I made this as an appetizer, but if you would like to make it as a dessert, please increase the amount of sweetener. For this recipe, you need to peel the tomatoes to create smooth, creamy texture. If you don't know how to peel tomatoes, please Google "How to peel tomatoes." For more healthy, gluten-free, pesco-vegetarian recipes, please visit my blog, www.innerharmonynutrition.com.

Categories     Dessert

Time 35m

Yield 1 8 x 8 inch container, 12 serving(s)

Number Of Ingredients 8

100 ml milk (I used almond milk)
50 ml heavy cream (I used coconut milk creamer.) or 50 ml non-dairy coffee creamer (I used coconut milk creamer.)
3 tomatoes (large)
6 strawberries, stems removed
2 teaspoons agar-agar, powder
2 tablespoons lemon juice
2 tablespoons honey
1/8 teaspoon salt

Steps:

  • In a measuring cup, pour 100 ml milk or milk alternative and heavy cream or heavy cream alternative. Set it on the kitchen counter to bring it to room temperature. You can also use 150 ml milk or milk alternative.
  • Peel the tomatoes (See the above note) and cut them into large chunks.
  • Place tomato chunks and strawberries in a blender and blend until it become a smooth liquid.
  • In a sauce pan, place 100 ml water and agar-agar powder and bring to a boil while whisking.
  • Add about 1 cup of the tomato mixture and keep whisking for a couple of minutes. If you use agar-agar flakes instead of a powder form, you might have to whisk longer (5 - 10 minutes) to let it dissolve. Turn off the heat.
  • Add the remaining tomato mixture, milk mixture, lemon juice, salt and honey. Mix well.
  • Pour into a container (about 8 x 8 inches).
  • When the mixture is cool enough, cover and place the container in the refrigerator to let it set for about 2 hours or overnight.
  • When ready to eat, scoop into a dish, decorate as you like, infuse love and serve!

AVOCADO MOUSSE WITH PAPAYA TOMATO RELISH

Avocado Mousse with Papaya Tomato Relish image

Categories     Blender     Fruit     Tomato     Vegetable     Freeze/Chill     Papaya     Avocado     Summer     Chill     Gourmet

Yield Makes 8 first-course servings

Number Of Ingredients 19

For mousse
3 firm-ripe California avocados (1 1/2 to 1 3/4 lb total)
1 tablespoon plus 1 teaspoon fresh lemon juice
1 (500-mg) vitamin C tablet, crushed to a powder
1/2 teaspoon salt
1 1/4 teaspoons unflavored gelatin (from a 1/4-oz envelope)
3 tablespoons whole milk
1/3 cup chilled heavy cream
For relish
3 tablespoons tarragon white-wine vinegar
1 to 2 tablespoons sugar
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 lb grape tomatoes, cut into 1/4-inch dice (1/2 cup)
1/2 lb papaya, peeled, seeded, and cut into 1/4-inch dice (1/2 cup)
2 tablespoons chopped red onion
1 teaspoon finely chopped fresh tarragon
Special Equipment
8 (3-oz) ramekins

Steps:

  • Make mousse:
  • Lightly oil ramekins and line bottoms with wax paper or parchment, then oil paper.
  • Quarter, pit, and peel 2 avocados. Purée avocado quarters with 1 tablespoon lemon juice, vitamin C, and salt in a food processor until smooth.
  • Sprinkle gelatin over milk in a small heavy saucepan and let soften 1 minute. Heat over low heat, stirring, until gelatin is dissolved, 1 to 2 minutes, then remove from heat. Add to avocado purée and blend until smooth.
  • Halve, pit, and peel remaining avocado. Cut into 1/4-inch dice and toss with remaining teaspoon lemon juice in a small bowl. Beat cream in a bowl with an electric mixer at medium speed until it just holds soft peaks. Fold in avocado purée gently but thoroughly, then fold in diced avocado. Spoon mousse into ramekins, smoothing tops. Cover surface of each mousse with a piece of plastic wrap, then cover ramekins with plastic wrap. Chill mousse until set, at least 2 hours.
  • Make relish:
  • Whisk together vinegar, sugar (to taste), salt, and pepper in a bowl until sugar is dissolved, then stir in tomatoes, papaya, onion, and tarragon. Let stand at room temperature 1 hour (for flavors to develop).
  • Unmold mousse by running a knife around edge of each ramekin, then invert each onto a plate, discarding paper. Serve with relish.

VEGETABLE MOUSSE TERRINE

Vegetable Mousse Terrine image

Categories     Dairy     Tomato     Vegetable     Appetizer     Vegetarian     Corn     Pea     Summer     Chill     Gourmet     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free

Yield Makes 8 to 10 first-course servings

Number Of Ingredients 23

For pea mousse
Vegetable oil for greasing terrine mold
2 1/4 cups shelled fresh or frozen peas (10 oz)
1/2 oz Parmigiano-Reggiano, finely grated using a Microplane (1/2 cup)
1 teaspoon finely grated fresh lemon zest
1/2 teaspoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
1/3 cup chilled heavy cream
For corn mousse
2 1/2 cups fresh corn (from 4 to 5 ears)
1 tablespoon whole milk
1 teaspoon unflavored gelatin (from a 1/4-oz envelope)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/3 cup chilled heavy cream
2 tablespoons chopped fresh basil
For tomato salad
1/2 lb tomatoes, cut into 1/4-inch dice
1 tablespoon extra-virgin olive oil
1 1/2 teaspoons red-wine vinegar
Special Equipment
a Microplane grater; a 1-qt terrine mold; parchment paper

Steps:

  • Make pea mousse:
  • Lightly oil terrine mold and line bottom and sides with parchment paper, then lightly oil parchment.
  • Cook peas in a large pot of boiling salted water until just tender, 2 to 3 minutes. Transfer peas with a slotted spoon (reserve cooking water) to a bowl of ice and cold water to stop cooking. When peas are cool, drain well, then transfer to several layers of paper towels and pat dry.
  • Purée peas in a food processor, scraping down sides of bowl if necessary, until very smooth, about 1 minute, then force through a medium-mesh sieve into a bowl, discarding skins. Add cheese, zest, juice, salt, and pepper, stirring to combine.
  • Beat cream in another bowl with an electric mixer until it just holds stiff peaks, then fold into pea mixture.
  • Spread pea mousse evenly in terrine mold and chill.
  • Make corn mousse while pea mousse chills:
  • Return cooking water to a boil, then add corn and cook until very tender, about 6 minutes.
  • While corn cooks, put milk in a medium bowl and sprinkle with gelatin, then let soften 1 minute. Add salt and pepper.
  • Drain corn in cleaned medium-mesh sieve, then transfer to several layers of fresh paper towels and pat dry. Pulse in cleaned food processor, scraping down sides of bowl if necessary, until very smooth, about 1 minute.
  • Force warm puréed corn through sieve with a large rubber spatula into milk mixture, discarding skins, and stir to combine. (Heat from corn will dissolve gelatin.) Cool to room temperature, about 20 minutes.
  • Beat cream in another bowl with electric mixer until it just holds stiff peaks, then fold into corn mixture along with basil.
  • Spread corn mousse on top of pea mousse in terrine mold and chill, its surface covered with lightly oiled parchment (oiled side down), until softly set (terrine will not be firm), at least 4 hours.
  • Unmold terrine and make salad:
  • Remove top layer of parchment and invert a platter on top of terrine mold. Invert mousse onto platter and carefully remove parchment.
  • Toss tomatoes with oil, vinegar, and salt and pepper to taste. Just before serving, spoon tomato salad around terrine.
