2 20-ounce cans green jackfruit in water*
1 onion, diced
3 cloves garlic, minced (about 1 1/2 teaspoons)
1 cup BBQ sauce of choice**
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon liquid smoke
Salt and pepper, to taste
6 whole-wheat hamburger buns (or gluten-free, if necessary)
Optional toppings: lettuce, grilled pineapple, vegan ranch, cabbage slaw, avocado

  • In a skillet over medium heat, heat a little water or oil. Add onion and cook for 5-7 minutes, until tender. Add garlic; cook for another minute.

1/2 large yellow onion, finely diced (1 cup)
Kosher salt and freshly ground pepper

1 cup ketchup
1 tablespoon Dijon mustard
1 tablespoon light-brown sugar
1 tablespoon apple-cider vinegar
1 tablespoon Worcestershire sauce

8 potato sandwich buns, preferably Martin's
Shredded iceberg lettuce and mayonnaise, for serving

Steps:

  • BBQ Sauce:In a medium saucepan, heat oil over medium-high. Add onions and a pinch of salt. Cook, stirring, until onions are softened and translucent, 3 to 4 minutes. Stir in garlic; cook 1 minute more. Stir in ketchup, Dijon, sugar, vinegar, Worcestershire, and paprika. Reduce heat to medium and cook, stirring occasionally, until thickened slightly, 5 minutes. Remove from heat and let cool.
  • Sandwich:Remove any large knobby pieces from jackfruit and discard. Pour BBQ sauce over jackfruit and toss to combine. Season with salt and pepper. Cover and refrigerate at least 1 hour and preferably overnight. To serve, heat jackfruit in a saucepan or microwave. Heat buns, cut-side down, in a dry cast-iron grill or skillet over medium-high until toasted, about 2 minutes. Spread buns with mayonnaise and top with jackfruit and lettuce. Serve, with chips alongside if desired.

1/4 cup olive oil
14-ounce can young jackfruit in brine, drained and rinsed
1/2 cup canned chickpeas, drained and rinsed
2 cloves garlic
1 tablespoon brown sugar
several good shakes of paprika, chili powder, and onion powder
a pinch of salt
1/4 cup barbecue sauce
ideally, a pre-made slaw bag mix!
otherwise: thinly sliced cabbage + mayo, lemon juice or vinegar, sugar and salt
toasted buns (I like brioche buns)
any other toppings you like - I'd recommend avocado, pepperoncini, pickles, hot sauce, etc.

  • Heat the olive oil in a pan over medium high heat. Add the jackfruit and break it apart into "shreds" with the back of a spoon.
  • In a small chopper or food processor, pulse your chickpeas and garlic until they have a finely chopped texture. Add the mixture to the pan, along with the brown sugar and spices. Stir it all up to get it seasoned and happy. Add barbecue sauce and let it get a little roasty. More undisturbed time in the pan = more meat-like browning.
  • Serve your jackfruit BBQ on a bun topped with slaw and anything else you like! Add a pile of salt & pepper chips to your plate and you are in delicious business.

1 medium red onion
2 garlic cloves
2 cups organic ketchup
1/2 cup scotch, bourbon, or other whiskey (or water for alcohol-free)
1/4 cup cider vinegar
1 tablespoon soy sauce
2 teaspoons chili powder
1 teaspoon smoked paprika
Kosher salt
Fresh ground pepper
2 15-ounce cans green jackfruit in water or brine (here's something similar to what we used)
2 tablespoons olive oil
1/2 recipe Easy Vinegar Coleslaw or Best Creamy Coleslaw
6 buns or ciabatta rolls

Steps:

  • Finely chop the onion. Mince the garlic.
  • In a medium saucepan, combine the ketchup, whiskey, vinegar, soy sauce, onion, garlic, chili powder, and paprika over medium heat. Cook at a steady simmer, stirring occasionally, until the vegetables soften and the sauce thickens slightly, about 15 minutes. Taste and add salt and pepper if necessary. (Use right away or cool, cover and refrigerate for up to a week.)
  • Rinse and drain the jackfruit in a colander, pressing down to extract as much water as possible. Run your hands through the pieces, pulling and separating them into shreds with your fingers.
  • Place the olive oil in a large skillet over medium-high heat. When it's hot, add the jackfruit and cook, stirring occasionally, until browned and crisp in places, 2 to 3 minutes. Add the sauce and bring to a boil, then adjust the heat so the mixture bubbles gently. Cook, stirring once in a while, until the sauce has thickened and the jackfruit has absorbed some of the flavor, 15 to 20 minutes.
  • Meanwhile, make the Easy Vinegar Coleslaw or Best Creamy Coleslaw.
  • When you're ready to eat, slice the buns or rolls. Divide the jackfruit among the rolls, top with the slaw and the top of the roll, and serve.

2 (20 ounce) cans jackfruit, in brine or water, drained and rinsed
2 tablespoons brown sugar
1 tablespoon smoked paprika
1 teaspoon garlic powder

1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper, optional
1 tablespoon avocado oil
3/4 cup barbecue sauce, mixed with 1/4 cup water
4 burger buns
1 (12 ounce) bag broccoli slaw
1/2 cup vegan mayonnaise, plus more for serving
1 tablespoon white vinegar, or apple cider vinegar
1 tablespoon granulated sugar
1/2 teaspoon ground black pepper

Steps:

  • Cut off the core of the jackfruit and set aside. In a large bowl whisk together brown sugar, smoked paprika, garlic powder, onion powder, chili powder, salt and black pepper, and cayenne if using. Add the jackfruit and toss until thoroughly coated.
  • Heat a pan over medium heat. Add oil. Once hot, add the jackfruit. Cook for about 3 minutes until jackfruit begins to yellow. Flip jackfruit over, pour in barbecue sauce, and gently stir. Lower heat to medium-low, cover and let simmer about 20 minutes.
  • Meanwhile, make broccoli slaw. Whisk together mayonnaise, vinegar, granulated sugar, black pepper and salt. Toss with the broccoli slaw and set aside.
  • Once jackfruit is done coking shred with 2 forks. Increase heat to medium-high and cook for a few minutes more. Remove from heat.
  • To assemble the sandwiches, spread bun with mayonnaise if desired. Layer jackfruit, extra BBQ sauce, broccoli slaw and any other desired toppings like greens or pickled veggies and enjoy!

2 (14 oz) cans Young Jackfruit ((rinsed, drained, shredded) )
1 small Yellow Onion ((white or red will work too) )
1 cup BBQ Sauce ((more to add on sandwich) )

Steps:

  • Preheat oven to 375F. Drain and rinse jackfruit. Then use your hands or a fork to shred the jackfruit similar to pulled pork. In a skillet over medium heat, sauté the onion for about 3-4 minutes until it's translucent. Then, add the jackfruit and bbq sauce in, mix together and sauté for another 2-3 minutes.
  • Transfer the bbq jackfruit to a baking sheet lined with parchment paper. Make sure it's evenly spread. If your skillet is oven-friendly, it can be left in there. Put in the oven for 20 minutes. Once it's done, remove from oven and build your sandwich. You can add more BBQ sauce after if you'd like. Top it with slaw, pickled onions or other toppings you like. Enjoy!

Steps:

  • Mix together the vinegar, coleslaw mix, mayonnaise, 1/2 teaspoon salt, and a few pinches of pepper in a bowl. Cover with plastic wrap and refrigerate until ready to serve.
  • Drain and seed jackfruit. Pull apart with two forks or use a hand mixer on low to break apart.

  • Using a potato masher or wooden spoon, smash the jackfruit until it resembles a pulled pork consistency and season to taste with salt, pepper and light brown sugar if you would like it sweeter. Serve on the potato buns topped with the coleslaw.

Toss it back in the oven for about 10 minutes, until it looks delicious and golden and even a few strands get a bit burnt.
