Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Stir in butter. Drain carrots; drizzle with orange juice mixture; toss to coat.

- Cut up carrot and boil in water until it's almost soft.
- Discard most of the water (like, leaving only a table spoonful or two) and add a little sugar and butter. Continue boiling until the carrot is soft.
- They are just regular carrots, and you don't have to use a lot of sugar. Carrots are naturally sweet when boiled; a little butter makes the sweetness more noticeable.Serve hot with rice.

JAPANESE PICKLED CARROTS
Pickles are a big part of Japanese dining. Small dishes of vegetables like daikon, carrots, etc are usually part of a meal. My friend's mother makes this at home and keeps a long time! I use it as a side to my sandwich lunch!

Steps:
- Boil water in a medium pot and add about a heaped teaspoon of salt.
- In a large porcelain bowl, place the 3 ingredients, rice vinegar, mirin and sesame oil.
- In a separate bowl, grate carrots with a mandolin, about an inch in length.
- When the water starts bubbling, add in the grated carrots to blanch.
- Count to 10.
- Remove carrots and drain.
- Toss carrots into bowl with the 3 ingredients and mix well.
- Add sesame seeds and toss again.
- Let it cool to room temperature.
- Squeeze them into a few medium size jars with the remaining juice.
- Keep refrigerated.
- Stays crunchy and fresh for months!

- Arrange a rack in the middle of the oven and preheat the oven to 425 °F (220 ºC). Gather all the ingredients. If your carrots still have some moisture after washing, be sure to pat them as dry as possible; the drier the vegetable, the better it will roast.
- Peel the carrots (and if they are large, cut uniform slices so that they will roast evenly and be finished at the same time). Place the carrots in a single layer on a rimmed baking sheet lined with parchment paper (for easy clean-up). - Drizzle the olive oil and sprinkle salt and pepper. You want each carrot to have a light coating of oil (the oil keeps some moisture in for that interior tenderness). A good rule of thumb is about 2 Tbsp of oil per baking sheet (I'm using a half sheet).

- In a stainless steel -or other non-reactive pot- combine the vinegars, water, star anise, sugar, crushed red pepper flakes,ginger root, garlic and salt. Use a ladle to pour the hot brine over the carrot sticks, being sure to cover the carrot sticks with brine. Insert a sterile chopstick or knife into the jars to release air bubbles and add more brine if necessary to keep the carrots covered.
- Moisten a paper towel with vinegar and wipe the rims of the jars. Position a lid on top of each jar and screw on the rings to finger tip tightness. If you over-tighten, the jars will not process properly.
