CLASSIC CHERRY DELIGHT

This Classic Cherry Delight comes together in just minutes and is made of three simple layers. If you want a dessert that's not overly sweet yet delicious, this is it!

7 tablespoons unsalted butter
1 1/2 cups graham cracker crumbs (about 9 whole crackers)
3 tablespoons granulated sugar
8 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon pure vanilla extract
1 container cool whip, 8 ounces
1 can cherry pie filling, 21 ounces

Steps:

  • Add the butter to a medium bowl. Microwave for 30 seconds or until melted. Add the graham cracker crumbs and sugar and mix well to combine. Pat the crumb mixture firmly into the bottom of a sprayed 8 x 8 baking dish. Set aside.
  • Add the cream cheese to a large bowl. Mix with a mixer until the cream cheese of smooth and free of any lumps. Add the powdered sugar and vanilla and mix well. Add the cool whip and mix until the cool whip and cream cheese are combined, but don't overmix.
  • Spread the filling evenly over the graham cracker crust, using a spoon or offset spatula. Spoon the cherry pie filling over the top and carefully spread it evenly over the filling.
  • Refrigerate for at least 2 hours before serving. I like to leave it overnight.
  • Refrigerate leftovers.

SQUASHED CHERRY TOMATO AND SMASHED OLIVE BRUSCETTA

What you are just about to do makes complete sense in cooking. Tomatoes need salt, olives are preserved in salt, you've squeezed the juice out of the tomatoes, which in return draws the salt and the smoky flavour out of the olives. This makes the olives very edible and the tomatoes damn tasty. Rip in as much basil as you can afford and even a handful of rocket (arugula) if you have some. Lovely. P.S. If you have any leftovers, toss them in with some hot spaghetti.

2 handfuls cherry tomatoes
1 handful black olives
4 to 5 tablespoons extra-virgin olive oil
1 tablespoon dried oregano
A drizzle herb vinegar
1 dried chile
A handful fresh basil
Sea salt and freshly ground black pepper
1/2 ciabatta or other rustic bread, cut into thick slices
1/2 clove garlic
4 boccacini
Parmesan, for shaving

Steps:

  • This is probably the quickest salad or bruschetta I make, but no less tasty for that. Very few ingredients, simple flavors, complete sense. Try to make use of the wider range of cherry tomatoes available now: yellow, tige, and plum cherry tomatoes for instance. And, as I always say, it's much better, taste-wise, to buy olives with their stones still in than without. Trust me.
  • Simply squash your tomatoes into a bowl. I always have to put one hand over the tomatoes as I do this as juice and pips go everywhere (generally on me). You can be as rough with the tomatoes as you like, as the salad looks much better rough and rustic than perfect and pretty. Then, gently smash the olives on a board with a hard object, like a cup or a rolling-pin. Remove the stones, throw the olives in with the tomatoes, and toss together. Add a few glugs of oil, the oregano, a drizzle of vinegar, crumbled chile, and rip in the basil. Season, to taste, and that's your salad.
  • Griddle or toast the slices of bread and rub with the garlic clove, pile on the tomatoes, and rip the mozzarella and lay over the top drizzle with a little bit more oil and finish with shaves of Parmesan.

CHERRY SMASHED CANDY
2 2 pound bags of confectioners sugar
1 can(s) bordens eagle brand sweetened condensed milk
1 Tbsp amaretto liqueur
1 Tbsp maraschino cherry juice drained from the jar
2 jar(s) 10 oz. size maraschino cherries drained from the juice no stem
1 stick butter, room temperature
CANDY BARK OF YOUR CHOICE TO MELT AND DIP BALLS IN

Steps:

  • 1. In a large mixing bowl add the 2 bags of confectioners sugar then add in the condensed milk. Also add in the butter .
  • 2. I used a hand mixer but first gave it a good stir with a spoon to mix in the sugar before using the electric mixer so the sugar would not go all over the counter and me.
  • 3. Drain the cherry well then crush in a food processor or mini chopper, add to the mixture
  • 4. Add the liquerur and cherry juice then begin to mix well and make sure it is stiff. If it is not add some more sugar till it stiffs up enough to make a ball. Place the mixture in the refrigerator till hardend enough to work with.
  • 5. Pinch off some candy mixture and roll in the palm of your hand to make a ball. Place on pan and place back in the fridge ge till good and cold a couple of hours will be necessary to be able to dip in the hot chocolate
  • 6. In a candy melt machine I melted the bark and dipped the balls one at a time placed on parchment paper and put back in the fridge and left all night. Place in a airtight container and keep refrigerated till use of them.
