1/2 cup salted butter (melted)
1/2 cup sour cream
2-3 tablespoons sugar (if you like a sweeter cornbread)
2 large eggs (beaten)

Steps:

  • Preheat your oven to 375°F. Grease an 8x8 pan and set aside.
  • Mix together the butter, sour cream and add sugar.
  • Add in the eggs, beating in completely.
  • Stir in the box of Jiffy mix. Mix now until the ingredients are completely incorporated.
  • Spread the mixture out in the pan in an even layer.
  • Bake for 17-20 minutes until golden brown and baked through.
  • Remove and slice and serve.

½ cup frozen yellow corn (no need to thaw)
½ cup sour cream (light or regular) (or plain Greek yogurt)
1 cup shredded Monterey Jack or pepper Jack cheese
4 ounce can diced green chiles (drained)
17 ounces Jiffy Corn Muffin Mix ((two 8.5 ounce packages))

Steps:

  • Coat a 13- x 9-inch baking dish with nonstick cooking spray. Preheat oven to 375 degrees F.
  • Beat the eggs and oil with a wooden spoon until well combined. Add the creamed corn, frozen corn, sour cream, cheese, and diced green chiles and mix until well combined. Add the Jiffy Corn Muffin Mix and stir just until moistened. Batter will be slightly lumpy.

1/3 cup milk
1/4 cup plain Greek yogurt, or sour cream
1 tbsp. honey
2 tbsp. diced jalapenos fresh or canned. If you use canned, make sure you drain them.
1/3 - 2/3 cup canned cream corn

Steps:

  • Pre-heat the oven to 400 degrees.
  • In a large mixing bowl, add the corn muffin mix and the other ingredients.
  • Mix until combined being careful not to over-mix.
  • Using a cookie scoop, divide the mixture evenly between a 12 capacity muffin pan.
  • Bake the muffins for 15 to 20 minutes or until they are golden-brown and a toothpick inserted into the center of a muffin comes out clean.
  • Let cool briefly before removing and serving.

3 cups self-rising corn meal mix
3 tablespoons sugar
1 teaspoon salt
1 large onion (chopped)
2 jalapeño peppers (diced)
1 1/2 cups sharp cheddar cheese (grated)
1 15 oz. can cream style corn
1/2 cup canola oil
1 cup milk
3 large eggs (lightly beaten)

Steps:

  • Preheat the oven to 400 degrees. Generously spray two 12-cup muffin tins with cooking spray; set aside. (Do not use paper liners.)
  • In a large bowl, stir together the corn meal, jalapeño peppers, onion, sugar, salt, and cheese.
  • In another bowl, break three eggs and beat lightly with a whisk. Add the corn, milk, and canola oil and stir. Add this mixture all at once to the dry ingredients and stir until the dry ingredients are just moistened. Do not over mix!
  • Evenly divide the batter among the muffin tins.
  • Bake for 20 minutes or until golden brown. Cool 1-2 minutes before removing from the muffin tins.
  • Serve immediately or place in ziplock bags when cool and freeze to use later.

15 oz creamed corn
4 oz grated pepper jack cheese
2 Tbs vegetable oil
2 Tbs Sour Cream
2 Tbs Granulated White Sugar
1 tsp kosher salt
2 tsp onion powder
2 tsp garlic powder
1 tsp cayenne pepper

Steps:

  • Preheat the oven to 350
  • Mix all of the ingredients together in a large bowl and allow to sit for 5-10 minutes.
  • Spray mini muffin tin cups and the space between with non stick spray. Line mini muffin tin with paper liners and then spray the inside of the muffin paper cups.
  • Use a scoop and fill the muffin cups with the mix to about ⅔ full.
  • Bake at 350 for 10-15 minutes until lightly browned on the top.
