1 whole pork trotters/feet (long form with hock, about 2 lbs)7 large-sized jalapeno peppers, diced (about 2 cups)1 medium-sized yellow onion, diced (about 1 cup)3 cloves garlic, finely chopped (about 1 Tbsp)1 Tbsp fresh ginger root, finely chopped3 Tbsp soy sauce1 tsp fish sauce1 tsp ground black pepper2 Tbsp red chili pepper powder (gochugaru)½ tsp salt2 Tbsp olive oil1 tsp sesame oil1 tsp sesame seeds (optional)

Steps:

  • Remove any hair on the pig trotter(s) if necessary by carefully scraping the sharp edge of your kitchen knife along the skin of the pork trotter(s) or by using a razor. Rinse pork trotters off really well with cool water and drain.u00A0
  • Separate the skin/meat from the bone as much as possible. Chop the skin/meat into about 1-inch pieces.
  • Put a medium-sized pan with a tablespoon of oil on low heat. Put the trotter bone in the pan. Cover the pan and allow to cook covered for about 20 minutes.u00A0
  • Uncover the pan after 20 minutes, and turn the stove up to medium-high heat. Add another tablespoon of oil to the same pan with the pork trotter bone(s). Add the chopped skin/meat to the pan and stir fry for about 3-4 minutes. Then cover the pan, and allow to continue cooking for another 4-5 minutes.u00A0
  • Next, remove the cover/lid again. Add in the jalapeno peppers, onions, ginger and garlic, and stir fry for another 4 minutes.u00A0
  • Now, turn the heat down to low, add the remaining ingredients (soy sauce, fish sauce, ground black pepper, red chili pepper powder, salt) to the pan and continue stir-frying for another 2-3 minutes. Turn off the stove and remove the pan from heat. Drizzle sesame oil over the top and mix well. Sprinkle sesame seeds on top.
  • Enjoy!

  • Bring 10 cups of water to boil (doesn’t need to be exact, just enough to cover the pig’s trotter). Add instant coffee and carefully drop the pig’s trotter.
  • Bring it back to boil and let it keep boil for 10 minutes. Rinse under cold water and discard the water. It’s full of blood and scums, you don’t want to eat that.
  • Into the clean pot (either wash the previous pot or a new pot), place all ingredients for the broth. Place all dried spices into a tea/stock bag and tie them tightly. Add into the pot. Give it a good mix to all the sugar and rice syrup to dissolve into liquid.
