JOEY'S CHEESECAKE
This is a recipe I got from a friend with a diabetic husband. Makes an excellent tasting cheesecake that is incredibly easy to prepare. You may use sugar substitute and sugar-free yogurt if desired. The flavor of yogurt determines the flavor of the cheesecake, so feel free to experiment.

Steps:
- Preheat oven to 375 degrees F (190 degrees C.)
- In a large bowl, beat the cream cheese, sugar and vanilla until smooth. Beat in eggs, one at a time. Stir in yogurt. Pour filling into crust.
- Bake in the preheated oven for 30 to 40 minutes, or until filling is set. Refrigerate at least 4 hours before serving.

FOUR LAYER DELIGHT
This is great dessert for any time of year. You can easily change the flavor by substituting a different pudding in place of the butterscotch (we also like chocolate a lot).

Steps:
- Preheat oven to 300 degrees F (150 degrees C). Coat a 9x13 inch baking dish with cooking spray.
- In a bowl, cream together margarine with 1/4 cup confectioners' sugar. Mix in flour and 1 cup pecans. Press into prepared dish.
- Bake in preheated oven 15 minutes, until very lightly browned. Cool completely.
- In a bowl, cream together cream cheese with remaining 1 cup confectioners' sugar. Fold in half the whipped topping. Spread over cooled crust.
- Stir together pudding mix and milk and allow to set up slightly. Spread over cream cheese layer. Top with remaining whipped topping and sprinkle with remaining nuts. Keep refrigerated.

4-INGREDIENT CHOCOLATE CHEESECAKE RECIPE BY TASTY
This is a twist on the classic 3-ingredient Japanese cheesecake-we swapped out the white chocolate for milk chocolate and added a little sugar to sweeten things up. It's light, airy, and perfect when you want something decadent but only have a few ingredients on hand.

Steps:
- Preheat the oven to 325°F (170°C). Grease an 8-inch round cake pan with nonstick cooking spray and line with parchment paper. Set the pan inside a larger roasting pan.
- Add the chocolate chips to a large heatproof bowl. Microwave on 50% power for 1-2 minutes, stirring every 30 seconds, until melted.
- Whisk in the cream cheese and sugar, then let cool for 5 minutes. Add the egg yolks and whisk to incorporate.
- Add the egg whites to a separate large bowl. Whip with an electric hand mixer until stiff peaks form.
- Gently fold the whipped egg whites into the chocolate mixture, a little at a time, until just combined.
- Pour the batter into the prepared cake pan. Carefully pour the boiling water into the roasting pan until it reaches halfway up the side of the cake pan.
- Carefully transfer to the oven and bake for 35-40 minutes, or until the cheesecake is set.
- Remove from the oven, let cool completely, then transfer to the refrigerator and chill for at least 4 hours, preferably overnight, until very cold.
- Remove the cheesecake from the refrigerator and invert onto a serving plate. Peel off the parchment paper.
- Slice and garnish with maraschino cherries, if desired.
- Enjoy!

NO BAKE WHITE CHOCOLATE CHEESECAKE (AND NOT SO BAD 4 U!)
A VERY easy and yummy cheesecake, that is no bake and isn't too bad for your health (as good as cheesecake can get 4 your health)

Steps:
- Melt chocolate chips in the microwave for a minute, stir, then cook for another minute and stir (if it still needs more time then do more until the chips are melted... BUT DO NOT BURN!).
- Cube cream cheese and add to the white chocolate.
- Mix with beaters until smooth.
- Fold in whip cream until completely incorporated.
- Pour into graham cracker crust.
- Refrigerate for 4 hours or until firm.

- Spray the bottom of a 9-inch pie plate with non-stick cooking spray. Combine Oreo Cookies and melted butter together. Press down to bottom of the pie plate. Chill the crust while preparing filling.
- Pour chocolate milk into a medium-to-large mixing bowl. Add the filling mix in the package. Beat with an electric mixer on medium mixing speed for about 2-3 minutes. Add the filling chocolate, blend once again 1-2 minutes. Then, on very low mixing speed, slowly add the chocolate chips. Try to make it so they sink into the batter, but don't break.
- Add the Peanut Butter OR Marshmellow with the 4 oz. of chocolate in another mixing bowl. Blend together on medium cooking speed for about 45sec.-1 minute.
- Pour half of the cheesecake batter in the pie plate, then all of the PB/Marshmellow/Choco. mixture, then the remaining cheesecake batter. Pour remaining 8 oz. of chocolate on top of the cake for Garnish. Add other Garnish if you wish.
- Chill the Cheesecake 3-4 hours before serving. Enjoy~!
