JALAPENO CHEDDAR SAUSAGE



Jalapeno Cheddar Sausage image

Number Of Ingredients 12

1 lb pork butt (slightly fattier pieces are recommended, about 35% fat)
1 lb beef (chuck recommended)
1/2 lb smoked bacon (diced or chopped)
4 jalepeno peppers (cored, seeded and diced)
1/2 lb sharp cheddar (diced)
2 tsp kosher salt
1 tsp black pepper (coarseley ground)
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp mustard powder
1/4 tsp sage (dried)
1 cup ice water

Steps:

  • Cut the beef and the pork into 1"-1.5" pieces, keeping the two separately and ensuring that the meat stays below 40F at all times.
  • Grind the beef through a 3/8" (10mm) plate and the pork through a 1/4" (6mm) plate.
  • Add the salt, the spices, the water, and mix well until the meat is sticky.
  • Fold in the jalapeno peppers and the cheese, making sure that they are distributed evenly.
  • Stuff into hog casings, tie off the ends and twist into 6" links.
  • Smoke over oak or hickory until the internal temperature is at least 165F. You can also cook this sausage on a grill, air fryer or a pan.

1 pound large fresh jalapeno peppers, halved lengthwise and seeded
1 (8 ounce) bottle Ranch dressing

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place sausage in a skillet over medium heat, and cook until evenly brown. Drain grease.
  • In a bowl, mix the sausage, cream cheese, and Parmesan cheese. Spoon about 1 tablespoon sausage mixture into each jalapeno half. Arrange stuffed halves in baking dishes.
  • Bake 20 minutes in the preheated oven, until bubbly and lightly browned. Serve with Ranch dressing.

This is a recipe for stuffed jalapenos I had at a baby shower in Texas. I loved them and have made them for every party since. They are always anxiously requested, a HIT AT EVERY PARTY!!!! Use toothpicks to secure the bacon around the stuffed jalapenos. Be sure to use a pan that won't let the bacon drip all over the oven while cooking!

2 (12 ounce) packages ground sausage
2 (8 ounce) packages cream cheese, softened
30 jalapeno chile peppers
1 pound sliced bacon, cut in half

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place ground sausage in a large, deep skillet. Cook over medium high heat until evenly brown.
  • Drain sausage and place in a medium bowl. Mix with the cream cheese.
  • Cut jalapenos in half lengthwise. Remove the seeds. Stuff each jalapeno half with equal portions of the sausage and cream cheese mixture. Wrap with half slices of bacon. Secure bacon with toothpicks.
  • Arrange wrapped jalapenos in a large, shallow baking dish. Bake in the preheated oven 20 minutes, or until the bacon is evenly brown.

3 pounds potatoes (about 6 medium), peeled and cut into 1-inch cubes
3 jalapeno peppers, sliced and seeded
1/4 cup butter, cubed
2 tablespoons water
3 garlic cloves, minced
3/4 teaspoon salt
1/4 teaspoon pepper
2 medium sweet red peppers, halved and cut into 1-inch strips
2 medium sweet yellow or orange peppers, halved and cut into 1-inch strips
1 large onion, halved and thinly sliced
1 teaspoon olive oil
5 Italian sausage links (4 ounces each)
Chopped fresh basil, optional

Steps:

  • Place the first seven ingredients in a 6-qt. slow cooker; toss to combine. Top with sweet peppers and onion. , In a large skillet, heat oil over medium-high heat. Brown sausages on all sides; place over vegetables. Cook, covered, on low until potatoes are tender, 5-6 hours., Remove sausages; cut diagonally into 2- to 3-in. pieces. Remove vegetables with a slotted spoon; serve with sausage. If desired, sprinkle with basil.

16 corn husks
2 teaspoons kosher salt
1 tablespoon sugar
1/2 ounce chicken base (dissolved in 2 ounces cold water)
1 tablespoon garlic, chopped fresh
1/2 teaspoon nutmeg, grated
1/4 teaspoon allspice, ground
1/4 cup jalapeno, chopped and seeded
1 tablespoon black peppercorns, crushed
1/2 teaspoon cayenne pepper
2 1/2 lbs pork butt, coarsely ground

Steps:

  • Heat a smoker or grill to 250 degrees F.
  • Soak corn husks in warm water for 15 minutes.
  • Mix all of the dry ingredients together in a large bowl and add the ground pork. Combine well.
  • Put approximately 6 ounces of the sausage mixture on 8 of the open wet corn husks.
  • Put another corn husk in the opposite direction on top and wrap and tie each end with string. (I may triple wrap and turn over half way through as some of mine were very crispy on the bottom.).
  • Smoke until the sausage temperature reaches 160 degrees F. on an instant-read thermometer about 1 1/2- 2 hours. Transfer the husks to a serving platter and serve.

1 cup shredded Parmesan cheese
22 large jalapeno peppers, halved lengthwise and seeded

Steps:

  • In a large skillet, cook the sausage over medium heat until no longer pink; drain. In a small bowl, combine the cream cheese and Parmesan cheese; fold in sausage., Spoon about 1 tablespoonful into each jalapeno half. Place in 2 ungreased 13x9-in. baking dishes.
