2 ears cooked sweet corn (or 12 ounces frozen) - about 2 cups
1 medium jalapeno, chopped (you could also use green or red bell pepper)
1/2 red onion, finely chopped
1/2 cup fresh cilantro, chopped
juice of 1 lime
1/2 tsp salt
1/2 tsp pepper

Steps:

  • Using a sharp knife, cut the corn kernels off the corn cob.
  • In a large bowl, mix together all the ingredients.
  • Allow to sit for 10-15 minutes to "marinate" and then Enjoy!

300 g tinned sweetcorn (drained)
1 red bell pepper (diced)
6 tomatoes (diced)
0.5 red onion (diced)
10 g coriander (finely chopped (you can use parsley instead))
2 jalapeno peppers (diced (less if you don't like spicy))
1 lime ((juice only))
1 tbsp olive oil
1 tbsp apple cider vinegar
2 garlic cloves (crushed)
40 g feta cheese (crumbled)
1 Pinch sea salt and black pepper

Steps:

  • In a bowl, add the sweetcorn, red pepper, tomatoes and red onion and mix well.
  • Add the coriander, jalapeños, lime juice, olive oil, cider vinegar, garlic and salt and pepper and mix well.
  • Add the feta just before serving and mix well.

1.5 cups sweet corn kernels
1/2 cup chopped onions
1/2 cup chopped tomatoes
1/4 cup chopped green bell pepper
2 jalapenos , chopped (or any variety of chili)
2 tablespoons chopped cilantro leaves
2 tablespoons lemon juice
1/2 teaspoon roasted cumin powder
1/2 teaspoon pepper powder
salt (to taste)
chili flakes (to taste)

Steps:

  • First of all select freshly harvested tender corn. If sweet corn is not available you can very well use Indian yellow corn..
  • Remove the husks and shuck the corn kernels off the cob. As far as possible try to get the kernels whole. You can firmly hold the sweet corn on a flat surface and a use a sharp knife to shuck the kernels.
  • Boil the corn kernels for 4-5 minutes in salted water. Drain and set aside
  • Chop tomatoes, onions, green chilies, bell peppers finely. I have not chopped them very finely as we don't prefer it that way. You can use a food processor to chop the veggies very finely too.
  • Into a mixing bowl tip all the chopped veggies and add prepped corn kernels. Mix well.
  • Add salt, ground cumin, pepper powder, chopped cilantro leaves, some chili flakes and lemon juice. Mix well.
  • Let corn salsa sit for 30 minutes before serving for flavors to mingle.

One 15-ounce can yellow corn, drained
One 15-ounce can white corn, drained
One 4-ounce can chopped green chiles, drained
One 2 1/2-ounce can sliced black olives, drained
4 green onions, minced
2 medium tomatoes, finely chopped
2 jalapeno peppers, seeded and chopped
3 tablespoons white vinegar
1/3 cup olive oil
1/4 teaspoon salt
1 tablespoon finely chopped fresh cilantro
Tortilla chips, for dipping

Steps:

  • Mix the corn, chiles, olives, onions, tomatoes, jalapenos, vinegar, oil and salt in a medium bowl and chill in the refrigerator for at least 1 hour. Just before serving, add the cilantro. Serve with your favorite tortilla chips.

1/2 tablespoon olive oil
2 ears corn, husks removed
2 tomatoes, small dice
1 lime, juiced
1/2 bunch cilantro (1 cup), leaves roughly chopped
1/2 jalapeño, seeded and roughly chopped (less for less spice)
Kosher salt freshly ground black pepper

Steps:

  • Heat the oil in a large cast-iron skillet over medium high heat until it starts to shimmer, then add the corn. Flip with tongs until just beginning to char on all sides, about 10 minutes. Remove from the pan and allow to cool until manageable to touch. Cut the kernels off the cob and add to a medium bowl.
  • Add the tomatoes, lime juice, cilantro and jalapeños and fold gently to combine. Season with salt and pepper.

3 corn on the cobs
1 tbsp olive oil
3 avocados
juice and zest of 2 limes
1 red onion , halved and thinly sliced
big handful of coriander leaves
pinch of salt

Steps:

  • Heat a griddle pan. Cook the corn on the cobs in the hot pan, brushing with the olive oil and seasoning as they cook. Turn the corns now and then, until cooked with nice charred lines, about 10 mins. Once cooked, transfer to a plate and leave to cool.
  • Halve the avocados and remove the stones. Peel, then cut into chunky pieces. Toss through the half of the lime juice and zest.
  • Hold the corn firmly on a chopping board and cut away the kernels. Mix the avocado with the sweetcorn and red onion, coriander leaves, a good pinch of salt and the remaining lime juice and zest. Keep chilled until ready to serve.
