JALAPENO CRAB DIP

Steps:
- Preheat oven to 350°. In a large cast-iron or other ovenproof skillet, heat 1 tablespoon butter over medium-high heat. Add corn, salt and pepper; cook and stir until corn is golden brown. Remove from pan., In same skillet, heat remaining butter over medium-high heat. Add onion and red pepper; cook and stir until onion is tender. Add green onions, fresh jalapeno and garlic; cook 1-2 minutes longer. Remove from heat., In a large bowl, combine crab, pepper jack cheese, cheddar cheese, mayonnaise, pickled jalapenos, hot sauce and Worcestershire sauce; stir in corn and onion mixture. Transfer to same skillet or a greased 8-in. square baking dish; sprinkle with Parmesan cheese., Bake, uncovered, 30-35 minutes or until edges are golden brown. Serve with chips.

JUST LIKE, JACK ASTOR'S CRAB DIP - COPYCAT
I used to work at Jack Astor's and this dip was one of their best selling appetizers. This is great for parties and simple to make, and people won't think it wasn't simple! I'm making it for my Christmas party tomorrow, so I will try to have a picture of it.

Steps:
- In a small pan, saute onion and garlic.
- Next saute bell pepper, then mushrooms.
- Let cool.
- In a bowl soften cream cheese with a spoon.
- Add cooled vegetables, crab meat, and cheese.
- Store in container in fridge until ready to serve.
- SERVING INSTRUCTIONS: Place dip in a oven proof shallow bowl.
- Spread dip evenly in bowl and top with more shredded cheddar cheese.
- Warm slightly in microwave.
- Bake in oven at 350 degrees, until slightly bubbling and the top is starting to turn golden brown.
- Sprinkle with chopped parsley and parlsey sprig.
- Place bowl on a serving plate and surround with nacho chips and pita points.

- Directions Combine wine, butter, parsley, salt and onion in a Dutch oven; bring to a boil. Add shrimp and scallops, and cook 3 to 5 minutes. Drain, reserving 2/3 cup liquid. Melt butter in Dutch oven over low heat; add flour, stirring constantly. Gradually add half and half; cook over medium heat, stirring constantly until mixture is thickened and bubbly. Stir in Swiss cheese. Gradually stir in reserved liquid, lemon juice, and pepper; add shrimp mixture, crab and mushrooms. Spoon into a lightly greased 11 x 7 x 11 inch baking dish. Combine breadcrumbs and Parmesan cheese, and sprinkle over casserole. Bake an additional 5 minutes.
HOT CRAB AND JALAPENO DIP
Jalapeno pepper spices up this hot crab dip! Almonds add a little crunch to the creaminess. Artichokes and Parmesan cheese round out the flavor nicely.

- Preheat oven to 375 degrees F (190 degrees C).
- Heat the olive oil in a medium saucepan over medium heat. Stir in the red bell pepper. Cook 5 minutes, or until tender.
- In a medium bowl, mix together red bell pepper, artichoke hearts, mayonnaise, Parmesan cheese, green onions, Worcestershire sauce, jalapeno peppers, celery salt, crabmeat and lemon juice.
- Transfer the mixture to an 8x8 inch baking dish. Sprinkle with almonds. Bake in the preheated oven 30 minutes, or until bubbly and lightly browned.

- Preheat your oven's broiler.
- In a medium bowl, stir together mayonnaise, onion, cheddar, crabmeat, mustard, and garlic powder.
- Arrange bread slices on a cookie sheet. Place 1 tablespoon of the mixture on each slice. Sprinkle the bread slice liberally with lemon pepper spice (this is the key ingredient, so don't be shy with the spice!).
- Broil for less than two minutes.

Don't let the dill pickles keep you from making this! Our friend Janet always brought this to our Rose Bowl Parties and it's ALWAYS the first to go where ever we take it. Its best made the day before. Serve with Wheat Thins or Ruffled Potato Chips.
