2 teaspoons vegetable oil
4 slices deli ham, chopped into small pieces
2 eggs
2 teaspoons chopped fresh chives, divided
¼ teaspoon salt
freshly ground black pepper to taste
¼ cup shredded Cheddar cheese

Steps:

  • Heat oil in a skillet over medium heat. Add ham and cook until browned and crispy, stirring frequently, about 7 minutes.
  • Beat eggs with 1 teaspoon chives, salt, and pepper in a small bowl and add to skillet, tilting skillet to distribute egg evenly on bottom of skillet. Cook until omelette has set at the edges. Sprinkle Cheddar cheese on top and fold omelette in half. Flip and cook until egg is entirely set and cheese inside has melted, 30 seconds to 1 minute. Slide onto a plate and sprinkle with remaining 1 teaspoon chives.

1 cup cooked white or brown rice
2 thin slices cooked ham, cubed
2 tablespoons ketchup
1 slice processed cheese food (such as Velveeta ®)
2 eggs
salt and pepper to taste
1 tablespoon ketchup
¼ teaspoon chopped fresh parsley

Steps:

  • Heat a skillet over medium heat, and coat with cooking spray. Add the cooked rice, 2 tablespoons ketchup, ham, and cheese, if using. Cook and stir until the ingredients are well combined and heated through, about 8 minutes. Scoop the mixture onto a serving bowl and shape into an oval.
  • In a bowl, beat eggs and salt and pepper. Heat a small skillet coated with cooking spray over medium heat. Add egg mixture; cook over medium heat. As eggs set, lift edges, letting uncooked portion flow underneath. Use a spatula to gently fold the eggs into a cocoon shape. When eggs are completely set, remove from the heat.
  • Place the omelet on top of the rice and run a knife length-wise through the top layer of the omelet. It should open like a butterfly and drape over the rice. Top with the final tablespoon of ketchup and a sprinkle of parsley.

The oozy, soft-set curds on the inside are revealed when you slice through this pillowy omelet, inspired by omurice, a Japanese-style dish that pairs an omelet with fried rice. Here, the fluffy omelet can be served with rice or your choice of cooked dishes: bacon and breakfast sausage, spaghetti carbonara or tater tots.

3 large eggs, beaten
1/4 teaspoon baking powder
Large pinch kosher salt
1 tablespoon unsalted butter
For serving: breakfast meat platter (cooked breakfast sausage and strips of bacon), fried rice, spaghetti carbonara or cooked tater tots

Steps:

  • Whisk the eggs, baking powder and salt in a medium bowl until the yolks and whites are completely combined and the beaten eggs are frothy, about 2 minutes.
  • Melt the butter in a small nonstick skillet over medium-low heat. Once the butter begins to foam, add the beaten eggs and immediately begin stirring with long chopsticks. Move the skillet on and off the heat in 5-second intervals to control the setting of the eggs. If your omelet is setting too quickly, reduce the heat to low. Push the edges of the omelet toward the center of the skillet as they begin to set, about 2 minutes. Large curds will form in the middle of the skillet. At this point, stop stirring with the chopsticks and swirl the skillet until the liquid is nearly completely set, about 3 minutes more. Remove the skillet from the heat. Use the chopsticks to gently loosen the edges of the omelet. Fold the omelet into a half-moon shape using both chopsticks. Return the skillet to low heat, tilting it at a 45-degree angle to allow any loose egg mixture to run to the edges and soft set, about 1 minute. Remove the skillet from the heat.
  • Quickly roll the omelet away from you in the skillet until a log forms. Tilt the skillet and push the omelet out of it, landing it seam-side down over your cooked dish of choice. Make a lengthwise slice in the top of the omelet to reveal the soft-set curds.

Best Omelet Ever With Ham Jalapenos Scallions and Cheddar Cheese image

If you had asked me a month ago I would say "I don't like omelets". But my husband and I came up with this one and it is sooooooo good. You won't be disappointed, I guarantee it. The secret to this being so amazing is to not over-cooking the omelet using the method I outline below. It takes practice, but I make the best omelets now.

Number Of Ingredients 6

1/3 jalapeno, chopped
1/3 bunch scallion, chopped
4 -6 slices ham
1/2 cup sharp cheddar cheese, grated
1/4 teaspoon black pepper
4 -6 eggs

Steps:

  • In small pan, saute the jalapeno, scallions and ham until jalapenos are soft and ham is slightly browned using non-stick spray, stirring frequently.
  • Remove from pan & clean pan with paper towel.
  • Whisk eggs with pepper.
  • Spray pan with non-stick spray and pour in half the eggs when pan is fully heated to med-high heat.
  • With a spatula, scrape & lift the cooked egg at the bottom of the pan towards the middle allowing the uncooked egg to get underneath to the hot part of the pan - this may look messy, but it will ensure that your omelet is fluffy.
  • Once there is no more runny egg, spread out the egg a little bit in the pan as much as possible and add half the cheese on top evenly.
  • Then add half the ham mixture in a line across the omelet.
  • Fold omelet in half and allow to cook on one side for 20sec.
  • Flip over carefully and allow that side to cook for another 20sec.
  • Repeat directions on cooking omelet for the second one making sure to start with a clean pan.
  • Can also be made with egg whites only using twice as many eggs.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat eggs in a large bowl, making sure that they are mixed very well and have a 'frothy' top. Add the milk, salt and pepper. Mix well. Stir in ham, then add cheese pieces and stir well. 4 tablespoons prepared dashi stock
1 tablespoon white sugar
1 teaspoon mirin (Japanese sweet wine)
½ teaspoon soy sauce
½ tablespoon vegetable oil

Steps:

  • Whisk eggs, dashi stock, sugar, mirin, and soy sauce together in a bowl.
  • Heat 1/3 of the oil in a large nonstick skillet over medium-high heat. Add about 1/3 of the egg mixture and quickly swirl the pan to evenly cover the bottom. Start rolling up the omelette from one side to the other as soon as it is set.
  • Keep the roll to one side, then add another 1/3 of the oil to the skillet and another 1/3 of the egg. Swirl the pan, ensuring the entire bottom is covered, including around and underneath the first roll. Cook until set. Roll up from the side containing the first roll, so that is now at the center.
  • Repeat the process with the remaining oil and egg. Transfer rolled omelette to a bamboo rolling mat. Roll up tightly and allow to cool for a few minutes.
  • Unwrap the omelette and slice into 6 pieces. Serve warm or cold.
