JAMAICAN MISTAKE GREEN SALAD
My sister-in-law, Vicki, brought this salad to Christmas dinner one year. It was such a big hit, that we have served it at family get-togethers ever since.

Steps:
- 1. In a large bowl, combine first five ingredients.
- 2. When ready to serve, pour Jamaica Mistake salad dressing over lettuce mixture. Toss until greens are well coated with dressing. Serve immediately.
- 3. Johnny's salad dressings and much more can be purchased throughout the Tacoma, WA area or at www.johnnysfinefoods.com . I also use their seasoning salt on just about everything.

- Mix all together and top with cherry tomatoes. Let sit in fridge overnight.
JAMAICAN GARDEN SALAD
So simple, yet different. We just got back from Jamaica, and this was a salad we ate quite often. Most restaurants we went to served this as their "garden salad" and it was always served with thousand island dressing. We loved it so much, we made it as soon as we got back.

Steps:
- Place cabbage into bottom of serving bowl.
- Top with carrot.
- Next, the green pepper.
- Slide the cucumber slices down the side of the bowl, so that they are"standing" on the inside of the bowl, surrounding your salad, and you can see half of each slice sticking out.
- Put the tomato wedges on the top of the salad.
- Serve with thousand island dressing.
