6 cups bite-size pieces assorted fresh fruit (pineapple, pears, apples, kiwifruit, strawberries)
2 cups grapes
3/4 cup peach or apricot preserves
2 tablespoons butter or margarine
2 tablespoons orange-flavored liqueur or orange juice
1/4 teaspoon ground cinnamon

Steps:

  • On each of sixteen 8-inch skewers, thread 4 to 6 pieces of fruit, including grapes. Place skewers on large cookie sheet; set aside.
  • In 1-quart saucepan, heat preserves, butter, liqueur and cinnamon over medium-high heat, stirring frequently, until butter is melted. Brush about 1/4 to 1/3 cup of preserves mixture over kabobs; reserve remaining preserves mixture.
  • Set oven control to broil. Broil kabobs with tops 4 to 6 inches from heat 2 minutes or until fruit is hot and glaze is bubbly. Serve warm or cold with remaining preserves mixture.

1/4 cup orange marmalade
2 tablespoons vegetable oil
4 teaspoons Dijon mustard
1 tablespoon fresh lemon juice
1 8- to 10-ounce ham steak (1/2 inch thick), cut into 1-inch pieces
2 medium peaches, peeled, pitted, cut into 1 1/2-inch chunks

Steps:

  • Prepare barbecue (medium-high heat). Whisk marmalade, oil, mustard and lemon juice in small bowl to blend. Alternate ham pieces and peach chunks on 4 metal skewers. Brush with marmalade glaze. Sprinkle with pepper. Grill until ham is slightly charred and fruit is softened, turning and brushing often with glaze, about 6 minutes.

1/4 teaspoon curry powder
1/8 teaspoon ground cinnamon
1/8 teaspoon chili powder
2 cans (5-1/2 ounces each) peach nectar
1 pound boneless skinless chicken breasts, cut into 1-inch cubes
2 medium peaches, cut into chunks
4 green onions, cut into 1-inch pieces
1 small green pepper, cut into 1-inch pieces
1 small sweet red pepper, cut into 1-inch pieces

Steps:

  • In a small saucepan, combine the cornstarch, curry, cinnamon and chili powder. Gradually stir in the peach nectar. Bring to a boil; cook and stir for 2 minutes or until thickened., On eight metal or soaked wooden skewers, alternately thread the chicken, peaches, onions and peppers. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack., Grill kabobs, covered, over medium heat or broil 4 in. from the heat for 10-15 minutes or until juices run clear, turning occasionally and basting with nectar mixture.

¼ teaspoon cayenne pepper
1 teaspoon minced fresh ginger root
2 teaspoons grated orange zest
1 pound top sirloin, cut into 1-inch cubes
1 large red onion, cut into wedges
2 large red bell peppers, cut into 2 inch pieces
2 tablespoons olive oil
1 ½ cups 1-inch fresh pineapple cubes
1 large navel orange, peeled, sectioned
1 tablespoon butter
2 tablespoons brown sugar
1 tablespoon rum

Steps:

  • Combine yogurt, cayenne pepper, ginger, orange zest, and sirloin cubes in a large freezer bag. Massage bag to mix and coat beef well. Refrigerate for at least 2 hours.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate. Remove beef from freezer bag; shake off as much marinade as possible. Thread onion, red pepper, and marinated beef cubes onto skewers; brush with olive oil.
  • Place the pineapple and oranges in the center of a large piece of heavy duty aluminum foil. Dot with the butter, sprinkle with brown sugar, and drizzle with the rum. Bring together the long sides of the foil and seal well; fold up and seal each end. Place fruit packets on grill and cook, covered, for 10 minutes.
  • Place kabobs on the grill with the fruit. Cook, turning occasionally, until meat is done to your liking and fruit is soft and glazed, about 10 minutes.

I "baste" my kabobs after they are cooked and off the fire. Because of the honey in the sauce, if you baste them sooner, you run the risk of drips falling into the bottom of the grill and starting flare-ups. I'd rather not have a burnt honey taste on my chicken so I just wait until the chicken is cooked and then brush them and even drizzle on extra sauce. I use this Glaze for Sausage, Chicken and Shrimp Kabobs! ;)

3/4 cup Worcestershire sauce
3 tablespoons honey
1/8 teaspoon cayenne powder (to taste)

Steps:

  • While grilling your kabobs combine these ingredients in a small bowl.
  • Stir with a basting brush until the honey gets well incorporated. It will be almost like it melts into the Worcestershire and the cayenne gets mixed inches.
  • Taste it. You can always add more cayenne to make them as zippy as you'd like but it's truly impossible to take the cayenne back out. The mixing will only take a minute or so and then it can sit until the kabobs are done.

½ cup margarine
¼ cup honey
3 fresh peaches, pitted and quartered
3 fresh plums, pitted and quartered
3 bananas, cut into 4 pieces each
12 strawberries, hulled
12 skewers

Steps:

  • Preheat an outdoor grill for medium heat and place a large sheet of foil onto the grate.
  • Melt the margarine and honey together in a small saucepan over medium heat. Reduce heat to low and cook gently, stirring occasionally, until slightly thickened, about 5 minutes. Do not let the sauce boil.
  • Thread a peach quarter, a plum quarter, a banana piece, and a strawberry onto each skewer. Place the skewers onto the foil on the preheated grill; spoon margarine-honey mixture over each skewer.
  • Grill until the fruit is softened and the sauce has thickened and cooked onto the fruit, about 5 minutes. Flip the skewers, spoon more margarine-honey sauce over each, and grill for about 5 more minutes on the other side.
