This delicious homemade ricotta recipe is from the new cookbook, "On Top of Spaghetti" by Johanne Killeen and George Germon.

Number Of Ingredients 4

4 cups whole milk
1 cup heavy cream
1/2 teaspoon fine sea salt (optional)
Juice of 1 lemon

Steps:

  • Combine milk, heavy cream, and salt (if using) in a nonreactive heavy bottomed saucepan. Place saucepan over medium-high heat and bring to a boil.
  • Add lemon juice and continue to boil, stirring constantly until curds separate, about 1 minute. It may be necessary to adjust the heat to prevent cream from overflowing.
  • Pour into a very fine-mesh stainless steel strainer. Place strainer over a bowl that is deep enough for the strainer to sit over and not touch the liquid. Allow cheese to drain for 1 hour in the refrigerator. Discard liquid and transfer ricotta to a covered container. Refrigerate until ready to use, or up to 3 days.

A lovely creamy cheese which is very easy to make! Even my sister who refused to eat the cheese at first ended up loving it! This is a fail-safe recipe in our household, I have made it time and time again. To cheese or not to cheese...that is never the question!

8 ½ cups whole milk
⅓ cup lemon juice
1 teaspoon salt

Steps:

  • Pour milk into a saucepan set over medium heat. Heat milk until it registers 194 degrees F (90 degrees C) on an instant-read thermometer, about 5 minutes. Remove from heat.
  • Stir lemon juice and salt slowly into warmed milk. Let stand until milk curdles, 10 to 15 minutes.
  • Line a fine-mesh strainer with cheesecloth and place it over a large bowl. Pour milk mixture carefully into the lined strainer. Let stand until most of the liquid has drained off the ricotta, about 15 minutes. Discard drained liquid.

1 tablespoon unsalted butter
1/2 yellow onion, thinly sliced
Homemade Pizza Dough (recipe follows), prepared through step 10
All-purpose flour, for dusting
1 tablespoon olive oil, plus more as needed
3/4 cup ricotta cheese
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter, melted
1 garlic clove, minced or 1 teaspoon garlic powder
3 to 4 slices prosciutto
1 cup baby arugula
2 tablespoons balsamic glaze
Parmesan cheese, shaved
1 1/4 teaspoons active dry yeast
1/2 teaspoon sugar
1/4 cup warm water (95° to 110°F)
3 1/2 cups bread flour
2 teaspoons kosher salt
1/2 cup olive oil
1 cup plus 1 tablespoon room-temperature water
Cooking spray

Steps:

  • Preheat the oven to 500°F. Place a 12-inch cast-iron skillet in the oven to preheat for 15 to 20 minutes.
  • Meanwhile, in another large cast-iron skillet, melt the butter over medium-low heat until it bubbles. Add the onions and sauté, stirring occasionally, until golden brown, 20 to 25 minutes.
  • Stretch the pizza dough out into a 12-inch round. In the preheated cast-iron skillet, drizzle some oil, then add the dough round.
  • Drizzle with 1 tablespoon of oil. Spread the ricotta on top and season with salt and pepper. Bake until golden, 10 to 15 minutes.
  • When the pizza comes out, mix the melted butter, garlic, and a pinch of salt. Brush it along the crust of the pizza. Tear the prosciutto into small pieces or strips and place on top. Top with the arugula and caramelized onions. Drizzle with olive oil and balsamic glaze, then top with shaved Parmesan cheese.
  • Transfer to a cutting board and cut into 8 slices to serve.
  • In a small bowl, stir together the yeast, sugar, and warm water. Let stand until foamy, about 5 minutes.
  • Add the flour to the bowl of a stand mixer fitted with the dough hook. Sprinkle the salt over the flour and mix on low speed for 15 seconds to distribute the salt.
  • Add the olive oil, room-temperature water, and yeast mixture and mix on low speed for 1 to 2 minutes, then increase the speed to medium and mix until a ball of dough forms, about 5 minutes.
  • Spray a medium bowl lightly with cooking spray. Shape the dough into a ball and set it in the bowl seam side down. Cover the bowl with plastic wrap and place in a warm area until doubled in size, about 1 hour.
  • When the dough is almost risen, place a cast-iron pizza stone on the center rack of the oven and preheat the oven to 500°F.
  • When the dough has risen, remove the plastic wrap and push down on the dough to release the gases and bubbles. Shape it into a ball. (If using the dough later, cover with plastic wrap and place in the refrigerator for up to 12 hours. The dough will slowly proof during that time. Once you're ready to use it, set it out for 30 minutes to come to room temperature.)
  • Spread a piece of parchment paper about 1 1/2-feet long on a work surface. Stretch the dough into a 14-inch round on the parchment.
  • Top with your favorite toppings. Carefully pull the oven rack with the pizza stone halfway out of the oven and transfer the parchment and pizza dough to the stone.
  • Bake until the crust is golden, 13 to 15 minutes. Transfer the pizza to a cutting board and cut into 8 slices to serve.

1 gallon whole milk
1 quart buttermilk

Steps:

  • Line a colander with a few layers of cheesecloth and put it into the sink.
  • Pour milk and buttermilk into large pot. Cook over high heat, stirring occasionally to prevent scorching. Curds will begin to rise up and clump on the surface. Once the mixture is steaming, stop stirring. Curds and whey will separate. Whey will look like cloudy water underneath a mass of white curds (this will happen at about 140 degrees F). When separated, turn off the heat and ladle the curds into the cheesecloth. When all curds are in the cloth and the dripping has slowed, gently bring up the edges of cloth and twist it to bring the curds together. Give a squeeze to let the water continue to drain. Tie it with string and hang it over the sink or a pan to drain for about 15 minutes or so. Let it drain 15 minutes more.
  • Discard the whey. Untie the cheesecloth and pack the ricotta into airtight containers. Refrigerate and use within 1 week, or eat immediately. Serve with crusty garlic bread, olive oil and chunky salt, herbs or something else good.

Chef John's Homemade Ricotta Cheese image

If I came over to your place and you served me homemade ricotta cheese, I'd think you were pretty cool. And while that's a good reason to do this, there are even better reasons--like, it's super fun to do, ridiculously easy, and you'll end up with something far superior to what you buy in the store. Serve on toast with honey, cayenne, and sea salt or with tomatoes, basil, freshly ground black pepper, olive oil, and sea salt--or however you like.

4 cups whole milk
½ cup heavy cream
1 ¼ teaspoons kosher salt
2 tablespoons white distilled vinegar

Steps:

  • Line a mesh strainer with cheesecloth and set over a deep bowl or pot.
  • Combine milk, cream, and salt in a heavy-bottomed saucepan and place over medium-high heat. Cook the mixture, stirring occasionally in a "figure eight" motion, until it reaches a temperature of 195 degrees F (90 degrees C). If you don't have a thermometer, this will be right before it starts to simmer. You'll see steam rising from the surface, and tiny bubbles forming around the edges of the pan.
  • Turn off the heat, pour in the vinegar, and stir slowly in a "figure eight" motion for 3 or 4 seconds.
  • Let the mixture sit, untouched, for 6 minutes.
  • Carefully ladle into the cheesecloth-lined mesh strainer so that the dripping whey drains into the pot or bowl. Let the ricotta drain into the pot for between 20 and 45 minutes, depending on how soft or firm you want your cheese. The longer it drains, the firmer the texture will be once chilled.
  • Grab the ends of the cheesecloth and lift the drained ricotta out of the strainer and place in a bowl. Let cool on the counter to room temperature, then wrap and chill thoroughly.
  • Remove cheesecloth and serve. Ricotta usually needs an additional pinch of salt when serving.

This is the way the Carraba Brothers make ricotta--except that they use whole milk. The whole milk is delicious and rich, but the fat free version is great too and guilt free. This is wonderful in savory dishes like lasagna and in sweets like cannoli. Note:: The whey (the liquid left when you strain out the cheese) is great as a replacement for water in bread recipes -- tons of vitamins etc. and a boost to flavor.

1 gallon skim milk
1 quart fat-free buttermilk

Steps:

  • Combine the milk and buttermilk in a heavy pot over low heat. Place a thermometer in the liquid, without allowing it to touch the bottom of the pan, and continue to heat until the liquid reaches 175°.
  • While the liquid is heating, rinse some cheesecloth and use it to line a strainer or small colander placed in a bowl, or line it with paper towels and it will work as well.
  • When the ricotta forms on the surface of the milk (be patient--it may take a while), remove it with a slotted spoon or skimmer and place it in the lined strainer.
  • Let the ricotta drain in the cheesecloth for 1 hour. Then place the lined strainer in a bowl and place in the refrigerator to let drain for a few more hours.
  • Store in an airtight container. Ricotta is best when used in a few days.

Joanna originally comes from Sicily and is the cook at my daughter's daycare. She makes wonderful wholesome food for babies through to preschoolers and most of them eat her food most of the time! This even works with UHT treated milk which means that you can make ricotta a about 1/3 to 1/4 of the usual store price!

1 liter milk
1/4 cup lemon juice or 1/4 cup vinegar

Steps:

  • Mix the milk and the juice together in a saucepan.
  • Heat the milk slowly stirring continuously and curd will form as the temperature increases.
  • Keep heating and stirring until just short of boiling.
  • Do not allow to boil.
  • Line a sieve with a double layer of clean cheesecloth and pour the milk mixture through the sieve.
  • The milk mixture will separate leaving ricotta cheese in the muslin and whey in the container underneath.
  • Put the ricotta in the refrigerator and use within the next 48 hours.
