JOSEPHINE'S APPLE AND CHEESE BARS



Josephine's Apple and Cheese Bars image

I run a cooking and recipes meetup group and we recently had an Iron Chef Competition. This recipe won 1st Place, so I wanted to share it with all of you, because they are REALLY YUMMY! Thanks Josephine!

Number Of Ingredients 11

4 apples, peeled, cored, and cut into 1/2-inch slices
1/3 cup sugar
3 tablespoons lemon juice
1/2 teaspoon ground cinnamon
1 1/2 cups rolled oats, large flake
1 cup flour
2/3 cup brown sugar, packed
1/4 teaspoon salt
1/2 cup butter, melted
2 tablespoons vegetable oil
1 cup cheddar cheese, shredded

Steps:

  • Preheat oven to 350.
  • Line a 9" square metal cake pan with aluminum foil, leaving 1" overhang for handles. Set aside.
  • In a bowl whisk together oats, flour, brown sugar, and salt.
  • Stir in melted butter and oil, until mixture clumps and is crumbly.
  • Add another tablespoon of oil or water, if necessary, to ensure no dry spots.
  • Add cheese, tossing to mix.
  • Save 1 1/2 cups of mixture for later, and press the rest evenly into prepared pan.
  • Bake in the center of a 350 oven, until edges are golden, about 15 minutes. Let cool.
  • Peel, core, and slice apples 1/2" thick.
  • In a saucepan, bring apples, sugar, lemon juice, and cinnamon to boil, adding up to 1/4 cup water, if apples stick to pan.
  • If apples becomes too runny, sprinkle 1 teaspoon cornstarch over apples, then mix in, and let thicken.
  • Reduce heat and simmer, stirring occasionally, until tender-crisp, about 5 minutes.
  • Spread apple mixture over base.
  • Sprinkle with remaining oat mixture.
  • Bake until golden, about 30 minutes.
  • Let cool in pan on rack.
  • Cut into 3" squares.

2 cups all-purpose flour
1 cup butter, softened
1/2 cup sugar
2 egg yolks
1 teaspoon baking powder
4 medium apples, peeled and shredded (Golden Delicious, Rome, Granny Smith, Jonathan or Newtown Pippin)
1 cup cheddar cheese, shredded (4 ounces)
3/4 cup sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
2 egg whites
1 1/2 cups powdered sugar, sifted
1/4 cup cream cheese, softened

Steps:

  • Preheat oven to 350 degrees.
  • For the crust, in a medium bowl, combine 2 cups flour, butter, 1/2 cup sugar, egg yolks and baking powder.
  • Beat with an electric mixer on low to medium speed until combined (mixture will be crumbly).
  • Press half of the crumb mixture into the bottom of an ungreased 13x9x2-inch baking pan.
  • Bake 10-12 minutes or until crust is lightly browned.
  • For filling, in a large bowl combine shredded apples, cheddar cheese, 3/4 cup granulated sugar, 1/4 cup flour and the cinnamon.
  • Spread the filling evenly over the crust.
  • Sprinkle with remaining crumb mixture and set aside.
  • In a medium bowl beat the egg whites on medium speed until soft peaks form.
  • Gradually beat in powdered sugar and softened cream cheese.
  • Spoon the cream cheese mixture over the top layer of crumb mixture.
  • Bake 30-35 minutes more or until golden brown.
  • Cool in pan, cut into bars and serve.

1 teaspoon butter, or as needed
1 ½ cups graham cracker crumbs, or more as needed
⅓ cup butter, melted
2 (8 ounce) packages cream cheese, at room temperature
½ cup white sugar
2 large eggs
1 teaspoon vanilla extract
3 Granny Smith apples - peeled, cored, and diced
2 tablespoons white sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
½ cup brown sugar
½ cup all-purpose flour
1 tablespoon finely chopped walnuts, or to taste
¼ teaspoon ground cinnamon
¼ cup butter, cut into small pieces

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly butter a 9x13-inch baking pan.
  • Mix graham cracker crumbs and melted butter together in a bowl until crumbly, adding more crumbs if mixture is too wet. Press crust into the prepared baking pan.
  • Bake in the preheated oven until golden and set, 7 to 8 minutes. Remove from the oven and set aside.
  • Beat cream cheese and 1/2 cup sugar using an electric mixer in a large bowl until smooth. Add eggs, one at a time, beating after each addition. Beat in vanilla extract on low speed until mixture is blended. Pour filling over warm crust.
  • Stir apples, 2 tablespoons sugar, cinnamon, nutmeg, and allspice together in a separate bowl; spoon evenly over filling.
  • Mix brown sugar, flour, walnuts, and cinnamon for streusel together in a bowl. Mix or cut butter into walnut mixture using your fingers or a knife until crumbly. Sprinkle over apple layer.

3/4 cup all-purpose flour
3/4 cup packed brown sugar
1/2 cup quick-cooking oats
1/3 cup cold butter, cubed
1/3 cup hot caramel ice cream topping

Steps:

  • Preheat oven to 350°. In a small bowl, combine flour and brown sugar; cut in butter until crumbly. Press into a well-greased 13x9-in. baking pan. Bake 15-18 minutes or until lightly browned., Meanwhile, in a large bowl, beat cream cheese, 1/2 cup sugar and vanilla until smooth. Add eggs; beat on low speed just until combined. Spread over crust., In a small bowl, toss apples with cinnamon, nutmeg and remaining sugar; spoon over cream cheese layer. 1 cup peanut butter
1 teaspoon vanilla extract

Steps:

  • Lightly grease an 8-inch glass baking dish.
  • Bring brown sugar and honey to a boil in a saucepan, stirring constantly. Remove from heat and stir peanut butter and vanilla into the sugar mixture.

1 pouch (1 lb 1.5 oz) Betty Crocker™ oatmeal cookie mix
1/2 cup firm butter or margarine
2 packages (8 oz each) cream cheese, softened
1/2 cup sugar
2 tablespoons Gold Medal™ all-purpose flour
1 teaspoon vanilla
1 egg
1 can (21 oz) apple pie filling
1/2 teaspoon ground cinnamon
1/4 cup chopped walnuts

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
  • Place cookie mix in large bowl. With pastry blender or fork, cut in butter until mixture is crumbly and coarse. Reserve 1 1/2 cups crumb mixture; press remaining crumbs in bottom of pan. Bake 10 minutes.
  • Meanwhile, in large bowl, beat cream cheese, sugar, flour, vanilla and egg with electric mixer on medium speed until smooth.
  • Spread cream cheese mixture evenly over partially baked crust. In medium bowl, mix pie filling and cinnamon. Spoon evenly over cream cheese mixture. Sprinkle reserved crumbs over top. Sprinkle with walnuts.
  • Bake 35 to 40 minutes longer or until light golden brown. Cool about 30 minutes. Refrigerate to chill, about 2 hours. For bars, cut into 6 rows by 4 rows. Store covered in refrigerator.
