COCONUT JUMBLES

Coconut jumbles image

Old-fashioned and buttery-crisp, and from an old family recipe, these are perfect cookies for filling attractive tins.

Provided by Lisa Yockelson

Categories     dessert

Time 4h30m

Yield About six dozen cookies

Number Of Ingredients 11

5 cups unsifted cake flour
3 teaspoons baking powder
1 teaspoon salt
1/2 pound (two sticks) unsalted sweet butter, softened at room temperature
2 cups granulated sugar
1 whole egg, extra large
2 egg yolks, extra large
1 teaspoon pure vanilla extract
4 tablespoons light cream
About 2 cups sweetened, shredded coconut
2 egg whites, beaten until frothy

Steps:

  • Sift the cake flour, baking powder and salt together; set aside. In the large bowl of an electric mixer, cream the butter until light. Add the granulated sugar in two additions, beating until fluffy after each portion is added. Add the whole egg; beat for one minute. Add the egg yolks and continue beating for an additional minute. Blend in the vanilla extract and light cream. In three additions, add the sifted flour mixture, mixing just until the flour particles have been absorbed. The dough is quite sticky at this point.
  • Divide the dough into three portions on sheets of wax paper; wrap up and refrigerate. Chill the dough until quite firm, at least four hours. (The dough may be kept, well wrapped and refrigerated, for up to four days before baking.)
  • On a lightly floured wooden board, roll out a portion of dough oneeighth-inch thick. Stamp out cookies with a three- or three-and-one-half-inch cutter and place them, at least two inches apart, on a cookie sheet lined with parchment paper. Repeat with the remaining dough.
  • Have the coconut at your side. Brush egg white over the surface of each cookie, then top with a generous sprinkling of coconut. Lightly press down the coconut so that it sticks to the cookie.
  • Bake each sheet of jumbles for 10 minutes in a preheated, 400-degree oven, on the lower third level. Remove the cookies from the sheet with a wide spatula to cooling racks. Store the jumbles in airtight containers.

BASIC JAM

Basic Jam image

The skins from stone fruit will contribute color and flavor to the jam. But for a smoother mixture, you can start by peeling peaches or nectarines: Carve an X in the bottom of each and plunge them into boiling water for 30 seconds, then transfer them to an ice-water bath to stop the cooking; the skins will slip off. For plums, just lift the skins out of the cooked jam with a fork.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Gluten-Free Recipes

Time 45m

Yield Makes about 5 cups

Number Of Ingredients 4

3 pounds fruit (see options, below), cut into 1-inch chunks if large, stone fruit pitted
1 1/2 pounds sugar (3 1/3 cups)
Coarse salt
2 tablespoons fresh lemon juice

Steps:

  • Stir together fruit, sugar, and 1/4 teaspoon salt in a large heavy-bottomed pot. Bring to a boil, stirring until sugar is dissolved and mashing fruit with a potato masher. Add lemon juice; continue to boil, stirring frequently, until bubbles slow, chunks of fruit show at top, and mixture clings to a spoon but falls off in clumps, 10 to 12 minutes. Skim foam from top.
  • Ladle jam into clean containers, leaving 3/4 inch of headroom. Let cool completely. Cover, label, and refrigerate up to 1 month, or freeze up to 1 year.

JUMBLEBERRY JAM

Jumbleberry jam image

If you have berries that need using up, boil them down into jars of preserve in mere minutes

Provided by Sara Buenfeld

Categories     Afternoon tea, Condiment

Time 27m

Yield Makes approx 4kg/9lb (8-9 jars)

Number Of Ingredients 3

2kg mixed summer berry (we used 1kg halved strawberries, 500g blackberries and 500g mixed currants)
juice 2 lemons
2 x 1kg packs jam sugar with pectin

Steps:

  • Before you start, sterilise your jars and put a plate in the freezer to chill.
  • Tip the berries, lemon juice and sugar into a preserving pan. Gently heat, stirring occasionally with a wooden spoon, until the sugar has melted and fruits are juicy.
  • Bring to the boil and boil rapidly for 5 mins. Remove from the heat and drop a little of the mixture onto the chilled plate. Push your finger through it; it should wrinkle and have set like jam. If it doesn't, boil for 2 mins more, then test again and, if necessary, keep repeating until it's ready.
  • The top of the jam may look like it has sediment on it, but if you stir it well as it cools, it should disappear. Allow to cool and settle for 10-15 mins before ladling into sterilised jars and sealing. The jam will keep unopened for 1 year but, once opened, store in the fridge.

JUMBLES

Jumbles image

Categories     Cookies     Mixer     Dessert     Bake     Connecticut

Number Of Ingredients 7

3 cups flour
1/2 teaspoon salt
1 1/2 cups sugar
1/2 pound butter, room temperature
3 large eggs, room temperature
2 1/2 teaspoons caraway seeds
Sugar for rolling

Steps:

  • Preheat oven to 375°F. Lightly grease two cookie sheets. Sift flour and salt into a large bowl. Set aside. With electric mixer, cream butter and add sugar gradually. To flour add very well beaten eggs, butter mixture, and seeds. Beat vigorously with wooden spoon to combine well. By hand, gently knead ingredients into a ball of soft dough. If the weather is warm and the dough is too soft to shape, you can refrigerate it for a couple of hours. Roll teaspoonfuls of the dough on a very lightly floured work surface, forming long thin ropes (about 5 inches). Roll the ropes in a plate of sugar. Place the ropes on prepared baking sheets, curling them into a circle and gently pressing ends together. Bake for 10-12 minutes until edges are very brown. Cool cookies on rack. They crisp when cool.
  • Variations; The caraway seeds are unexpected and a lovely complement to this sweet cookie. For a sweet, decadent cookie, substitute toffee candy bits for the seeds. This dough can be made into little crunchy cakes by placing scant 1/4 cup portions into well buttered and sugared muffin tins.
