DRUNKEN CHICKEN RECIPE

Number Of Ingredients 16

2 ½ pounds boneless, skinless chicken thighs/breasts
1/4 cup oil
1/2 cup flour
1/4 cup chicken broth
2 15- oz cans of diced tomatoes
1 12- oz bottle of beer
2 Tbsp garlic powder
1 Tbsp thyme
1 tsp black pepper
1 tsp white pepper
1-2 tsp cayenne pepper, depending on desired heat level
1 tsp oregano
1 tsp paprika
1 Tbsp salt
1 Tbsp molasses
4 bay leaves

Steps:

  • On saute setting, add oil until warm.
  • Add flour and stir continuously to make a roux. Continue to stir until flour begins to thicken and becomes the color of peanut butter.
  • Add dry seasoning while stirring constantly.
  • Add broth and 1 15oz can of diced tomatoes, molasses and bay leaves. Stir
  • Place chicken breasts in the liquid mixture, stir.
  • Pour the remaining can of tomatoes and the beer over top of the chicken.
  • Placed lid on pressure cooker in sealed position. Cook on Manual for 15 minutes. Allow pressure to release naturally for 10 minutes, then quick release.
  • Remove bay leaves and chicken. Shred chicken with forks. Replace chicken back into pot and stir. Let sit 10 minutes with the lid removed before serving. If desired, you can thicken with corn starch. Mixture will thicken as it cools/stands.
  • In a heavy pot, add oil and add your flour (if using coconut oil, melt the oil before you add the flour). Cook until your roux is the color of peanut butter.
  • When your roux is a nice brown, add all your ingredients except for your the chicken. Stir.
  • In a crock pot, place your chicken in the bottom of the insert. Pour your roux/tomato/spice blend over the chicken. Stir. Place the lid on your crock pot and cook on high for 1 hour. Turn down to low and cook for an additional 5 hours.
  • When your chicken is cooked, remove the bay leaves and take two forks and shred your chicken. Replace chicken back into pot and stir. Let sit 10 minutes with the lid removed before serving.
  • If desired, you can thicken with corn starch. Mixture will thicken as it cools/stands.

1 (2 to 3 pound) whole chicken
1 (12 fluid ounce) can beer
5 tablespoons poultry seasoning
4 dashes liquid smoke flavoring
4 bay leaves
1 long metal skewer

Steps:

  • Rinse and dry the chicken. Remove excess fat and leave skin on. Lift skin from breast and thigh areas, slide bay leaves under skin. Coat chicken with poultry seasoning.
  • Drink half the can of beer, pour liquid smoke into remaining beer. Raise tab on beer can until it is in the straight up position.
  • Insert beer can into chicken from the bottom until even with bottom of chicken. Insert skewer through the wing, ribs, tab on beer can, and out the opposite side. (this keeps the can from falling out the chicken).
  • Prepare grill: light the coals, and when they are ready, spread coals to form a ring around the outside edge of the grill.
  • Place chicken in center standing up on can to cook. Cover and cook for two hours.
  • Remove carefully from grill so as not to spill the contents of the can. Remove skewer and beer can, let chicken sit for fifteen minutes before cutting.

4 pieces bone-in, skin on dark meat chicken (2 thighs and 2 drummers)
1 bone-in, skin-on chicken breast, cut into quarters
Salt and freshly ground black pepper
2 tablespoons EVOO
1 cup loosely packed mixed fresh herbs (parsley, sage, rosemary and thyme), chopped
4 cloves garlic, thinly sliced
2 ribs celery with leafy tops, chopped
1 bay leaf
1 carrot, peeled and chopped
1 onion, peeled and chopped
2 tablespoons tomato paste
3 cups dry red wine
A handful of raisins
1/4 cup toasted pine nuts or sliced almonds
Ciabatta bread, to serve

Steps:

  • Liberally sprinkle the chicken with salt and pepper.
  • Heat a large cast-iron or heavy skillet over medium-high heat with EVOO, 2 turns of the pan. Brown the chicken well on both sides and remove to a plate. Add half of the herbs, the garlic, celery, bay leaf, carrots and onions to the skillet, season with salt and pepper, and cook 10 minutes, stirring frequently. Stir in the tomato paste and cook until fragrant, about 1 minute. Next add the wine and the raisins and bring to a bubble. Add the chicken back to skillet and cook, turning occasionally, 30 minutes at a simmer. Serve from the skillet or cool and store for make-ahead meal.
  • To serve, top with the remaining herbs and pine nuts and serve with warm bread.

Drunken Noodles is a Thai dish with Chinese origins, influenced by the Chinese who lived in Laos and Thailand. It is a stir-fried noodle dish traditionally uses broad flat rice noodles stir-fried with meat, shellfish, tofu, vegetables, chile, spices, fish sauce and other seasonings. The name was thought to come about because rice wine is not commonly used in Thai recipes whereas it features in this recipe therefore giving its uniqueness and nod to Chinese heritage. Whatever the real reason for the name, this is a delicious dish and truly versatile. I have used carrots, mangteout and Romano peppers to give the dish sweetness and crunch, plus thigh meat from the chicken because it has more flavour. You can adapt the recipe to your preferences but the combination of seasonings - soy, fish sauce, rice wine, oyster sauce is an absolute must! This makes an easy delicious mid-week supper.

1 pound pad Thai wide flat rice noodles (dried)
3 tablespoons peanut or vegetable oil
4 cloves garlic, finely chopped
2 chiles, sliced
1 pinch dried chili flakes
1 onion, diced
1 pound chicken thighs, skin removed, sliced into 1/3- by 5-inch strips
1 tablespoon Shaosing rice wine
4 1/4 ounces mangteout (snow peas), julienne
2 Romano red peppers, julienne
1 medium carrot, julienned
2 tablespoons oyster sauce
2 tablespoons low-sodium light soy sauce
1 tablespoon fish sauce mixed with 1 teaspoon brown sugar
3 scallions, sliced on a sharp 45-degree diagonal

Steps:

  • Cook the noodles to packet instructions. Drain and refresh under cold water, drizzle 1 tablespoon peanut oil over, mixing well to stop the noodles from sticking, and set aside.
  • Heat a wok over high heat and add the remaining peanut oil. Add the garlic, chiles, chili flakes and onions and stir-fry for a few seconds to release their aroma. Add the chicken thighs and stir for 2 minutes. As the chicken starts to turn brown at the edges and turn opaque, add the Shaosing rice wine.
  • Add the mangetout, Romano peppers and carrots and toss together and stir well for 2 minutes. Add the noodles and toss well for 1 minute, and then season with the oyster sauce, soy sauce and fish sauce with sugar; toss well for 1 minute. Garnish with the scallions and serve immediately.

1 (4 to 6 pound) whole chicken
1 small orange
1 tablespoon olive oil, or as needed
salt and black pepper
5 potatoes, quartered
1 whole head garlic, cloves peeled but left whole
12 baby carrots
5 small white onions, peeled and quartered
1 tablespoon olive oil, or as needed
1 cube chicken bouillon
1 cup boiling water
1 (12 fluid ounce) bottle lager beer (such as Foster's ®)

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Poke holes all over the orange with a fork, and insert the orange into the cavity of the chicken. Place the chicken into a deep roasting pan or Dutch oven, and coat well with 1 tablespoon olive oil. Sprinkle the chicken with salt and pepper. Place the potatoes, garlic cloves, carrots, and onions all around the chicken, and drizzle 1 more tablespoon of oil on the vegetables. Dissolve the chicken bouillon in the water, and pour into the pan with the beer. Cover the pan.
  • Bake in the preheated oven for 1 hour; uncover the pan, and baste the chicken with the juices in the pan. Return the pan to the oven, uncovered, and cook for an additional 30 to 45 minutes, basting with juices every 15 minutes.
  • Raise the oven heat to 450 degrees F (230 degrees C), and bake the chicken until the skin is golden brown, about 30 minutes. Remove the pan from the oven, and remove the vegetables from around the chicken. Drain off the juices to make gravy, if desired, and cover the chicken with the pan lid. Allow the chicken to stand about 10 minutes before serving with the vegetables.

My Drunken Chicken image

This is the best chicken I have ever had done on the grill. It is to die for chicken. So moist and tender and the flavor...oh my... Someone on Zaar asked for my recipe a while ago. But I am just getting to input my recipes now, was way too busy. So every day I am starting to add a few. But if you want a delicious grilled drunken chicken this is the recipe to use. This chicken MUST BE marinated overnight in its spices. This makes a world of difference trust me.

2 whole chickens (3-4 lbs each)
2 (12 ounce) cans beer (your brand choice)
2 ounces Jack Daniels Whiskey
2 tablespoons dried rosemary (chopped)
2 tablespoons dried thyme (chopped)
2 tablespoons garlic (minced)
1 tablespoon paprika
1 tablespoon salt
1 tablespoon cracked black pepper
jack daniels barbecue sauce
4 aluminum foil, pie plates

Steps:

  • Wash your chickens inside and out with cold water and pat dry with paper towels.( I prefer Perdue chickens ).
  • Mix together the herbs, garlic, paprika, salt and pepper. Rub the chicken inside and out with this mixture. Cover and refridgerate overnight minimum This is a definate must --
  • GRILLING TIME:.
  • Preheat grill to medium heat.
  • Open cans of beer and take a sip or two but no more. Add one oz of Jack Daniels whiskey to each beer can ( you can take a sip of this too while your at it, but no more or chickens may not get cooked.
  • Put 2 foil pie plates together to make it a bit more sturdier. Place one beer can on the pie plate and place one chicken over the beer can so that the beer can is in the butt of the bird and the bird is standing up right. Tuck the wing tips under to keep them from burning or cover wings with aluminum foil. Repeat for the other chicken.
  • Carefully place the 2 chickens into the grill. Close the lid and grill for 60 to 70 minutes. Don't open too often you don't want to lose that nice heat. Baste with Jack Daniels BBQ Sauce 2 or 3 times during the last 20 minutes of grilling. You may have to loosely cover with aluminum foil if skin is getting too burned towards the end. I personally love the skin of this chicken when it is crispy but not burnt. Such flavor hiding in there. Chicken is cooked when it has reached an internal temp of 180°F.
  • Turn off the grill and remove the chickens. Very carefully now remove the chickens off the beer cans.Be very careful as there is probably still hot liquid inside the cans. We usually do it with 2 people, one holds down the can with mitts on of course and the other gently lifts off the chicken. Now carve and enjoy. Depends what you are serving with the chickens, serving portions can vary.

I picked up the McCormick Cookbook for 50 cents in a thrift shop, mainly because this recipe, chicken breasts in a rich rum flavored cream sauce, caught my eye. It was a good move. The chicken was absolutely delicious. I had it on noodles, and thought it was perfect that way. But it would go with many things. I did not include the marinating time in the total cooking time, which is 30 minutes.

4 boneless skinless chicken breast halves
1/4 cup light rum
1/4 teaspoon nutmeg
1 tablespoon soy sauce
1 tablespoon lime juice
1 tablespoon brown sugar, packed
3/4 teaspoon Bon Appetit seasoning mix (see note)
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon ground ginger
2 tablespoons butter
2 cups sliced mushrooms
1 cup sour cream

Steps:

  • Pound chicken breasts to 1/2" thickness and pierce several times with a fork; place in a single layer in a shallow glass dish and set aside.
  • Combine rum, nutmeg, soy sauce, lime juice, brown sugar, bon appetit seasoning, crushed red pepper and ginger and mix well; pour over chicken and marinate at room temperature for 30 minutes, turning once.
  • Melt the butter over a medium heat in a skillet with a cover.
  • Remove the chicken from the marinate (but reserve the marinade) and saute in the butter until cooked through; when done, remove the chicken from the pan and keep warm.
  • Add the mushrooms to the pan and sautee until cooked.
  • Reduce the heat to low, add the marinade, and then gradually add the sour cream, stirring well, until the mixture is well-blended.
  • Cover and simmer for about 5 minutes.
  • You might want to check and stir it once or twice during the cooking time to keep it from separating.
  • Serve the sauce over the chicken.
  • Sprinkle with additional nutmeg if desired.
  • NOTES:.
  • If you don't have bon appetit seasoning, you can substitute a mixture of celery salt and onion powder in equal amounts.
  • If you would rather use celery seed and/or dried onion flakes, try to crush them up as much as possible, and add about 1/4 teaspoons of salt.
  • Also, if you find the sauce getting too thick, you can always thin it just a bit with a little milk or cream.
