2 boxes of cornbread mix (I used jiffy)
1 tablespoons of brown sugar
2 eggs
1½ cups milk (this is slightly more than what the box will tell you)
¼ cup cheese (because... everything taste better with cheese)
1 package of hot dogs (slice them and then chop into bite size pieces)

Steps:

  • Preheat oven to 400. Line 18 muffin tins with paper (or you can use cooking spray).
  • Mix all the ingredients together in a large bowl, whisk the wet ingredients and dry ingredients.
  • Spoon about 2 tablespoon cornbread mix into each muffin tin and then add hot dog. Then another 2 tablespoon scoop and added more hot dogs.
  • Bake for about 12 minutes to 15 minutes until nice and brown. Then enjoy!

1/3 cup milk
1/2 cup cheese (grated )

Steps:

  • Preheat the oven to 400. Grease a mini muffin tin and set aside.
  • In a medium bowl, whisk together the muffin mix, egg, milk, and cheese. Let rest 3-4 minutes.
  • Slice each hot dog into 6 equal pieces. Spoon a heaping teaspoon of muffin batter into each well of the muffin tin, then place a hot dog piece in the center of each well.
  • Bake 11-13 minutes, or until golden brown. Serve warm with ketchup for dipping.

2/3 cup 2% milk
1 large egg, lightly beaten, room temperature
5 turkey hot dogs, sliced
1/2 cup shredded sharp cheddar cheese
2 tablespoons finely chopped pickled jalapeno, optional

Steps:

  • Preheat oven to 400°. Line 9 muffin cups with foil liners or grease 9 nonstick muffin cups., In a small bowl, combine muffin mix, milk and egg; stir in hot dogs, cheese and, if desired, jalapeno. Fill prepared cups three-fourths full., Bake until a toothpick inserted in center comes out clean, 14-18 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm. 2 Tbsp Melted Butter
1/3 cup Milk
4 Hot Dogs, each cut into 6 pieces (bun length works best)

Steps:

  • In a bowl, combine the corn muffin mix, egg, melted butter, and milk. Mix just until it comes together. (If you mix too much, the corn muffins will start to fall apart around the hot dogs when cooked.)
  • Once mixed together, pour into two greased 12 mini muffin tins (this recipe makes 24 mini muffins).
  • Place each hot dog piece into the center of the corn muffin mixture and press down slightly.
  • Bake at 400°F for 8-12 minutes or until golden brown.
  • Serve hot with ketchup and mustard.

1 jiffy corn mix..or my jiffy clone recipe
1 pkg hot dogs

Steps:

  • 1. Pre-heat oven to 375. Mix the Jiffy mix for muffins. Set aside. Cut each hot dog into 1 inch pieces. Each hot dog will make 5 pieces.
  • 2. Spray a mini muffin pan with non-stick spray. Put 1 good teaspoon of the above mix into each mini muffin cup. Place a 1 inch piece of hot dog into the middle of each cup. Cut side up.
  • 3. Bake 8-12 minutes. Cool for 5 minutes. Turn out and cool on a rack. Store left overs in refrigerator. Can be re-heated 20-30 seconds.
