Grilled mushrooms always taste good, but this easy recipe makes them taste even more fantastic. As the mother of two children, I love to cook entire meals on the grill. It's fun spending time outdoors with the kids. -Melanie Knoll, Marshalltown, Iowa

1/2 pound medium fresh mushrooms
1/4 cup butter, melted
1/2 teaspoon dill weed
1/2 teaspoon garlic salt
Grilled lemon wedges, optional

Steps:

  • Thread mushrooms on four metal or soaked wooden skewers. Combine butter, dill and garlic salt; brush over mushrooms., Grill, covered, over medium-high heat until tender, 10-15 minutes, basting and turning every 5 minutes. Serve with grilled lemon wedges if desired.

30 fresh shiitake caps
2/3 cup good-quality sake
4 tablespoons dark soy sauce
2 2 tablespoons mirin
2 2 tablespoons sugar

Steps:

  • Clean the mushroom caps and remove stems. In a saucepan, combine the sake, soy sauce, mirin, and sugar and bring to a boil. Reduce to a simmer and add the mushrooms. Simmer for 7 minutes. Remove mushrooms and use in a salad immediately, or cool and use later with grilled meats.

A Japanese-style salad which can be served as a side dish with any grilled or BBQd meat dish. I found this recipe in the October 2005 issue of the Australian magazine 'Super Food Ideas', and I have posted it for the 2005 Zaar World Tour. The "cooking times" below do not include the 3 hours refrigeration time.

100 g baby asian greens
1 cucumber, halved lengthways, sliced
1 red capsicum, deseeded, thinly sliced
1/2 cup reduced sodium soy sauce
1/2 cup mirin
1 tablespoon peanut oil
2 teaspoons sesame oil
4 garlic cloves, crushed
3 cm piece ginger, peeled, grated
600 g button mushrooms, trimmed

Steps:

  • Make marinated mushrooms: Place soy, mirin, peanut oil, sesame oil, garlic and ginger in a glass or ceramic bowl, and stir until well-combined. Add mushrooms and turn to coat. Cover and refrigerate for 3 hours.
  • Place Asian greens, cucumber, capsicum and marinated mushrooms in a large bowl. Toss to combine.
  • Serve as an accompaniment to lamb, beef or chicken.

12 large fresh shiitake mushrooms
3 tablespoons light soy sauce
3 tablespoons lemon juice
2 teaspoons mirin (see note)
2 teaspoons finely chopped scallions
1/4 teaspoon Japanese powdered chili mixture (hichimi togarashi) or more to taste

Steps:

  • Preheat charcoal or gas-fired grill.
  • Wipe mushrooms with damp cloth and place them, stem side down, on hot grill and cook 2 or 3 minutes. Turn and cook 2 or 3 minutes more.
  • Meanwhile, blend soy sauce, lemon juice, mirin, chopped scallions and chili mixture. Serve mushrooms immediately with sauce on side for dipping.

1/2 pound fresh shiitake mushrooms
1/4 cup olive oil
1 tablespoon each minced fresh thyme, sage, oregano and basil, combined
Salt and pepper to taste

Steps:

  • Remove and discard stems from mushroom caps. Score caps lightly with a sharp knife. Brush both sides with oil. Rub with herbs and sprinkle with salt and pepper. , Grill, cap side down, over medium heat 2-3 minutes on each side; or until juices form in the caps and mushrooms are tender. Serve hot or at room temperature.
