A recipe a friend of my mother's made up. This is fabulous as a BBQ sauce or on anything, really. We LOVE it on corn dogs. If you are using this as anything except for a grill/BBQ, cut the oil in half or third (or more - my suggestion is to mix the other ingredients and then slowly... VERY SLOWLY... add the oil as it simmers until it "looks right")

4 tablespoons white vinegar
1 cup lemon juice
1 pint vegetable oil
8 tablespoons yellow mustard
6 tablespoons Tabasco sauce (optional)
8 tablespoons Worcestershire sauce
1 tablespoon garlic powder
1/2 teaspoon black pepper
1 tablespoon Accent seasoning (MSG)
1 tablespoon onion powder

Steps:

  • Mix all together.
  • Bring to light boil in sauce pan.
  • Let simmer for about 15 minutes.
  • If you want it thicker, add a few tsp corn starch.

This versatile sweet-and-slightly-spicy sauce can be ordered on salmon, baby back ribs, steak, chicken, pork chops...even on chicken wings.

1 head garlic
1 tablespoon olive oil
1 ⅓ cups dark brown sugar
1 cup pineapple juice
⅔ cup water
¼ cup teriyaki sauce
1 tablespoon soy sauce
3 tablespoons lemon juice
3 tablespoons minced white onion
1 tablespoon bourbon whiskey
1 tablespoon crushed pineapple
¼ teaspoon cayenne pepper

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Cut about 1/2-inch from the top of the garlic head. Trim the roots so the garlic sits flat. Remove some of the outer layers of papery skin from the garlic, leaving enough so that the cloves stay together. Put garlic into a small casserole dish or baking dish, drizzle olive oil over it, and cover with a lid or aluminum foil.
  • Roast garlic in preheated oven until the cloves are soft, about 1 hour.
  • Stir brown sugar, pineapple juice, water, teriyaki sauce, and soy sauce together in a saucepan and bring to a boil; reduce heat to low and keep at simmer.
  • Squeeze sides of the garlic until the pasty roasted garlic emerges. Measure 2 teaspoons roasted garlic into the saucepan and incorporate into the sauce with a whisk. Reserve remaining roasted garlic for another use.
  • Stir lemon juice, white onion, bourbon whiskey, pineapple, and cayenne pepper into the sauce; bring to a simmer and cook until the volume of the liquid reduces by half and is thick and syrup-like, 40 to 50 minutes.

1/2 cup all-purpose flour
1/4 teaspoon ground cinnamon
1 lb boneless skinless chicken breast
1 tablespoon olive oil
2 tablespoons butter
1 small onion, finely sliced
1 tablespoon unsweetened cocoa powder
1 tablespoon brown sugar
1 tablespoon tomato paste
1/3 cup red wine
1 cup chicken stock
1 tablespoon sour cream
1/3 cup raisins
sliced almonds, toasted, to garnish

Steps:

  • Preheat oven to 350 degrees. Combine flour and cinnamon in a medium bowl. Toss chicken breasts lightly in seasoned flour. Shake of excess. Reserve 1 teaspoon of flour mixture.
  • Heat oil and butter in large skillet. Cook chicken over medium-high heat until golden, turning once. Remove from pan; drain on paper towels.
  • Add onion, cocoa powder, sugar and tomato paste to skillet and stir over low heat. Add red wine and stock gradually, stirring over low heat until smooth.
  • Blend sour cream and reserved flour in small bowl until smooth. Add to skillet with raisins; stir over medium heat 2 minutes or until thickened slightly.
  • Place chicken in an ovenproof baking dish. Pour sauce over chicken. Cover and bake for 15 minutes or until chicken is tender and no longer pink. Sprinkle with toasted sliced almonds before serving.

1/2 cup sour cream
1/2 cup milk
1 1/2 cups cooked meat (see directions)
1 cup vegetables (see directions)
3 cups cooked rice
1 (10 ounce) can sliced mushrooms, drained
breadcrumbs (see directions) or cheese, topping (see directions)

Steps:

  • Mix soup, sour cream and milk together in a large casserole dish.
  • Add remaining ingredients.
  • Cover with Topping.
  • Bake uncovered at 350F for 1 hour.
  • Soup - try Cream of Cheddar; Cream of Mushroom, or any other creamed soup you have on hand.
  • Meat - Browned hamburger, or cubed cooken pork, chicken, turkey, ham or beef.
  • Vegetables - Any combination of cooked or frozen vegetables.
  • Topping: Brown 3/4 cup soft bread crumbs with 2 tablespoons butter; or 1/2 cup crushed crackers with 1/4 cup grated parmesan, or 1 cup grated cheese.

JACK DANIELS DIPPING SAUCE

This is a very close reproduction of TGI Friday's Jack Daniels Sauce. When I find a restaurant food item that I particularly like, I try to reproduce it the best that I can, so I can enjoy it at home. A lot of my recipes that I post are of those items. When I make this sauce I make several jars and hot water can them so I can have some at hand. My grand kids love this sauce on hot wings ( I bake the wings and have several types of sauces for them to choose from). This sauce takes some preparation but is well worth it.

Number Of Ingredients 11

3 heads garlic
1 tablespoon olive oil
1 cup pineapple juice
1/4 cup teriyaki sauce
1 tablespoon soy sauce
1 1/3 cups dark brown sugar
3 tablespoons lemon juice
3 tablespoons onions (finely chopped)
1 tablespoon Jack Daniels Whiskey (or suit to taste)
3 tablespoons crushed pineapple
1/4 teaspoon cayenne pepper

Steps:

  • Cut about 1/2 inch off tops of garlic. Cut the roots so that the garlic will sit flat. Remove the papery skin from the garlic, but leave enough so that the cloves stay together. Put garlic into a small casserole dish, drizzle olive oil over it and cover with lid or foil. Bake in preheated 325 degree oven for 1 hour. Remove garlic and let cool until you can handle it.
  • Combine pineapple juice, teriyaki sauce, soy sauce and brown sugar in a medium saucepan overr medium-high heat. Stir occasionally until mixtures boils, then reduce heat until mixture is just simmering.
  • Squeeze the sides of the garlic until the pasty roasted garlic is squeezed out. Discard remaining skin. Add this to the simmering mixture and whisk to combine.
  • Add remaining ingredients to saucepan and stir. ( I like to add just a touch more J Daniels for my taste).
  • Let mixture simmer for 25-30 minutes or until sauce has been reduced by about 1/3 and is thick and syrupy. Make sure it doesn't boil over.
  • Serve warm with ribs, chicken or shrimp.
