GREEN BEANS WITH CHEESE SAUCE



Green Beans with Cheese Sauce image

1 pound green beans, trimmed
Pinch salt
4 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 1/2 cups milk
1/4 teaspoon garlic powder
1/4 teaspoon dry mustard
Pinch ground black pepper
Pinch cayenne
1 cup shredded Cheddar cheese
4 ounces cream cheese, softened

Steps:

  • Bring 1/4 cup water just to a boil in a large saute pan over medium heat. Add the green beans and salt, cover and cook for 2 minutes. Uncover, raise the heat to high and cook until the water has evaporated, about 1 minute. Stir in 1 tablespoon of the butter and continue cooking until the beans are crisp-tender, 1 to 2 minutes. Remove from the heat.
  • Melt the remaining 3 tablespoons butter in a medium saucepan over medium heat. Add the flour and cook, stirring, until golden, about 2 minutes. Whisk in the milk, garlic powder, dry mustard, black pepper and cayenne and cook, whisking continuously, until thickened, about 2 minutes. Stir in the cheddar cheese and cream cheese and heat until melted. Pour the cheese sauce over the green beans, or serve on the side.

4 whole boneless chicken breasts (8 breast halves)
8 slices jarlsberg cheese
1 (10 1/2 ounce) can cream of mushroom soup
1/2 cup white wine
1/8 teaspoon black pepper
1/4 teaspoon garlic powder
1 1/2 cups breadcrumbs
1/4 cup butter, melted
1/2 lb asparagus, washed and trimmed (optional)

Steps:

  • Place chicken in baking dish.
  • Layer cheese on top.
  • Add asparagus, if desired.
  • Mix the soup, wine, garlic, and pepper.
  • Spread over chicken and cheese.
  • Top with bread crumbs and lastly drizzle with melted butter.
  • Bake at 350 degrees for 35 to 50 minutes (until chicken is done through).

1 lb rotelle pasta (or other corkscrew type pasta)
2 cups shredded sharp cheddar cheese (8 ounces)
1 cup shredded mozzarella cheese (4 ounces)
1/2 cup shredded jarlsberg cheese (2 ounces)
1/2 cup grated parmesan cheese
1/4 cup unsalted butter (1/2 stick)
1/4 cup all-purpose flour
4 cups milk
1 teaspoon salt
1/4 teaspoon ground nutmeg
1/8 teaspoon ground red pepper (cayenne)
2 large ripe tomatoes, cored and thinly sliced

Steps:

  • Heat oven to 350 degrees Fahrenheit. Coat bottom and sides of a 13x9x2-inch glass baking dish with nonstick vegetable-oil cooking spray.
  • Cook rotelli pasta in a large pot of lightly salted boiling water following the package directions. Drain the pasta well.
  • Meanwhile, mix together the shredded cheddar, mozzarella, and Jarlsberg cheeses and the grated Parmesan cheese in a large bowl.
  • Over medium heat, melt the butter in the pot in which the pasta was cooked. Whisk the flour into the melted butter until well blended; continue to cook, whisking constantly, for 2 minutes to eliminate flour taste. Whisk in 1 cup of the milk until well blended. Gradually whisk in the remaining milk, 1 cup at a time, whisking after each addition until well blended. Stir in the salt, nutmeg, and ground red pepper. Bring the mixture to simmering; cook, whisking constantly, until thickened and smooth, about 2 minutes. Remove saucepan from heat. Stir in 2 cups of the cheese mixture, whisking until the sauce is very smooth.
  • Add the cooked pasta to the cheese sauce in the pot; toss together until well blended.
  • Sprinkle 1/2 cup of the remaining cheese mixture evenly over the bottom of the prepared baking dish. Spoon half of the pasta mixture into the baking dish, spreading evenly. Sprinkle 1 cup of the cheese mixture over the pasta. Spoon the remaining pasta mixture over the cheese mixture. Sprinkle the remaining cheese mixture over the top of pasta. Arrange sliced tomatoes over top of casserole.
  • Bake the macaroni and cheese in the preheated 350 degree oven for 45 minutes or until the top of the macaroni is lightly golden. Let dish stand for at least 10 minutes before serving.

1 lb fresh tender asparagus
2 tablespoons butter
2 tablespoons flour
1 cup warm milk
1 cup shredded cheddar cheese
1/2 teaspoon salt (or to taste)

Steps:

  • In a large micro-wave safe glass bowl, heat butter about 50 seconds on high, or until melted.
  • Whisk in the 2 tablespoons of flour and 1 cup of heated milk.
  • Add 1 cup shredded cheddar cheese.
  • Place in microwave and cook on high for 2 minutes, pausing to whisk thoroughly every 30 seconds.
  • Season to taste with salt and whisk again.
  • Set cheese sauce aside.
  • Bend asparagus until they break at a natural point; discard ends.
  • Place asparagus spears in a microwavable glass covered dish, with half the spears going one way, and half the spears going the other way.
  • Add 1/4 cup water to the dish.
  • Cook, covered, for 6-7 minutes on high, pausing to turn dish every 2 minutes and checking asparagus for doneness.
  • Reheat sauce for 1 minute on high before adding to asparagus, if necessary (you may not need all the sauce).

Don't remember where I found it, but it's a staple at Thanksgiving, Christmas, and throughout the year. *The recipe calls for green beans, but I have only made it with Asparagus.

2 (15 ounce) cans asparagus spears or 20 ounces long green beans
1/2 lb bacon
2 cloves garlic or 1/4 teaspoon garlic powder
1/3 cup light brown sugar, firmly packed
1/3 cup butter or 1/3 cup margarine

Steps:

  • Gently wrap approximately 5 beans or asparagus stalks with 1/2 slice bacon and secure with toothpick. Continue until all beans/stalks are wrapped.
  • Place in casserole dish.
  • Simmer garlic, brown sugar and butter for 5 minutes and pour over beans/stalks.
  • Bake at 375°F for 25 minutes or 350°F for 35 minutes (or until tender& hot).

2 cups fresh green beans, snapped into 1-inch secions
2 tablespoons minced garlic
1 teaspoon kosher salt

3 tablespoons olive oil
1 teaspoon balsamic vinegar (optional)

Steps:

Jarlsberg Cheese Sauce over Green Beans or Asparagus Recipe image

Number Of Ingredients 10

2 lbs. fresh green beans or 2 lbs fresh asparagus, cooked until just tender, drained and set aside
2 tbls. butter
2 tbls. flour
1 tsp grated onion
1 cup sour cream
Pinch of salt
Generous pinch of black pepper
Pinch of sugar
2 cups grated Jarlsberg cheese
1/3 cup sliced almonds

Steps:

  • Preheat oven to 350 degrees. In medium saucepan, melt butter and stir in flour. When flour mixtue is smooth add the grated onion and saute for 2 minutes. Add sour cream, salt, pepper, sugar and grated cheese. Stir until well mixed. Cheese does not have to be completely melted. Remove from the heat. Spray 2 quart baking dish with nonstick coating. Place beans or asparagus in dish. Spoon sauce over the vegetables and sprinkle with almonds (You man have more sauce than you need, but leftovers can be refregerated and used for another meal.) Bake in a preheated 350 degree oven for about 20 minutes or until heated through and cheese and nuts or slightly browned.
