Jenn's Out Of This World Spaghetti and Meatballs image

This authentic spaghetti and meatballs recipe is made with fresh oregano and parsley. Because the meatballs are cooked in the sauce, they are tender and savory.

3 tablespoons olive oil
¾ cup chopped onion
4 cloves garlic, minced
2 (16 ounce) cans crushed tomatoes
3 (6 ounce) cans tomato paste
1 cup water
½ cup sugar
¼ cup chopped fresh oregano, divided
1 dried bay leaf
salt and pepper to taste
1 pound ground round
½ cup Italian seasoned bread crumbs
¼ cup chopped fresh parsley
2 eggs, lightly beaten
½ cup grated Parmesan cheese
1 (16 ounce) package uncooked spaghetti

Steps:

  • Heat the olive oil in a large saucepan over medium heat, and cook the onion until lightly brown. Mix in 2 cloves garlic, and cook 1 minute. Stir in crushed tomatoes, tomato paste, water, sugar, 1/2 the oregano, and bay leaf. Season with salt and pepper. Bring to a boil, reduce heat to low, and simmer while preparing meatballs.
  • In a bowl, mix the ground round, bread crumbs, remaining oregano, remaining garlic, parsley, eggs, and cheese. Season with salt and pepper. Roll into 1 inch balls, and drop into the sauce. Cook 40 minutes in the sauce, or until internal temperature of meatballs reaches a minimum of 160 degrees F (72 degrees C).
  • Bring a large pot of lightly salted water to a boil, and stir in the spaghetti. Cook 8 to 10 minutes, until al dente, and drain. Serve the meatballs and sauce over the cooked spaghetti.

I love this "hot mess." It's something somewhat healthy that I make once a week and keep it on hand to eat for lunches (and it makes a great side dish!). You can throw in anything that you want and feel free to switch it up. Add meat or serve it without for a great vegetarian option. My SO also calls it my "slop" and my "garbage casserole." I don't care because it tastes so good! And remember - all ingredients are optional!

Number Of Ingredients 10

1 bag success 10 minute boil-in-bag brown rice
1 medium chicken breast, cut into small pieces (or any leftover meat that you might have in the fridge)
1 tablespoon canola oil
garlic powder, to taste
seasoning salt, to taste
1 (4 ounce) can mushroom stems and pieces, drained
2 cups low-sodium spaghetti sauce (any flavor)
1 (15 ounce) can golden corn kernels, drained
1 (15 ounce) can kidney beans, rinsed and drained
1 1/2 cups fat-free shredded cheddar cheese (Kraft Naturals is great)

Steps:

  • Cook the rice according to package directions.
  • While the rice is cooking, heat the canola oil over Med/High heat.
  • Add the chicken and sprinkle with garlic powder and seasoned salt, to taste. Saute until no longer pink.
  • Add mushrooms and saute for another minute or two. Remove from heat and drain.
  • In a large bowl, mix rice, chicken and mushrooms, spaghetti sauce, corn, kidney beans and ONLY 1 c of the cheddar cheese. Mix well.
  • Transfer the concoction to a casserole dish and sprinkle remaining cup of cheese on top.
  • Bake at 350 for 20 minutes or until heated through.
  • Note: I usually switch the ingredients up every time I make it but I always use things that are on the "healthy" side so I have something quick to just throw in the microwave at lunch time. It's also a cost effective alternative to lunch meats and microwavable frozen lunches. This recipe is just an idea for you to use to create a healthy meal for yourself.

1 1/2 cups mayonnaise
2 tablespoons granulated garlic
1/3 teaspoon cayenne pepper
One 2 3/4-ounce jar diced pimentos
Kosher salt and freshly ground black pepper
8 cups Cheddar, grated
3/4 cup mayonnaise
1/4 cup sugar
3 tablespoons vinegar
1 teaspoon celery salt
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 large head cabbage, grated in a food processor
1 all-beef weenie
1 hot dog bun, steamed
2 tablespoons hot relish, such as Tennessee Chow-Chow Relish

Steps:

  • For the pimento cheese: Mix together the mayonnaise, granulated garlic, cayenne, pimentos and sprinkle of salt and black pepper in a large bowl until well blended. Add the Cheddar and mix thoroughly. Refrigerate for several hours or overnight for the best flavor.
  • For the slaw: Whisk together the mayonnaise, sugar, vinegar, celery salt, salt and black pepper in a large bowl until smooth. Add the cabbage and mix well. Refrigerate overnight. Preheat the grill.
  • Grill the weenie. Place the weenie in the bun and top with 2 tablespoons of the pimento cheese, 2 tablespoons of the slaw and the relish.

1 onion, diced
2 -3 stalks celery, chopped
1 1/2 lbs grams turkey
1 tablespoon grams cumin
1 teaspoon caraway seed
1/2 teaspoon celery seed
1 teaspoon salt
1/2 teaspoon pepper
1 head green cabbage, cored and sliced thinly
3 tablespoons white wine vinegar

Steps:

  • Heat oil in large skillet over medium high heat.
  • Add onion, celery. Stir a bit.
  • Add cumin, caraway, celery seed. Stir till fragrant.
  • Add ground turkey. Brown thoroughly, breaking up clumps with a wooden spoon.
  • Add salt and pepper.
  • Remove from heat.
  • Put 1/2 of cabbage in crock pot. Sprinkle with 1/2 of vinegar.
  • Transfer meat and onion mixture to crock pot.
  • Top with remaining cabbage; sprinkle with remaining vinegar.
  • Cook on high for 2 hours. Turn heat to low and cook for 3 more hours.
  • Serve with potatoes.

Classic jambalaya mixed with some pasta and turned into a casserole. I made this recipe on my own, it's a family favorite. Cook the Andouille ahead of making the Jambalaya mix. Cook your pasta before making the Jambalaya Mix as well.

1 (8 ounce) box zatarain's jambalaya mix
1 lb andouille sausage, cooked & sliced
8 ounces orecchiette or 8 ounces other shell pasta, cooked
1 lb sharp cheddar cheese, shredded and divided
cajun seasoning

Steps:

  • Cook Andouille sausage, slice it to about 1/4" thickness.
  • Cook pasta, and drain.
  • Make Jambalaya mix according to instructions on their box adding the Andouille when it says to.
  • While the Jambalaya mix is cooking add as much or as little cajun seasoning as you please.
  • Preheat oven to 350 degrees.
  • When the Jambalaya mix is done take a big bowl and stir togethether the pasta and the Jambalaya mix.
  • Take 8 oz. of the cheddar cheese and add it to the mix stirring well.
  • Optional: Add more cajun seasoning if you choose to.
  • Spoon mixture into lightly sprayed casserole dish, making it level once in the casserole.
  • Take the remainder of the cheese and sprinkle over the top.
  • Put in preheated oven for 30 minutes uncovered.
  • After cooking, remove and let cool for 5-10 minutes.

lb 1 to 1 1/2 lean ground beef
1 packet taco seasoning packet
1/2 bag Tostitos Rounds or any corn chips
1 small jar salsa
1 can refried beans
1 small container sour cream
2-3 cups shredded Mexican style cheese
2 Tablespoons chopped little green onions
Lettuce (optional)

Steps:

  • Preheat oven to 350 degrees F. Brown ground beef. Drain grease and return to stove. Stir in taco seasoning packet and salsa and let simmer on low for 5 minutes.
  • Line bottom of a 9x12" baking dish with chips. Spread ground beef and salsa mixture into baking dish evenly. Next spread in the refried beans evenly. Place the sour cream on top of the beans in the same manner. Sprinkle the shredded cheese over the top of the dish until it is completely covered. Lastly sprinkle the green onions onto the cheese. (If you wish you can place more chips all the way around the outside edge of the dish).
  • Bake for 20 minutes.

1 package (26 ounces) frozen shredded hash brown potatoes
1/4 cup vegetable oil
1 large green pepper, chopped
1 large onion, chopped
2 garlic cloves, minced
2 cans (12 ounces each) SPAM or 3 cups cubed fully cooked ham
6 large eggs, lightly beaten
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups shredded cheddar cheese

Steps:

  • In a large skillet, fry potatoes in oil for 10 minutes. Add green pepper, onion and garlic; continue to cook for 25 minutes or until potatoes are browned and vegetables are tender. Stir in luncheon meat; heat through. Cover and remove from the heat. In another greased skillet, combine eggs. salt and pepper. Cook and stir gently until eggs are set. Stir into potato mixture. Top with cheese; cover for 3-5 minutes or until cheese is melted.
