GREEK STYLE GARLIC CHICKEN BREAST

This recipe was passed down through my family for years. If you're looking for a great tasting, tender chicken breast, this is what you're looking for - Greek style.

4 skinless, boneless chicken breast halves
1 cup extra virgin olive oil
1 lemon, juiced
2 teaspoons crushed garlic
1 teaspoon salt
1 ½ teaspoons black pepper
⅓ teaspoon paprika

Steps:

  • Cut 3 slits in each chicken breast to allow marinade to penetrate. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, pepper, and paprika for about 30 seconds. Place chicken in a large bowl, and pour marinade over. Using your hands, work marinade into chicken. Cover, and refrigerate overnight.
  • Preheat grill for medium heat, and lightly oil grate.
  • Cook chicken on grill until meat is no longer pink and juices run clear.

I found this in Bon Apetit magazine a few months ago. We love it. Note: the prep time includes marinating time.

6 boneless skinless chicken breast halves
6 tablespoons fresh lemon juice
2 tablespoons butter
2 tablespoons olive oil
1 1/2 cups plain breadcrumbs
6 tablespoons chopped fresh basil
3 tablespoons chopped fresh parsley
1 1/2 tablespoons chopped fresh rosemary
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
lemon wedge

Steps:

  • Using meat mallet, pound chicken breasts between sheets of plastic wrap to 1/2- 3/4 inch thickness.
  • Arrange chicken in 15 X 10 X 2 inch glass baking dish.
  • Pour lemon juice over.
  • Cover and refrigerate 1 hour.
  • Remove chicken from dish and pat dry with paper towels.
  • Preheat oven to 450.
  • Melt butter with oil in small saucepan over medium heat; cool slightly.
  • Mix breadcrumbs, basil, parsley, rosemary, salt and pepper in pie dish.
  • Brush chicken breasts on both sides with with melted butter mixture.
  • Coat chicken on both sides with breadcrumb mixture.
  • Place chicken on baking sheet.
  • Bake, uncovered, until chicken is cooked through and breadcrumbs are golden, about 20 minutes.
  • (Test to make sure) Transfer to plates and dress with lemon wedges.

This recipe was found on greecefoods.com I haven't tried it yet, but it looks like a tasty recipe. Prep time includes marinating time overnight. The recipe may take about 2 hours, but most of that is just waiting for the oven. The only real prep is the potatoes. -Update, still haven't made this, but now I really want to! I updated the recipe to match with Reen's comments. Thanks!

3 lbs chicken pieces
1/3 cup olive oil
4 tablespoons melted butter
1/3 cup lemon juice
2 garlic cloves, crushed
1 tablespoon dried oregano
2 tablespoons salt
1 teaspoon pepper
4 large potatoes, peeled and sliced

Steps:

  • Mix all ingredients except potatoes with chicken and place in a plastic bag and marinate overnight in the refrigerator.
  • Bake chicken uncovered at 425 F until slightly browned.
  • Add potatoes, cover with foil and bake at 325 F for 1 hour to 1 1/2 hours.

1 1/2 cups heavy whipping cream
1/2 cup parmesan cheese
1 (4 ounce) can sliced mushrooms
1/3 cup sliced sun-dried tomato (optional)

Steps:

  • Brown chicken breasts over medium heat in a skillet with a little bit of olive oil, about 2 minutes per side.
  • Add remaining ingredients.
  • Cover and simmer for 15-20 minutes, or until chicken is cooked through.
  • Serve immediately.
