Jen's Broccoli Salad with Bacon image

A combined recipe of broccoli and seven-layer salad, this is the yummiest and best way to eat broccoli! There are so many ingredients you can add to this salad to make it your own personal, signature salad, but this is mine. Enjoy!

3 pounds broccoli, cut into florets
1 pound cooked bacon, crumbled
½ red onion, diced
½ cup baby Roma tomatoes, quartered
1 (8 ounce) package shredded sharp Cheddar cheese
¾ cup mayonnaise
⅔ cup grated Parmesan cheese
½ cup sour cream
2 tablespoons white sugar

Steps:

  • Bring a large pot of water to a boil. Put broccoli florets into water just long enough to turn bright green, about 10 seconds. Remove and place immediately into a bowl of ice water. Let cool, about 5 minutes; drain.
  • Combine broccoli, bacon, red onion, tomatoes, and Cheddar cheese in a bowl.
  • Combine mayonnaise, Parmesan cheese, sour cream, and sugar in a separate bowl. Mix until all ingredients are combined and smooth. Add to broccoli mixture and toss gently. Cover and refrigerate overnight, 8 hours to overnight.

6 ounces dry penne pasta
2 skinless, boneless chicken breast halves
1 ½ cups fresh broccoli florets
3 green onions, sliced
2 tablespoons canola oil
lemon pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne pasta and cook for 8 to 10 minutes, add broccoli a few minutes before pasta is done; drain.
  • Cook the chicken in a pan, seasoning with lemon pepper as it cooks. When the chicken is no longer pink inside, cut into small pieces. Combine chicken to pasta-broccoli mixture. Stir in oil and sliced green onion and add lemon pepper to taste.

2 cups broccoli florets
1/4 cup finely chopped celery
1 large apple, chopped
1/2 cup spring onion tops
1/2 cup golden raisin
1/4 cup pomegranate-flavored craisins
1/4 cup cherry-flavored craisins
1/2 cup red seedless grapes
1/2 cup shredded cheddar cheese
1/4 cup slivered almonds
1/4 cup chopped walnuts
1 cup maries coleslaw dressing
pepper

Steps:

  • Wash Broccoli, grapes, celery & apple. Chop into chunky size.
  • Add the rest of the ingredients, mix, chill and serve! Lots of color, its healthy and tastes yummy! I'm not even a big broccoli fan, but this is really good! Enjoy!

3 tablespoons cider vinegar
2 tablespoons fresh lime juice
1 tablespoon grated lime zest
1 clove garlic, minced
½ teaspoon salt
½ teaspoon poppy seeds
½ teaspoon paprika
½ teaspoon dry mustard
½ cup pecans
2 oranges, peeled and sectioned
2 ½ cups bite-size broccoli florets
1 red apple, chopped
1 cup grapes, halved

Steps:

  • Beat grapeseed oil, sugar, cider vinegar, lime juice, lime zest, garlic, salt, poppy seeds, paprika, and mustard together in a bowl with a whisk until smooth and creamy.
  • Heat a small skillet over medium heat. Toast pecans in hot skillet, stirring frequently, until fragrant, 4 to 5 minutes.; spread onto a cutting board to cool completely before chopping.
  • Toss orange sections, broccoli, apple, and grapes together in a bowl. Drizzle dressing over salad and toss gently to coat. Cover bowl with plastic wrap and refrigerate until chilled, 2 to 6 hours.
  • Sprinkle chopped pecans over salad.

1/8-1/4 cup sugar (to your taste)
1 tablespoon vinegar
1/2 cup Miracle Whip or 1/2 cup mayonnaise
1/2 lb bacon, fried & chopped
1 cup cheddar cheese, grated
2 small broccoli, heads raw cut into bite sized pieces
1 onion, chopped (red or white)

Steps:

  • In small mixing bowl combine sugar,vinegar & miracle whip,stir well.
  • (depending on the size or amount of your broccoli you can double the dressing).
  • In large mixing bowl combine bacon,cheese, broccoli,and onion.
  • Pour first mixture over second and stir until coated.
  • Refrigerate.
  • This gets better the longer it sits.
  • You may double the dressing and use to your taste.

1/2 pound bacon, cooked and crumbled (approximately 1/2 cup crumbled)
1/4 cup red onion, diced
1/2 cup Craisins
1/4 cup Sunflower seeds
1 cup shredded cheddar cheese (optional)
3/4 cup Mayonnaise
2 Tablespoons sugar
1 Tablespoon white vinegar

Steps:

  • In a bowl combine broccoli, bacon, red onion, craisins and cheese (optional). Set aside. In a separate bowl combine mayonnaise, sugar and vinegar. Mix well. Pour dressing over broccoli mixture and mix well. Refrigerate for 2 hours - 24 hours before serving.
