2 teaspoons juniper berries
1 teaspoon black peppercorns
1/2 teaspoon kosher salt
1/2 teaspoon crushed red pepper flakes
1 bay leaf
2 tablespoons extra-virgin olive oil
6 minced sage leaves
1 minced garlic clove

Steps:

  • Place juniper berries, peppercorns, kosher salt, crushed red pepper, and bay leaf in a coffee or spice grinder.
  • Process until finely ground.
  • Combine juniper mixture, olive oil, sage leaves, and garlic.

1/4 cup ground black pepper
1/4 cup sweet paprika
1 tablespoon brown sugar
1 tablespoon granulated sugar
2 tablespoons dried thyme
2 tablespoons garlic powder
1 tablespoon onion powder
1 tablespoon juniper berries, crushed and minced
1 tablespoon cayenne pepper

Steps:

  • Combine all the ingredients in a bowl and mix well.
  • For best results, use your fingers to fully distribute the juniper oils. This makes 1 1/4 cups, enough for 8 to 10 pounds of meat. Kept away from heat and light, it will last up to 6 months.
