Steps:
- Stir together oil, oregano, garlic, spices, and 1 teaspoon salt in a bowl, then toss with beef. Marinate, chilled, at least 2 hours.
- Prepare grill for direct-heat cooking over medium-hot charcoal (high heat for gas); see Grilling Procedure . Thread about 4 pieces of beef onto each skewer, leaving small spaces between pieces, then transfer to a tray.
- Oil grill rack, then grill beef, covered only if using a gas grill, turning, until browned but still pink inside, 4 to 5 minutes.

- In a large bowl, mix together the barbeque sauce, steak sauce, beer, bourbon whiskey, Worcestershire sauce, garlic, seasoned salt, black pepper, dried onion, basil, oregano, habanero hot sauce, curry powder, red pepper flakes, and brown sugar.
- Cover the bottom of a 9x13 inch baking dish with approximately 1/2 the marinade. Place desired meat in the dish, and cover with remaining mixture. Cover, and marinate in the refrigerator at least 6 hours before grilling as desired.

- For the marinade: Combine the ketchup, sugar, vinegar, Worcestershire, cumin, paprika, garlic, 1/2 teaspoon salt and a few turns of pepper in a large resealable plastic bag. Add 4 boneless skinless chicken breasts or 8 boneless skinless thighs (about 1 1/2 pounds), squeeze out the air, seal tightly and massage gently to coat the chicken with marinade. Refrigerate for 2 hours or freeze up to 1 month; defrost in the refrigerator overnight before cooking.
- To cook: Remove the chicken from the bag and grill over indirect heat, covered, until cooked through, lightly charred and an instant-read thermometer registers 165 degrees F, 20 to 25 minutes.
MARINATED CUBE STEAKS
Steps:
- Mix soy sauce, garlic and onion in a resalable bag. Add steaks and coat.
- Let sit in refrigerator for 30 minutes to an hour (the longer they marinate the bolder the flavor).
- Drain and discard marinade. Broil for 5 minutes each side or until desired doneness.

- Roast coriander and cumin and ground afterwards.
- Mince chilli (incl. seeds).
- Mix all ingredients (except garlic cloves) well.
- If you marinate your meet longer than 8 hours add the garlic 4 - 8 hours before you barbecue.
- Cover your meet (cubes of pork, lamb or beef) for 4 - 48 hours, the longer the better.
- Barbecue the cubes until done.
- Enjoy!
