Buffalo Chicken Wings in a Jar image

This fun-sized take on the game day appetizer offers everything you love about Buffalo wings, minus the bones, messy frying, and any risk of your drunk friends dripping sauce all over the place. Instead of wings, we simply take chicken thighs, simmer them directly in butter 'n hot sauce, shred, and mix with celery. The blue cheese comes in the accompanying crostini: baguette slices toasted and spread with butter and blue cheese.

1 ½ pounds bone-in, skin-on chicken thighs
1 teaspoon salt
¼ cup unsalted butter
¼ cup Louisiana-style hot sauce
3 tablespoons water
⅓ cup finely chopped celery
1 pinch cayenne pepper, or to taste
1 baguette, cut into 1/4 inch slices
¼ cup melted butter
½ cup blue cheese, or to taste
¼ cup butter, at room temperature

Steps:

  • Heat a dry saucepan over high heat. Place thighs skin-side down in the hot pan and cook until skin is browned, seasoning generously with salt, about 5 minutes. Turn thighs over once skin no longer sticks to the pan. Add butter, Louisiana hot sauce, and water. Toss thighs around to stir the sauce until butter is melted.
  • Reduce heat to low, cover, and simmer until meat can be easily pulled from the bone, about 1 1/2 hours. Remove from heat and break meat up into smaller pieces using tongs, stirring it into the sauce. Let mixture cool to room temperature, at least 20 minutes.
  • Transfer meat to a mixing bowl, shredding it into smaller pieces. Discard bones, cartilage, and skin.
  • Bring the sauce in the pan to a boil over medium-high heat. Let reduce until slightly thickened, about 2 minutes. Pour sauce into the bowl of chicken meat and mix thoroughly. Taste for seasoning; add salt, cayenne, and hot sauce as needed. Add celery and mix one last time.
  • Pack chicken mixture into a pint-sized jar or crock, and top with a spoonful of hot sauce if desired, and seal jar. Refrigerate until ready to serve. Remove from fridge 30 minutes before service to allow spread to warm up a bit.
  • Preheat the oven to 350 degrees F (175 degrees C) in the meantime. Arrange baguette slices on a baking sheet. Brush tops generously with butter.
  • Bake in the preheated oven until edges start to turn golden brown, about 20 minutes.
  • Meanwhile, smear butter and blue cheese together in a small bowl until combined.
  • Remove toasted baguette slices and let cool slightly, leaving the oven on. Spread blue cheese spread on top, then continue baking crostini until golden brown and crispy, 10 to 12 minutes. Serve with the Buffalo chicken spread.

¾ cup all-purpose flour
1 tablespoon salt
1 tablespoon ground black pepper
1 tablespoon garlic powder
1 quart vegetable oil for frying
¾ cup hot pepper sauce (such as Frank's RedHot®)
1 tablespoon butter

Steps:

  • Rinse chicken wings in cold water; drain and pat dry with paper towels.
  • Mix flour, salt, pepper, and garlic powder together in a 1-gallon resealable bag; add chicken wings. Seal bag and shake to evenly coat chicken.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).

20 -25 chicken wings
2 cups vegetable oil
1/4 cup melted butter
1 (3 ounce) bottle louisiana hot sauce
2 cups mayonnaise
3 tablespoons cider vinegar
1/2 teaspoon dry mustard
1/2 teaspoon white pepper
1/4 teaspoon salt
8 ounces blue cheese, crumbled
1/4-1/2 cup cold water

Steps:

  • Wings:.
  • Disjoint the chicken wings and discard the tips. Rinse and pat dry. The wings must be completely dry to fry properly since there is no batter or breading.
  • Preheat the oil in a deep fryer or a large deep pan to 365°F.
  • Add the chicken wings a few at a time to the hot oil. Do not allow the oil to cool as the chicken is added. Deep-fry for 6-10 minutes or until crisp and golden brown. Drain well by shaking in the fryer basket or a strainer.
  • Blend the butter with 1/2 bottle of hot sauce for medium-hot wings. Add additional hot sauce for hotter wings or additional butter for milder wings.
  • Combine the wings and the hot sauce in a large container. Let stand, covered.
  • Serve the chicken wings w/ Bleu Cheese Dressing and celery sticks.
  • Blue Cheese Dressing:.
  • Combine the mayonnaise, vinegar, dry mustard, pepper, and salt in a large bowl and beat until well blended. Mix in the blue cheese.
  • Add enough cold water gradually to make the dressing of the desired consistency, whisking constantly.
  • Store in an airtight container in the refrigerator.
  • Makes 3 1/2 cups.

1/2 Cup of flour
2 teaspoons seasoned salt

Cayenne pepper - none for mild, 1/4 teaspoon for medium, & more for hot as you want
Oil for frying
1/4 Cup of Frank's Original Hot Sauce, Crystal or Louisiana will also work, just not as well (Frank's is thicker and coats better)
3 tablespoons butter (or margarine if you must!)
2 teaspoons brown sugar

Steps:

  • Combine flour, seasoned salt, paprika and cayenne. Shake wing pieces in flour until well coated. For deep-frying: Heat oil to 350 Fahrenheit (or just heat if there are not temperature controls) Add wings to oil, but just enough so there is room, and stir them for a few moments so they don't stick together. Fry until done, they float when fully cooked. Drain on paper towels and keep warm. For pan-frying: Heat about 1 inch of oil over medium high heat. Add enough wings to fill pan without being crowded. Partially cover the pan (leave at least 1/2 inch opening to vent steam) and lower the heat to medium low. Cook and turn for about 15-20 minutes. You want the wings to brown but not burn, so keep a close eye on them. Drain on paper towels as they are done. For Sauce: Heat the hot sauce in a saucepan over medium-high heat. Steps:

  • For the wings: Preheat the oven to 400 degrees F. Line 1 large or 2 small rimmed baking sheets with foil.
  • Whisk together the flour, cayenne and salt in a large bowl.
  • Heat 2 inches of oil in a large, heavy-bottomed pot over medium heat until a deep-fry thermometer registers 375 degrees F. Working in 3 batches, dredge the wings in the flour mixture and fry until lightly browned, 10 to 12 minutes per batch. Transfer the wings with a slotted spoon to a paper-towel-lined plate.   • For the blue cheese dressing: Whisk together the mayonnaise, half-and-half, sour cream, lemon juice, salt, Worcestershire and 1/4 cup of the blue cheese in a medium bowl until smooth. Gently stir in the remaining 1/4 cup blue cheese and season with pepper to taste. Use immediately, or refrigerate for up to 3 days. (Makes about 2 1/2 cups dressing.)
  • Transfer the wings to a serving platter and serve with the blue cheese dressing and celery and carrot sticks.

1/2 cup milk
2 tablespoons fine chopped yellow onions
1 garlic clove, crushed
1/4 cup parsley, minced
1 cup mayonnaise
1/4 cup blue cheese, crumbled into fine pieces
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper, fresh ground
1 pinch cayenne pepper
1/4 lb butter
2 tablespoons Tabasco sauce
50 pieces chicken wings (either center or upper portion or both)
peanut oil (for deep frying)
celery rib (to garnish)

Steps:

  • Mix the wine vinegar with the milk, and allow the milk to curdle.
  • Add the yellow onion, garlic, parsley, mayonnaise, blue cheese, lemon juice, salt, pepper, and cayenne.
  • Mix well.
  • Refrigerate before serving.
  • In a large skillet melt the butter over low heat, and stir in the hot sauce.
  • Add more or less to taste.

1 teaspoon smoked paprika
½ teaspoon onion powder
½ teaspoon garlic powder
½ cup sour cream
½ cup mayonnaise
¼ cup buttermilk
1 teaspoon apple cider vinegar
1 teaspoon garlic powder
1 teaspoon onion powder
2 tablespoons fresh dill, chopped
½ teaspoon kosher salt
1 stick unsalted butter
½ cup hot sauce
1 tablespoon honey
1 tablespoon worcestershire sauce
½ teaspoon garlic powder
1 pinch cayenne pepper, optional

Steps:

  • Preheat the oven to 425°F (220°C). Line a baking sheet with foil and set a wire rack on top. Grease with nonstick spray.
  • Add the wings to a large bowl and pat dry with paper towels. Season with salt and pepper.
  • In a small bowl, whisk together the baking powder, garlic powder, onion powder, and paprika. Sprinkle the dry rub over the wings and toss to coat.
  • Arrange the wings on the wire rack, making sure they are right side up and not touching each other.
  • Bake for 30-45 minutes, flipping the wings halfway though, until the internal temperature reaches 165°F (75°C).
  • While the wings bake, make the buttermilk ranch: In a medium bowl, whisk together the sour cream, mayonnaise, buttermilk, apple cider vinegar, garlic powder, onion powder, dill, and salt. Refrigerate until ready to serve.
  • Make the buffalo sauce: Melt the butter in a medium skillet over medium heat. Add the hot sauce, honey, Worcestershire sauce, garlic powder, and cayenne, if using, and whisk until combined. Bring to boil over high heat, then reduce the heat to medium-high and cook until slightly reduced, 3-4 minutes.
  • Transfer the wings to a large bowl and toss with the warm buffalo sauce until well coated.
  • Serve the buffalo wings with the buttermilk ranch.
