JUST YOUR GOOD OL' CHILI
My family loves this chili. For some reason, people do not always like kidney beans, but love other beans. I like to use all black beans, all pinto beans, or a mixture of half and half. This freezes very well, and is great with a nice corn bread and salad.

Steps:
- Brown the ground beef in a very large heavy soup pot, drain off fat and return beef to pot.
- Add all the remaining ingredients and bring to a simmer over medium-low heat, stirring occasionally so beans do not scorch.
- Cook, stirring every 15 minutes, for 2 hours.
- Add cilantro leaves and serve, or portion out and freeze.

NOT THICK, BUT NOT TOO THIN, GOOD OLD ORIGINAL CHILI
I've been cooking this chili recipe for about a year, and every time, it came out great. I work in a restaurant and I tried the chili one day. So I asked my boss if I could have the recipe, and this came out just as good (or even better) than any restaurant's. It makes quite a lot (12 quarts) but can easily be reduced by the ingredients to your liking (2, 4, 6, 8, 10 quarts)

Steps:
- Chop all of the onions, peppers, and celery and defrost the beef.
- In a deep bowl, squash the whole tomatoes until they are coarse, but still retain their chunkiness and set them aside for use later.
- In a separate pan, place the beef.
- Cook the beef until it is at a medium--medium-well.
- Drain all of the fat out of the meat pan.
- In the desired soup pot, cook the chopped peppers, onions, and celery.
- Add the meat to the vegetables.
- Add the chili powder and cumin to the meat and vegetables.
- Cook until all of the ingredients have been covered with the chili powder and cumin, or until they take on a red color.
- Add the previously squashed tomatoes to the soup pot.
- Mix well, then add the beans and all of their juice.
- Finally, add the tomato juice.
- Bring to a boil, and then simmer for about 2 hours (this could be less time, if desired, but keep in mind the longer the simmer, the better the taste).
- Serve, but be careful because it's extremely hot!

JUST PLAIN OL' CHILI
This recipe omits the beans for a paleo style chili! You can follow directions on stove top or grill top. Feel free to substitute whatever type of meat you'd like to use!

Steps:
- Heat a large skillet over medium heat and add ground beef; cook and stir until meat is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease.
- Heat olive oil in a soup pot over medium-high heat. Cook and stir green pepper in the hot oil until it starts to soften, 5 to 7 minutes. Reduce heat to low, stir in garlic, cumin, and chili powder, and season with salt and black pepper to taste.
- Mix cooked ground beef and tomatoes into green bell pepper mixture, breaking up tomatoes with a spatula. Add 4 cups of water or enough to cover the ingredients, reduce heat to low, and simmer at least 2 hours to blend flavors.

JUST GOOD CHILI
What can I say? Good chili on a cold night is the best. I have had a lot of good chili recipes but this one took the top. You can use any flaovr tomatoes you like and use more or less seasonings as your taste requires.

- Drain meat and put into crock pot.
- Add rest of ingredients to crock pot and mix well.
- Cover and cook on LOW setting for 8 to 10 hours.

- Brown ground beef in a dutch oven in 1 tablespoon olive oil until most of the pink is gone; remove to plate and set aside.
