Russian Fudge image

Russian Fudge is Kiwi classic and one I made with my dad in a memorable time in the kitchen so is very much a great treat to make with kids for this underrated, melt-in-your-mouth fudge which couldn't be easier to make.

Number Of Ingredients 7

700 grams / 3 1/2 cups superfine/caster sugar
125 grams / 4.4 ounces butter, cubed
3 tablespoons golden syrup
125 milliliters / 1/2 cup milk
Pinch of salt
200 milliliters sweetened condensed milk
2 teaspoons vanilla extract

Steps:

  • Prepare a tin with greaseproof paper and set aside.
  • Place the sugar, butter, golden syrup, milk, salt and sweetened condensed milk into a saucepan over medium heat, stirring until the sugar has dissolved.
  • Allow to simmer for approximately 13 minutes or until it has reached the soft ball stage.
  • Remove from the heat, stir in the vanilla extract and allow to sit for 5 minutes.
  • Beat on medium until the fudge has lost its gloss and is creamy and lighter, approximately 10 minutes with a hand beater.
  • Pour into the prepared tin and allow to set for at least 1 hour or overnight.
  • Slice into cubes and serve.

8 oz cream cheese
4 cup sifted powdered sugar
1/2 tsp vanilla extract
1/4 cup plus 2 tsp Kahlua
12 oz white chocolate chips

Steps:

  • Line 8″ square pan with parchment paper, leaving paper hanging over the sides. This will allow you to grab the paper and remove the fudge from the pan for easy cutting; set aside. Cream powdered sugar, cream cheese, Kahlua and vanilla in mixing bowl. Melt white chocolate chips in microwave in 30 sec intervals, stirring in-between. Stir melted chocolate into cream cheese mixture and pour into pan and allow to cool. Drag fork over top of fudge to add texture, if desired and refrigerate overnight. Remove fudge from pan, place on cutting board, cut into squares and serve.

3 cups sugar
1/2 cup milk
1/2 cup sweetened condensed milk
125 g butter
1/8 teaspoon salt
1 tablespoon golden syrup

Steps:

  • Put sugar and milk into a saucepan.
  • Heat gently, sitrring constantly until sugar dissolves.
  • Add condensed milk, butter, salt and golden syrup. Stir until butter has melted.
  • Bring to the boil and continue boiling until the soft ball stage, stirring occasionally to prevent burning. (Drop a little bit of the mixture to a cup of cold water, if the mixture forms a slight ball then is it done).
  • Remove from heat. Cool slightly.
  • Beat until thick.
  • Pour into buttered tin.
  • Mark into squares. Cut when cold.

3 1/2 cups sugar
125 g butter
3 tablespoons golden syrup
1/2 cup milk
1/2 teaspoon salt
200 g sweetened condensed milk (half a normal tin)
2 teaspoons vanilla essence

Steps:

  • Place all the ingredients except the vanilla, into a medium-heavy saucepan.
  • Warm over a gentle heat until the sugar has dissolved.
  • Bring to a gentle boil and cook for about 15 - 20 minutes stirring occasionally, until it reaches the soft ball stage (120°C).
  • Remove from the heat and add the vanilla.
  • Beat (I use an electric mixer) until the fudge is creamy and thick and has lost its gloss for about 4 minutes.
  • Pour into a greased 20 cm cake pan.
  • Allow to cold and harden.
  • Enjoy!

  • Russian Fudge. There aren’t too many steps for this five-ingredient fudge. You’ll need a large microwave-safe bowl and some oven-mitts close by. Mix the sugar, butter, golden syrup, and condensed milk and microwave for two minutes.
  • Kartoshka. Kartoshka are essentially Russian cake pops. Made using cookie crumbs and condensed milk, they’re so simple yet so delicious. This recipe also uses butter, cocoa, and a little cognac, along with some chopped nuts for added flavor.
  • Russian Apple Cake. You might think that five ingredients aren’t enough to make a wonderfully moist and flavorful cake. This recipe proves us all wrong.
  • Russian Tea Cakes. In the U.K., tea cakes are soft sweet buns, often spiced and dotted with dried fruit. In Russia, they’re baked shortbread balls that get rolled in powdered sugar.

  • Waffle Cake. If you’ve never seen a Russian palace, they’re over-the-top, colorful, and full of bling. In a cold climate like they have, it’s no wonder they like to add color wherever they can.
