FLYGANDE JACOB
Flygande Jacob ("Flying Jacob") is an original Swedish dish made with chicken, banana, peanuts and bacon that is baked in the oven.

Steps:
- Preheat the oven to 440 F (225°C).
- Cut the chicken into very thin strips.
- Heat the oil in a pan over medium heat, and brown the chicken for 5 minutes, stirring several times.
- Add half the salt and pepper, to taste.
- Transfer the chicken to a baking dish.
- In the same pan, brown the bacon for 3 minutes, stirring constantly.
- Add the bacon to the chicken.
- Peel and slice the bananas and arrange them on top of the chicken and bacon.
- Combine the cream and chili sauce, add the remaining salt, and season with pepper. Pour the mixture over the chicken, bananas and bacon.
- Bake in the middle of the oven for about 20 minutes.
- Sprinkle the peanuts over the chicken, and serve with the rice.

FLYING JACOB - OVEN BAKED CHICKEN THIGHS
Chicken gratin with bananas and nuts: Kids love this recipe which is based on a swedish traditional dish invented by Ove Jacobson, a guy working in the freight industry. I adapted it for RCS#15 but i have been making this for some time and my family loves it. I am not sure about the name but this dish will give you wings. It is super easy to prepare and comes with a side dish which you can prepare while the chicken is getting ready in the oven.

Steps:
- Turn your oven on 430°F (225°C).
- I use a kitchen paper towel to tap dry the chicken before i put it into a hot non stick skillet which may go into the oven later.
- Fry the chicken tights over medium heat, turning occasionally until browned on all sides, about 10 minutes.
- Blend the spices and stir into sour cream.
- Cut the banana into 1 to 2 inch big pieces and put over the chicken.
- Pur the spiced sour cream mixture over and put in oven for 25 minutes.
- In the meanwhile cook rice according to directions (i use 4 cups of water for 2 cups of rice).
- Simmer the green beans with a bottom fill of water until tender.
- Sprinkle the cooked rice with thyme and serve to your Jacob.
JACOB'S FLYING CHICKEN
This is a Norwegian recipe I cut out from a Norwegian magazine, years ago. It is very easy to prepare, and has a unique and wonderful taste, blending curry and bananas. You can use any size grilled chickens, thus the 4-6 servings.

Steps:
- Skin and debone chicken (s), and break into bite-size pieces.
- Put chicken pieces in a lightly greased 9 X 13 pan.
- Cut peeled bananas in half, vertically.
- Cut each banana-half again, horizontally.
- Put bananas on the chicken pieces in the pan.
- Whip whipping cream, and add chilisauce, salt and curry.
- Spread the mixture on top of the chicken and bananas.
- Sprinkle with cashews or pine-nuts.
- Bake in pre-heated oven at 225 C for 20 minutes.
- If you want the optional, crumbled bacon, sprinkle over at serving time.
