JALAPENO CHEDDAR BURGER BUNS

Steps:
- Add warm water to the bowl of your mixer and sprinkle the yeast over top. Let sit 10 minutes, until frothy.
- Add the, oil, 1 egg, and sugar to the bowl.
- Add the flour, salt, cheese and jalapeno peppers and mix on medium-low speed with the hook until the dough holds together, about 2 minutes. The dough should clean the sides of the bowl. If not, add additional flour by the tablespoon.
- Increase speed to medium and knead the dough for 5 minutes.
- Transfer the dough to a large bowl that has been lightly greased with oil.
- Cover it with a towel and let rise in a warm place until doubled in bulk, about 1 1/2 hours.
- Line a baking sheet with parchment.
- Turn out the dough onto a lightly floured surface.
- Divide the dough in half and each half into 4-6 pieces (depending on the size of your burgers, typically about 8-9 buns per batch).
- Roll into rounds and flatten with the palm of your hand onto the baking sheet; placing buns about 1/2-1 inch apart.
- Cover with a damp towel and let them rise for 20 minutes + oven preheating time.
- Preheat oven to 350.
- Whisk the remaining egg with 1 tablespoon water.
- Brush the buns with the egg wash and bake for 20 to 30 minutes, until golden brown. Let cool minutes before slicing and serving.
- Store leftovers in a zip-top bag at room temperature. Freezes well.

This recipe started out as Kelly Canfield's Jalapeno Bread and through evolution a couple of trys, with a few changed ingredients ended up as burger buns. If you love a good burger with a bun that compliments it try these. If you like smaller burgers just make more buns out of this same recipe,

Steps:
- Allow the frozen dough to rise overnight in the fridge (if using fresh let it rise to double it's size).
- Knead in your mixer for 5 minutes (by hand 10 minutes).
- Add all the ingredients to the dough and knead for a further 10 minutes.
- Cut into 14 equal pieces (more if you want smaller buns).
- The dough is a bit moist from all the ingredients in it so you may want to use a little flour on your hands to form the buns- do not use too much flour or the buns will not rise as easily Place buns on a baking sheet that has been sprayed with veggie oil.
- For best results bake the buns on a baking stone, covered with a piece of parchment and lightly sprayed with veggie oil Cover and place in a warm spot until the buns have doubled in size (I place them in the oven with the oven light on this gives a lovely warm, even heated, no breeze place where they can rise undisturbed).
- This step may take 1-2 hours dependinbg on your dough.
- Bake in 350F oven for apprx 20-25 minutes.
- Place on a rack to cool.
- They freeze well.

JALAPENO CHEESE HAMBURGER BUNS
Delicious cheesy and spicy hamburger buns.

Steps:
- Put warm water sugar into your mixer. Sprinkle the yeast on the water and let sit until the yeast poofs on top. Add sugar, flour, salt, red pepper flakes, and ginger. Mix on Low with a bread hook. Before it is completely mixed add in diced jalapenos and cheese. Remove from mixer and place plastic wrap on top of the bowl and let it rise until doubled in size in a warm but not hot spot. When you see that it has doubled in size then remove the plastic wrap and sprinkle flour on a clean countertop. Remove the dough to the counter. Make 7-8 equal-sized dough balls. Sprinkle each of them with a few sesame seeds and then place them on an oiled cookie sheet and cover with a light cloth like a flour sack towel that is clean and lint-free. Place the cookie sheet with your hamburger buns and set them in a warm and draft-free place to rise. Preheat oven to 350 F When the buns have finished rising place them in a preheated oven and bake for 25 minutes or until golden and cooked throughout. With a metal or silicone spatula remove the hamburger buns to a wire rack to cool so the bottom of them will not get wet on the bottom.
SUNNY'S EASY ON YOUR BODY AND LEAN JALAPENO BURGER
Steps:
- For the grill: Preheat the grill to 400 degrees F or a cast-iron pan over medium-high heat.
- Crumble the beef into a large bowl. Add the salt, seasoning blend and some pepper. Mix the beef mixture gently with your hands so as to not overmix. Just fold the ground beef, don't mush or squeeze the ingredients into the beef. Form 4 patties.
- Place the patties and the jalapenos over the direct heat of the grill or into the cast-iron pan. Cook the patties on one side until the meat is seared and releases easily from the grill grates or pan, 3 to 4 minutes. Flip the patties and rotate the jalapenos to get them charred on both sides. Cook until desired doneness on the beef, 3 to 4 more minutes for medium-rare to medium.
- For the toppings: Top the burgers with the cheese and transfer to a plate or sheet pan. Cover with aluminum foil for about 5 minutes. Meanwhile, remove the charred jalapenos and chop. Spread over the cheese on the burgers.
- Squeeze mustard on both the top and bottom buns if desired. Build the burgers by topping the bottom buns with the cheeseburgers, jalapenos, a pile of red onions, a pile of lettuce and the top buns. Serve.
CREAM CHEESE JALAPENO HAMBURGERS
These are the BEST burgers I've ever had. My mother made a version of these and I changed it a little....instead of Jalapeno peppers you can add ANYTHING or just do the cream cheese...trust me...you're family and/or guests will BEG for the recipe!

- Preheat a grill for medium heat. When hot, lightly oil the grate. In a medium bowl, stir together the jalapenos and cream cheese.
- Divide the ground beef into 16 portions and pat out each one to 1/4 inch thickness. Spoon some of the cream cheese mixture onto the center of 8 of the patties. Top with the remaining patties, pressing the edges together to seal.
- Grill for about 10 minutes per side, or until well done, taking care not to press down on the burgers as they cook. This will make the cheese ooze out. Serve on buns with your favorite toppings.

- In a small skillet, heat oil and butter over medium heat. Add onion, salt and sugar; cook and stir until onion is softened, 3-4 minutes.
