The key to this panzanella is frying the bread cubes in loads of olive oil in a skillet, which obviously makes them crispy. But the healthful fat also soaks into the bread cubes and renders them semi-waterproof, or dressing-proof. The same goes for the dusting of Parmesan cheese applied halfway through the crisping process.

Steps:
- Pour bread into a large skillet and drizzle with 1/4 cup olive oil, working in batches if necessary. Cook and stir bread over medium heat, adding more oil as needed, until bread cubes are golden and crispy on the outside, 7 to 12 minutes.
- Sprinkle Parmigiano-Reggiano over the top of the bread cubes; cook and stir until cheese is melted onto bread, and bread is crispy on the outside but still chewy on the inside, 3 to 4 minutes more. Cool completely.
- Combine tomatoes, red wine vinegar, extra virgin olive oil, garlic, sugar, salt, and black pepper together in a bowl until well-mixed. Cover bowl with plastic wrap and let sit at room temperature until flavors combine, about 20 minutes.
- Toss basil into tomato mixture; add bread cubes and stir. Let salad sit at room temperature 3 to 4 minutes; if the liquid is completely absorbed, add more vinegar and extra virgin olive oil to taste. Season with salt and black pepper.

Season with hot sauce.
JOHN'S CUCUMBER SWEET ONION SALAD WITH LIME PEPPER DRESSING

Steps:
- Run a fork down the cucumbers, all over, making slight indentations.
- Cut the cucumber in half, lengthwise.
- Scoop out all the seeds.
- Cut the cucumber halves into 1/8" strips.
- Peel the onion and cut lengthwise into quarters.
- Slice the quarters crosswise into thin strips.
- In a large bowl, combine cucumber and onions with lime juice, salt and sugar.
- Toss well.
- Add hot pepper flakes, olive oil, vinegar and water, toss well.
- Cover and refrigerate for 24 hours.

JOHN'S BANANA BREAD
My brother makes a killer banana bread, where the batter is basically a way to cement together all kinds of nutty, fruity goodness. There is no oil at all in this recipe. The result is almost fruitcakeish, except that it's actually edible! :-) Like fruitcake, the loaves are pretty stable and improve with age. You can add pretty much any kind/combination of dried fruit and nuts - as long as it adds up to the same total weight of the ingredients listed below.

- Grease and line three 9"X5" loaf tins.
- Pre mix the flour, salt, and baking soda.
- Mash the bananas in the mixer.
- Mix in the eggs, sugar.
- Add the dried ingredients.
- Add the dried fruit nuts etc. - this is where all that extra horsepower from a good mixer comes in handy!
- Spoon out the mix into the three loaf pans - a scale is a handy way to get them approximately equal.
- Bake about 1 hour at 350°F When done, a test stick will come out clean.

CHEF JOHN'S ZUCCHINI BREAD
We're making cake out of zucchini and calling it bread. This is an extremely beautiful and delicious loaf; not to mention super fast and easy to make. In fact, in the business, this is what is referred to as a quick bread.

- Preheat the oven to 350 degrees F (175 degrees C). Generously butter two loaf pans.
- Mix kosher salt into zucchini and let sit for 10 minutes. Transfer to a strainer and rinse very thoroughly under cold water to remove salt. Let drain for 15 to 20 minutes before using.
- Whisk flour, baking powder, baking soda, cinnamon, ginger, cayenne, and nutmeg together in a mixing bowl. Reserve until needed.
- Combine eggs, sugar, and vanilla in another large mixing bowl, and whisk until mixture is smooth and turns a pale yellow, about 1 minute. Grab a handful of the drained zucchini with both hands and squeeze out any excess water before transferring into the egg-sugar mixture. Repeat until all the zucchini has been transferred in.
- Pour in melted butter and stir until combined. Stir walnuts into the batter, followed by the flour mixture. Use a spatula to mix until the flour disappears.
- Transfer into the prepared loaf pans. Tap pans on the countertop to settle the batter.
- Bake in the center of the preheated oven until golden brown on top and a skewer poked in the center comes out clean, about 50 minutes. Let cool for 10 minutes in the pan, and then turn out on to a cooling rack. Let cool completely before serving.

JOHN'S BREAD SALAD
This is a little different than other Bread Salads you may have tried, but it is a hit at our house. Use any dressing you like, add sauteed chicken or even tuna...make it your own! We do a lot of Asian dressings, Italian works well too.

- -Sautee the onion in oil- enough to coat the bottom of a frying pan. We use Olive oil and a little bit of Sesmae oil usually.
- -When the onions are done to your liking, add the cubed bread, continue to saute. The bread will soak up the oil and turn golden.
- -Dump this into a large bowl, add salad dressing to soak into the bread, about 1/2 cup, more if you like. Let sit a few minutes.
- -Toss with any salad blend, lettuce will warm and wilt a bit. Add more dressing if desired. Often we make this a meal and add sauteed chicken at the end.
