TUSCAN MEATBALLS
Ground turkey and pasta dish. We love this recipe--is my husband's favorite! Got this recipe from Family Circle magazine a few years ago.

Steps:
- Heat oven to 350 degrees.
- Squeeze water out of spinach.
- Mix spinach, turkey, egg, bread crumbs, 3/4 cup parmesan, mozzarella, garlic salt and pepper. Form into about 30 meatballs.
- Heat oil in large frying pan over med-high heat. brown meatballs for 2-3 minutes. Once browned, bake meatballs on baking sheet for about 20 minutes.
- While meatballs are baking, bring a lightly salted pot of water to a boil and cook spaghetti. Once finished, reserve 1 cup pasta water before draining.
- Deglaze meatball pan with white wine. Add butter and garlic & let thicken slightly. Pour over drained spaghetti and toss to coat; add some of reserved pasta water to moisten if needed. Add meatballs. Sprinkle with 1/4 cup parmesan.

ROASTED ITALIAN MEATBALLS

- Preheat the oven to 400 degrees F. Line two sheet pans with parchment paper.
- Place the sirloin, pork, and veal in a large mixing bowl and lightly break up the meats with a fork and your fingertips. Add the bread crumbs, Pecorino, Parmesan, garlic, parsley, 2 teaspoons salt, and 1/2 teaspoon black pepper. Add the eggs, wine, and 3/4 cup water and combine lightly but thoroughly.
- Measure out 2-ounce portions of the mixture (I use a rounded 1 3/4-inch ice cream scoop) and roll each lightly into a ball. Place one inch apart on the prepared sheet pans. Brush the meatballs with the olive oil.
- Bake the meatballs for 25 to 30 minutes, until lightly browned. Pour the marinara into a large pot and bring to a simmer. Carefully add the meatballs and simmer for 10 minutes, until heated through.
- To serve with polenta, spoon a puddle of creamy Parmesan polenta on one side of each dinner plate. Spoon 1 or 2 meatballs plus a puddle of tomato sauce on the other side, allowing them to combine in the center of the plate. To serve with spaghetti, distribute among shallow pasta bowls. Spoon the meatballs and sauce onto the pasta. Sprinkle with extra Parmesan and serve hot.
- Place the chicken stock in a large saucepan. Add the garlic and cook over medium-high heat until the stock comes to a boil. Reduce the heat to medium-low and very slowly whisk in the cornmeal, whisking constantly to make sure there are no lumps. Switch to a wooden spoon, add the salt and pepper, and simmer, stirring almost constantly, for 10 minutes, until thick. Be sure to scrape the bottom of the pan thoroughly while you're stirring. Off the heat, stir in the Parmesan, creme fraiche, and butter. Taste for seasonings and serve hot with extra Parmesan cheese to sprinkle on top.
KETO TUSCAN MEATBALLS
I know what you must be thinking, "no eggs!?" When I first came up with this recipe, I was out of eggs, and it turned out just fine. These meatballs hold together very well due to the ground up onions and cheese, making them easy to handle in the pan. Garnish with basil and serve over zoodles, spaghetti squash, riced cauliflower, or enjoy as is.

- Combine Cheddar cheese, Parmesan cheese, onions, garlic, Italian seasoning, cayenne pepper, salt, and black pepper in a large mixing bowl and lightly mix. Add beef and turkey; mix by hand until well combined. Form mixture into 8 large meatballs.
- Heat 1 to 2 tablespoons butter in a large saute pan over medium heat. Add meatballs to the melted butter and cook, uncovered, turning occasionally until a crust forms, 10 to 15 minutes. Cover and cook on low heat, turning occasionally, for 10 to 15 minutes more. Transfer meatballs to a serving dish and cover.
- Add remaining butter to the pan and melt over low heat. Add spinach and stir until well wilted, about 5 minutes. Add cream and water; cook until reduced, 3 to 5 minutes. Add cooked meatballs and cook, 5 to 10 minutes, turning meatballs over every other minute.

AUTHENTIC ITALIAN MEATBALLS
Meatball recipes are often challenged by chefs who claim, "Mine are the best!" Even though my meatballs ARE the best, I will make no such claim. Try them for yourself! This meatball recipe was given to me by my father who got it from a little old lady from Italy that he knew. It's amazing that she gave up her recipe to him, but I sure am glad she did!

Steps:
- Mix all ingredients in a large bowl by hand.
- Use your bare hands for best results.
- Roll meatballs to about the size of a golf ball. (wet your hands to prevent the meat from sticking to them while rolling the meat balls).
- Drop raw meatballs into large (I use a stock pot) pot of sauce.

- Simmer for about 3 hours.
