My favorite commercially available curry powder is from Penzey's, called the Maharajah Style Curry Powder. But when I've been out of it (horrors!) I've made my own curry powder - based on the Penzey's Maharajah ingredients - from ground spices, and this mix is also wonderfully flavorful and tasty. It is sweet and not hot, although you could add some hot ground chile to it, to taste, if you like.

1 tablespoon spanish paprika
1 tablespoon ground cumin
2 teaspoons ground fennel
1 tablespoon ground mustard
2 teaspoons ground dried ancho chile powder
1 tablespoon ground coriander
1 tablespoon ground turmeric
1 teaspoon ground cardamom
1 teaspoon vietnamese ground cinnamon or 1 teaspoon regular cinnamon (cassia)
1/2 teaspoon ground cloves
1/8 teaspoon white pepper
1/4 teaspoon ground fenugreek
1/4 teaspoon ground ginger
1/4 teaspoon snipped saffron thread

Steps:

Mix them all together very well (running them through a coffee grinder together is a good idea).
Store in an airtight container in a cool, dry place.
Makes 1/2 cup curry powder.
When I use this mix, I usually lightly toast the powder (to perk up the flavor) in a hot skillet, stirring occasionally, for 1-2 minutes before adding into my recipes.

1 teaspoon curry powder
2 teaspoons Worcestershire sauce
1 teaspoon garlic salt
¼ teaspoon ground cayenne pepper
3 tablespoons maple syrup
.66 cup golden currants
2 cups corn chips
2 cups crispy corn cereal squares
2 cups mini pretzels
1 cup popped popcorn

Steps:

Preheat oven to 275 degrees F (135 degrees C).
In a medium saucepan over medium high heat, mix together curry powder, Worcestershire sauce, garlic salt, cayenne pepper, maple syrup and golden currants. Bring to a boil and remove from heat.
In a large bowl, toss together corn chips, crispy corn cereal squares, mini pretzels and popped popcorn. Pour in curry powder mixture and toss gently to attain an even coating.
Bake in the preheated oven 30 minutes, or until crisp and lightly browned.

A delicious blend which truly captures the flavors of the islands. It is great on fish, chicken and also on fruit. Mix in oil for a curry paste or use as a dry rub. If you want it hotter, use more cayenne. We like it a little heavy on the cinnamon and cloves.

2 teaspoons fenugreek seeds
2 teaspoons turmeric
2 teaspoons cumin
2 teaspoons black pepper
1 teaspoon cinnamon
1 teaspoon bay leaf, dried
1 teaspoon fennel seed
1 teaspoon nutmeg
1/2 teaspoon clove
1/2 teaspoon ginger
1/2 teaspoon cayenne
1/2 teaspoon allspice
1/2 teaspoon cardamom

Steps:

Grind all whole spices and seeds and bay leaves to a powder.
Combine all the ingredients and store in an airtight jar.
Note: While you can use pre-ground spices, the flavor is really better if you grind whole cloves, nutmeg, etc.
