10 Jalapeño Recipes: Pickled Jalapeños & More! image

Add big flavor to your meals with these easy homemade pickled jalapeños! With only 10 minutes hands on time, they add a tangy kick to tacos and chili.

5 to 6 medium jalapeño peppers
2 garlic cloves
1/2 cup white vinegar
1/2 cup water
1 tablespoon sugar
2 teaspoons kosher salt
1 tablespoon black peppercorns
1 bay leaf

Steps:

  • Wash a wide-mouth pint mason jar and and its lid in hot soapy water. Then rinse and let air dry.
  • Thinly slice the jalapeño peppers. Fill the jar with the slices.
  • Peel the garlic cloves, leaving them whole. In a small saucepan, combine the garlic, vinegar, water, sugar, kosher salt, peppercorns and bay leaf. Bring to a boil, stirring occasionally to dissolve the sugar and salt (this will take only a few minutes).
  • Once boiling, pour the brine into the jar (including the bay leaf). Tap the jar on the counter to release any air bubbles. Discard any remaining brine, or top off the jar with extra water if any peppers are exposed at the top.
  • Screw on the lid tightly and allow to cool to room temperature (about 1 hour). Eat immediately, or refrigerate until serving. Keeps up to 1 month refrigerated.

Flavoured vodkas are very popular and this one says "Holiday Cheer" to me. The recipe comes "Too Many Chiles!" by Dave DeWitt, Nancy Gerlach and Jeff Gerlach. I haven't got round to trying this yet, but I'm sure that served with Tomato Juice this would make the best punchy Bloody Marys ever! Luckily the chillies only need a minimum of one week's infusion time, so if you want to try this you won't have to wait too long!

4 jalapeno chiles
1 quart vodka

Steps:

  • Remove the seeds and stems from the chillies, then cut them into quarters lengthways; place the chillies in the vodka and put aside to 'steep'.
  • Let the vodka sit for one week, or leave for longer if a hotter taste is required.
  • Remove the chillies when the desired flavour has been achieved and serve.

2 jalapeno peppers, halved lengthwise and seeded
1-1/2 cups vodka
6 to 8 cups ice cubes
3 cups pomegranate juice
3 cups Italian blood orange soda, chilled
Lime wedges

Steps:

  • For jalapeno vodka, place jalapenos and vodka in a glass jar or container. Refrigerate, covered, 2-3 days to allow flavors to blend. Strain before using., For each serving, fill cocktail shaker three-fourths full with ice. Add 3 oz. pomegranate juice and 1-1/2 oz. jalapeno vodka; cover and shake until condensation forms on outside of shaker, 10-15 seconds. Strain into a cocktail glass; top with 3 oz. soda. Serve with lime wedges.
