JAMAICAN PEPPER STEAK
Today I want to share with you one of the recipes that my family always asks me to cook. Jamaican Pepper Steak, which is a quick and easy dish that we are going to prepare today.

- First thing I did was trim my tenderloin steak and with the fat I also cut small sections of the meat which I am using for my broth
- have ⅓ of my instant pot filled with hot water where I am adding the few pieces of meat. Remember this is just for favor, we are not eating this meat.
- Add 1 tbsp of dry oregano, 2-3 whole garlic cloves slightly mashed, and half red onion. cover the instant pot and press the broth baton. And that all. I am not adding any salt or any other seasoning bc the flavor will be already on the meat.
- Slice the beef into 3 inch strips 1/4 inch wide.
- We are going to season the steak and we are using mostly dry seasonings (paprika, parsley flakes, ground cumin, black pepper, Chef Merito steak, and meat seasoning, TexJoy steak seasoning, hot pepper flakes, 1 tbsp of garlic, and herbs, 1 tsp baking soda and 2 tbs of apple cider vinegar (for tenderness) and dry oregano leaves.
- Let's give a good massage to the meat in order to allow all the flavors to mix together and make the perfect steak seasoning.
- When done marinating the meat let it rest for 1 hour.
- While the meat is resting we are going to start our sofrito, and we will need 4 garlic cloves sliced, chopped, and minced ½ white onion and half red onion chopped.
- On medium heat place a large pan and the olive oil.
- Add onions and garlic and saute for 5 minutes. (always add onions first then garlic because you don't want burned garlic flavor in your steak)
- Remove the onion and garlic from the pan.
- Set the heat on high, when the oil is hot, add the steak (the original pepper steak recipe uses more oil but I am trying to make it as healthier as I can so I did not add more oil)
- Start stirring until the steak changes color from bright uncooked pinkish to brown.
- Once the meat is brown, start by adding 1 ripe tomato chopped in small cubes and stir just to mix the tomatoes with the steak. Next, we are returning the onions and garlic from our sofrito back to the pan.
- Then, add tomato sauce, soy sauce, stirring until all the ingredients are mixed together with the steak, and finish by adding 2 cups of our homemade beef broth.
- Cover the pan and let it simmer for 30 mins on medium heat, in 15 minutes.
- While the steak is cooking cut the peppers in long strips matching the length of the steak strips and add ½ red onion and a large carrot, chopped.
- Once the 30 minutes are done add the peppers, carrot, and onion to the steak. Letting it simmer on medium to high heat for 5 minutes.
- After 5 mins the last special touch, the green onions, and the pepper steak are ready for serving.

Hot and spicy flank steak served as an appetizer. Habaneros set this steak on fire. Ya Mon! Use Scotch Bonnets if you got 'em. I serve this as an appetizer as most people can't handle the heat through a whole meal.

- Slice the flank steak on a slant as thinly as poossible.
- Place each piece of steak between 2 sheets of plastic wrap and 1pound until 1/4 inch thick or about the thickness of a beer bottle cap.
- Make the hot pepper paste: In a small bowl, combine the remaining ingredients and mix well.
- Rub the steak rounds with about 2/3 of this paste and reserve the remainder.
- Grill the steak rounds over high heat for about 1-2 minutes per side, or until they are medium rare.
- Brush liberally with the remaining hot pepper paste.
- Fair warning: I really like hot stuff, and I find this to be awesome. If you don't like hot stuff, don't make this.
