4 turkey drumsticks, without thighs (about 4 pounds)
3/4 cup wood chips, soaked
6 cloves garlic, chopped (about 2 tablespoons)
1 1/2-inches fresh ginger, peeled and finely chopped
3/4 cup rice vinegar
1/4 cup soy sauce
1 tablespoon dark sesame oil
2 tablespoons hoisin sauce
4 teaspoons Asian chili sauce, such as Sriracha
4 scallions (white and green parts), thinly sliced

Steps:

  • For the rub: Mix the five-spice powder, 1 teaspoon salt, 1/2 teaspoon pepper, granulated garlic, and onion powder together in a bowl. Smear the spices all over the drumsticks. Cover and refrigerate for several hours or overnight.
  • Prepare an outdoor grill with a medium-hot fire on one side of the grill for both direct and indirect cooking. Position a drip pan under the grate on the cool side. Toss 1/2 cup soaked wood chips onto the coals.
  • Lay the turkey legs on the grate over the drip pan. Cover the grill and position the lid's vent holes directly over the meat. When the fire dies down, after 45 minutes or so, add about a 1/2 dozen pieces of cold charcoal and the remaining wood chips to maintain a medium to medium-low smoky fire.
  • Meanwhile, make the mop: Whisk together the garlic, ginger, vinegar, soy sauce, sesame oil, hoisin, chili sauce, and scallions.
  • Set aside about half the sauce for serving. After about 1 hour, mop the turkey drumsticks with some of the mop and flip. Mop and flip every 10 minutes or so until the legs are browned and glazed and an instant-read thermometer inserted into the thickest part of the thigh registers about 170 degrees F, 30 to 40 minutes more. Serve the drumsticks with the reserved mop on the side.

1/8 teaspoon white pepper
2 turkey drumsticks (12 ounces each)
2 tablespoons canola oil
1 can (8 ounces) tomato sauce
3/4 cup chicken broth
3/4 cup red wine or additional chicken broth
5 teaspoons onion soup mix
1-1/2 teaspoons paprika
1-1/2 teaspoons Worcestershire sauce
2 garlic cloves, minced
3/4 teaspoon sugar
1/4 teaspoon salt
1 bay leaf

Steps:

  • In a large resealable plastic bag, combine flour and white pepper. Add drumsticks, one at a time, and shake to coat. In a skillet, brown drumsticks on all sides in oil. Transfer to a greased 11x7-in. baking dish; set aside. , In a large saucepan, combine the tomato sauce, broth, wine or additional broth, soup mix, paprika, Worcestershire sauce, garlic, sugar and salt. Back in 2011, Melissa Clark revisited the turkey. "Just because we don't think to make it the star of a meal in May doesn't mean turkey won't taste as good as it did in November," she wrote. She took several approaches: cooking the parts separately, then braising them slowly; simmering ground turkey with pancetta for a ragù; and this one, where turkey drumsticks are coated in a mixture featuring soy sauce, honey and star anise, then cooked in a 400-degree oven. It's a worthy weekend meal, or one for a weekday when work gets out early. Pair it with white rice, to sop up the reserved marinade.

3/4 cup tamari or soy sauce
1/2 cup honey
1/2 cup dry sherry
1/2 cup chopped scallions (white and green parts)

  • Measure reserved flour mixture and blend with an equal amount of cold water; stir into pan juices. Cook, stirring, until sauce boils and thickens.
  • Spoon some of the sauce over turkey; pour remainder in a small serving dish and offer to spoon over individual servings.

  • Peel back the skin. Grip the skin near the bone and gently peel it toward the top of the drumstick. Don't pull it off entirely; just peel it back, so you can tuck butter and seasonings underneath.
  • Rub 1 tablespoon (14 g) of butter over the meat of each drumstick. This will keep the meat moist while the drumsticks bake. For larger drumsticks, you can use up to 3 tablespoons (42 g) of butter.
  • Season the turkey. With the skin still pulled down, sprinkle salt and pepper all over the turkey legs. For more flavor, try rubbing a tablespoon (about 2-4 g) of chopped herbs onto the buttered turkey meat while the skins are still pulled back.
  • Pull the skin over the meat and rub it with butter. Stretch the skin back over the meat and rub another 1-3 tablespoons (14-42 g) of butter over the skin of the turkey.
  • Sprinkle the skin with salt and pepper. Use a liberal amount of both salt and pepper to bring out the best in the turkey's flavor.
  • Lay the turkey legs in a roasting pan. Use a pan large enough to easily hold all of the legs with no overlap. If you want to catch the drippings, use a metal roasting rack over a drip pan.
  • Bake the turkey drumsticks for 90 minutes. Place them in the preheated oven for 45 minutes. Turn them over and cook them for another 45 minutes. Insert a meat thermometer into the thickest part of the meat.
  • Let the meat rest for 15 minutes before serving. This gives the juices time to reabsorb into the flesh, making the meat juicy. Serve whole or remove the meat from the bone.
