TACO SLOPPY JOES
These Taco Sloppy Joes are the perfect mix of two dinnertime favorites! They are quick, easy to make, and a total crowd pleaser. Load them up with your favorite toppings and serve for an awesome dinner or for parties and tailgates!

Steps:
- Brown ground, chopped onion, and garlic in a large skillet over medium high heat. Drain grease and add the taco seasoning and salsa.
- Reduce heat to medium low and cook for about 5 more minutes until mixture has thickened and is heated through. Add up to 1/2 cup of water to achieve desired consistency. Serve over hamburgers buns and add desired toppings such as shredded cheese, shredded lettuce, diced tomato, avocado, guacamole, or sour cream. Enjoy!

- Heat a large pan over medium heat and add the oil. When hot, add the meat, cayenne, cumin and some salt and pepper. Cook, without stirring, until the meat is browned on the bottom, about 5 minutes. Break it up with a wooden spoon, then add the onions and garlic and cook for 2 more minutes.
- Add the tomato, liquid, mustard and sugar, if using, to the pan and bring to a simmer; simmer for 5 minutes.
- Toast the tortillas or buns. Serve the sloppy joe mixture on the tortillas or buns and top with your favorite toppers.
SLOPPY JOE'S TACOS

- Cook beef in large skillet over medium-high heat 7 minutes or until crumbled and no longer pink, stirring occasionally; drain. Stir in Sloppy Joe sauce and cumin; simmer 5 minutes.
- Divide lettuce evenly between taco shells. Place about 1/4 cup meat mixture in each shell over lettuce. Top meat evenly with cheese and tomatoes.

SLOPPY JOSE WITH CHORIZO, CHARRED POBLANOS AND AVOCADO CREMA

- For the avocado crema: Place the cilantro, sour cream, avocado, lime zest and juice in a food processor and run until smooth. Season with salt and pepper and reserve, covered with plastic wrap pressed directly on top to keep from browning.
- For the filling: Preheat a heavy-bottomed 12-inch skillet over high heat, and then add in the oil. Add the poblano peppers, season with cumin, salt and pepper and toss to coat. Saute until the peppers are slightly soft and blistered, 5 to 7 minutes. Remove from the heat and set aside.
- In the same skillet, add the chorizo and cook over medium heat, breaking up with a wooden spoon as it cooks. Cook the chorizo until well browned and cooked through, 10 to 15 minutes. If your chorizo has extra fat you can drain it on a paper-towel-lined plate to remove excess fat and then add the chorizo back to the pan along with the salsa. If your chorizo doesn't have that much fat, just add in your salsa and keep the party going. Simmer until heated through, about 5 minutes.
- For the sandwich build: Slice, butter and toast each of the rolls until golden brown and crusty.
- Sprinkle some cheese on the bottom bun, and then a hefty spoonful of the hot chorizo. On top of the chorizo place some poblanos. Smear the top bun with lots of avocado crema and serve 'em up.

- Cook jalapenos and onion in a large skillet over medium high heat in oil until softened, about 3 minutes, stirring constantly. Add in ground beef and cook until browned, breaking into small bits.
- Add remaining ingredients and reduce to a simmer. Cook until most of liquid has evaporated.
- Serve on corn tortillas and top with garnishes as desired. I used cilantro, diced radishes and queso fresco.

- For lime sour cream:
- Mix sour cream, lime zest, lime juice, cilantro, and vinegar in a medium bowl; season with salt. Cover and chill at least 1 hour or up to 1 day.
- For filling and assembly:
- Heat 1 tablespoon oil in a large skillet over medium-high heat. Cook beef, breaking up with a spoon, until cooked through, about 5 minutes. Transfer to a large bowl. Reduce heat to medium.
