My guests like this casserole even if they don't usually like all the ingredients in it! For instance, people who don't care for broccoli don't mind it in this dish. And I like the way it's so easy to make and serve when company comes. -Suzann Verdun, Lisle, Illinois

1 package (6 ounces) wild rice, cooked
3 cups frozen chopped broccoli, thawed
1-1/2 cups cubed cooked chicken
1 cup cubed cooked ham
1 cup shredded cheddar cheese
1 jar (4-1/2 ounces) sliced mushrooms, drained
1 cup mayonnaise
1 teaspoon prepared mustard
1/2 to 1 teaspoon curry powder
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 350°. In a greased 2-qt. baking dish, layer the first 6 ingredients in order listed. Combine mayonnaise, mustard, curry and soup. Spread over top. Sprinkle with Parmesan cheese. , Bake, uncovered, 45-60 minutes or until top is light golden brown.

This is a spicy soup/chowder that even our kids love. Removing the seeds from the chiles lowers the heat, but keeps the flavor. Being a garlic-lovin' family, we usually triple the amount of garlic. This is also really good with either grated parmesan or shredded monterey jack cheese. For some reason, recipezaar doesn't like limes. Use six lime wedges for garnish.

2 fresh jalapeno chilies (approx 3-inch)
2 tablespoons salad oil
1 large onion, chopped
1 (10 ounce) bag frozen baby peas
2 garlic cloves, pressed
1/2 teaspoon cumin seed
6 cups low sodium chicken broth
3 medium pear shaped roma tomatoes, diced
lime wedge
2/3 cup medium-grain white rice
1 lb frozen cooked shrimp

Steps:

  • Cut one chile in half lengthwise (carefully remove the seeds for less heat).
  • Thinly slice the remaining chile and set it aside.
  • In a 6-quart pan, combint the oil, onion, garlic, cumin seed, and 1 or two chile halves (to taste).
  • Stir over medium-high heat, then cover for about 5 minutes (until the onion is limp).
  • Add the broth and the rice.
  • Bring to a boil over high heat, cover, and simmer on low for about 25 to 30 minutes (until the rice is tender).
  • Add the tomatoes, peas, and 3/4 of the shrimp.
  • Simmer uncovered until hot.
  • Fish out and discard the chile halves.
  • Ladle the chowder into wide soup bowls.
  • Mound remaining shrimp equally in each bowl.
  • Garnish with lime and sliced chiles.

1 (8 ounce) package egg noodles
1 pound lean ground beef
1 onion, chopped
2 (7 ounce) cans tomato sauce with mushrooms
1 teaspoon salt
¼ teaspoon black pepper
¼ teaspoon ground cinnamon
1 cup cottage cheese
½ cup chopped green onions
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a skillet over medium heat, brown the ground beef with the onion until no pink shows; drain. Mix in 1 of the cans of tomato sauce, salt, pepper and cinnamon. Pour into shallow 3 quart casserole baking dish.
  • Pour in noodles in an even layer. Top with cottage cheese; sprinkle with onions and Cheddar cheese. Pour on remaining can of tomato sauce.
  • Bake in a preheated over for 30 minutes.

8 ounces egg noodles
1 lb lean ground beef
1 (15 ounce) cans tomato sauce
1 (8 ounce) packages cream cheese
1/4 cup sour cream
1 cup small curd cottage cheese
1/2 cup chopped green onion
2 tablespoons chopped green peppers
2 tablespoons melted butter

Steps:

  • Cook noodles; drain and set aside. Brown meat; drain. Add tomato sauce to beef; remove from heat. In a separate bowl, mix cream cheese, cottage cheese, sour cream, onions and peppers. Butter a casserole dish and spread 1/2 the noodles in the bottom. Cover noodles with 1/2 the cheese mixture, then 1/2 the meat mixture, then 1 more layer of noodles, then cheese mixture and then meat mixture. Pour 2 tablespoons butter over top; press down slightly. Bake at 375° for 1 hour to 1 hour 15 minute. If drier casserole is desired, cook 15 minutes longer. ****You can lighten this up a bit by using reduced fat/no fat cream cheese, sour cream & cottage cheese****

Jackie's company casserole is a rich, filling, dish that even the kids love. We got the recipe from my mother-in-law's *favorites* recipe file. We're not sure where she got it, but it is a family favorite.

8 ounces egg noodles
16 ounces ground beef
1/2 tablespoon olive oil
16 ounces tomato sauce
8 ounces cream cheese
1 cup cottage cheese
1/4 cup sour cream
1/3 cup scallion, finely chopped (green onions)
1 cup green pepper, finely chopped (or celery)
1 1/2 teaspoons italian seasoning
2 dashes Tabasco sauce (or other "hot" sauce)
4 teaspoons water
2 teaspoons Worcestershire sauce
1 1/2 teaspoons salt
1 teaspoon sugar
1 -2 cup cheddar cheese

Steps:

  • Boil the noodles as directed on the package.
  • In a bowl, combine the tomato sauce, water, Tabasco sauce, Worcestershire sauce, salt and sugar.
  • Brown the ground beef in Olive oil and drain.
  • Add the tomato sauce mixture to the ground beef.
  • In a separate bowl, mix the cream cheese and the remaining ingredients.
  • In a greased 9x13" casserole pan (cake pan), spread 1/2 of the noodles.
  • Add all of the cream cheese mixture.
  • Add the remaining noodles.
  • Add the ground beef / tomato sauce mixture.
  • Bake for 20-30 minutes at 350°F.
  • Top with Cheddar cheese.
