Garlicky Green Beans with Shallot image

1 tablespoon butter
3 tablespoons olive oil
1 large shallot, chopped
8 cloves garlic, sliced
15 ounces fresh green beans, trimmed
salt and ground black pepper to taste
½ cup grated Parmesan cheese

Steps:

  • Melt butter with olive oil in a large skillet over medium heat. Cook shallot and garlic in the hot butter mixture, stirring frequently, until soft and slightly browned, 5 to 10 minutes.
  • Stir green beans with shallot mixture; season with salt and pepper. Cook and stir green beans until tender, about 12 minutes.
  • Remove skillet from heat and sprinkle Parmesan cheese over the green beans.

  • In a large skillet over medium heat, melt butter with olive oil; add garlic, and cook until lightly browned, stirring frequently. Stir in green beans, and season with salt and pepper. Cook until beans are tender, about 10 minutes. Remove from heat, and sprinkle with Parmesan cheese.

  • In a saucepan, bring beans and water to a boil; reduce heat to medium. Cover and cook for 10-15 minutes or until beans and crisp-tender; drain and set aside. In a large skillet, saute garlic in butter until lightly browned, about 1 minute. Add beans, salt and pepper; heat through.

5 slices thick-cut bacon
1 red onion, sliced thin
1 jalapeño, seeded and diced small
1 1/2 pounds green beans, trimmed
1 cup chicken stock
1 teaspoon garlic powder
Kosher salt and freshly ground black pepper
1/4 cup fried onions

Steps:

  • Place the bacon in a large cast-iron skillet over medium heat and cook until crisp, 8 to 10 minutes. Remove the bacon and all but 2 to 3 tablespoons of the bacon grease.
  • Add the onion and jalapeño and cook for a minute or two, then add the green beans. Cook until the green beans are bright green, an additional minute. Add the chicken stock, garlic powder and a good pinch of both salt and pepper. Bring to a simmer and lightly cover, allowing the some of the steam to escape. Cook until the liquid is evaporated and the beans are starting to soften, but still have a bite, 10 to 12 minutes.
  • Transfer the beans to a serving vessel. Crumble the bacon and sprinkle it over the top of the beans, along with the fried onions.

4 strips pre-cooked bacon

Steps:

  • In a microwave safe bowl, add green beans and 1 tablespoon water. Cover with plastic wrap and cook on high setting for 6 to 8 minutes or until crisp-tender.
  • While green beans are cooking; in a large frying pan, heat the butter, oil, sliced garlic, and chopped bacon gently over medium heat. NOTE: Do not let garlic burn - a light golden brown is as dark as garlic should get.
  • Drain any liquid from the green beans and add to frying pan. Toss to coat beans and season with salt and pepper.

  • Heat the olive oil in a skillet on medium heat. Add green beans making sure that olive oil is distributed evenly, season with salt depending on your taste. Saute for about 10-15 minutes until softened but still crispy. Add minced garlic coating all green beans evenly for about 2-3 minutes, not too long as you don't want the garlic to brown at all--this can leave a bitter flavor. Immediately take off heat, let sit for another 2-3 minute Enjoy!
  • I love garlic and usually use the 6 cloves, but you can use less to your taste.

1 lb fresh green beans (cut into 3-inch pieces)
2 tablespoons butter
3 garlic cloves (finely minced)
1 teaspoon chicken bouillon granule (not cube!)
1/4 cup white wine or 1/4 cup sherry wine
salt and pepper

Steps:

  • Steam or boil green beans for 4-5 minutes until crisp-tender.
  • In medium skillet over medium heat melt butter, add garlic, and saute for 3 minutes or until tender and fragant.
  • Add green beans, stir well to coat with the butter/garlic mixture, sprinkle chicken bouillon over beans and stir to mix, then saute another 5 minutes to desired doneness.
  • Turn heat up to medium high, then pour in the wine and let it sizzle and evaporate most of the alcohol. Lower heat, add salt and pepper to taste, and stir thoroughly. Serve immediately!
  • NOTES : These have become a regular addition to our table! Frozen green beans work OK, garden fresh is much better! Enjoy.
