WANNA BE GREEK GRILLED CHICKEN BREASTS



Wanna Be Greek Grilled Chicken Breasts image

Super easy, flavourful and tender, with a souvlaki-ish taste. This is best done on the grill, but I've also baked this in the oven on a rack in the winter. Or use a Foreman grill if you have one. Serve with a greek salad and lemon roasted potatoes. From the "Friends of Hope" Cookbook...fundraiser for breast cancer care.

4 -6 boneless skinless chicken breast halves
1 cup buttermilk
1/2 lemon, juice of
2 tablespoons liquid honey
2 -4 garlic cloves, minced
1 teaspoon dried oregano leaves
1 teaspoon dried basil leaves
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Add a small amount of buttermilk to the honey and whisk until smooth, then add the remaining marinade ingredients. Whisk to combine.
  • Place chicken breasts in a zipper bag, pour marinade over and seal, turning to coat.
  • Refrigerate 4-8 hours, turning occasionally. A longer marinating time will yield a more tender and flavourful result.
  • Grill on medium setting until no longer pink.
  • Note: You don't need a pool of marinade around the chicken but if it seems scant add bit more buttermilk.
  • If you like a fuller lemon flavour use the juice of a whole lemon. I've also left out the lemon totally when I didn't have one, still a great taste.
  • Cooking time is approximate, it depends on which method you use. You could also cut up the chicken and skewer -- reduce marinade and cook times.

4 boneless skinless chicken breasts
4 tablespoons olive oil
28 ounces rotel
8 ounces cream cheese, cubed
1 cup cream
salt and pepper

Steps:

  • Salt and pepper the chicken, and cook in large skillet in olive oil.
  • Once cooked through, remove chicken, and add rotel. Stir to remove all the bits from the bottom of pan. When the tomatoes are simmering add the cream cheese and cream.
  • Stir until all is melted, and simmering gently. Add chicken back in, and cover. Cook over low for 5 minutes. Serve hot.
  • Great over green beans.

28 ounces crushed tomatoes
1 1/2 teaspoons garlic powder
1/2 teaspoon oregano
1/2 teaspoon onion powder
5 tablespoons olive oil
2 teaspoons sugar substitute
1/3 teaspoon salt
3 garlic cloves
1/2 small red bell pepper
6 boneless skinless chicken breasts
salt and pepper
1 1/2 cups mozzarella cheese

Steps:

  • Put 2 tbsp olive oil in pan. Crush garlic and finely chop bell pepper. Add to pan.
  • Saute slowly till soft. Add crushed tomatoes, seasoning and sweetener. Let sauce simmer 7 minutes. Then add 1 more tbsp olive oil and simmer 3 more minutes.
  • Saute chicken in 2 tbsp olive oil with salt and pepper. Once done place in pan and cover each breast with 1/4 cup cheese.
  • Place in broiler till melted then top with marinara sauce.
